00:43 my name is Evita Tezeno.
00:45 I am going to do this amazing deep dish apple pie
00:52 that will grace your table this holiday season
00:55 and it's all raw.
00:57 So let's get right to the recipe.
01:01 For the crust you need:
01:12 For the sauce you need:
01:27 For the filling you need:
01:48 So we're going to start off with a crust and, you know,
01:51 you've seen me make pies before,
01:54 so I always use either almonds or pecans as the crust.
01:58 So we're going to ground our almonds first.
02:16 And then we're going to put our dates in.
02:20 And to me dates are God's candy because they are so sweet
02:25 and they're not refined.
02:27 They are delicious.
02:31 Oh, I forgot the sea salt.
02:48 And I'm just going to add a little bit of water
02:51 to make it a little moist.
02:54 Just a little bit.
02:55 I would say maybe a couple of tablespoons.
03:04 That's the consistency you need.
03:06 You want it soft and a little pliable.
03:16 So you wanna put this in your pie pan.
03:21 And you wanna spread this out.
03:32 And I love working with my hands,
03:35 so make sure that your hands are clean.
03:39 And if it doesn't go all the way up to the sides,
03:43 it's okay.
03:47 But you want to continue to just work it in.
03:52 And if you want to make a double crust,
03:54 it's quite all right.
03:56 If you wanted to go all the way up to the sides,
03:59 you can.
04:04 And then we're going to do our filling.
04:07 So we need our blender.
04:19 So we have our water.
04:22 We're going to start off with a cup of water
04:24 and our juice from our oranges.
04:31 And we have our salt.
04:41 We're gonna start off with one, the one cup of dates first.
04:48 Make sure that that's blended in.
05:15 That is awesome.
05:17 So we are going to put our other dates.
05:26 Put a little more water in.
05:32 So it's about maybe two cups of water.
05:58 Okay, it's time for our filling now.
06:10 So we wanna take our lemon juice
06:11 and pour it over our filling,
06:14 our yeast flakes,
06:18 mix that in.
06:21 And I don't know if you know
06:24 but a lot of deep dish apple pie,
06:26 sometimes they put cheese in it,
06:29 so this adds the cheesy flavor in it.
06:33 I think it's a Northern thing.
06:36 So we put a little yeast flakes to make it
06:40 have that cheesy taste.
06:42 And then our coriander and then our cardamom.
06:49 And we're not using cinnamon.
06:51 If you want to use cinnamon, you can
06:52 but cinnamon is a little irritating to the stomach,
06:55 and we want to keep our stomachs
06:57 healthy this season.
06:59 So we don't want to put things in our stomach
07:02 that make our stomachs feel irritated.
07:06 So I'm using some calm spices.
07:10 And the sea salt.
07:14 And you want to lightly fold it in,
07:19 then we take our filling,
07:24 our sauce.
07:26 This is our filling, this is our sauce,
07:32 and we pour it in.
07:36 And you might have a little extra.
07:39 So just pour a little bit in at a time
07:41 and stir in, mix it in.
07:50 And it's all right if they break up a little bit,
07:52 it will be all right.
07:58 I think I need a little bit more.
08:03 Oh, it smells amazing,
08:08 I can't wait to eat it.
08:13 So let me quickly get it together.
08:15 Okay, so we have our crust and we have our filling.
08:20 Oh, and it's heavy.
08:23 So I am gonna use a spoon for this.
08:28 So there you go.
08:36 Yummy, yummy, yummy, yummy.
08:55 I think you'll be the envy
08:59 of everyone this season,
09:04 if you bring this to a holiday dinner.
09:19 There you have it.
09:22 This is a wonderful deep dish apple pie.
09:28 And remember to live life fresh.
09:39 When you think of holidays, what do you think of?
09:41 You think of family, and friends, and food,
09:44 and just pass hanging out, pass times,
09:46 and all of that good stuff.
09:48 And when you think of the food,
09:49 you think of the great delicious entrees
09:52 and even sometimes those desserts.
09:54 Yeah, those desserts, the pumpkin pies,
09:56 the sweet potato pie, and also the apple pie.
09:59 And you know what?
10:00 I was thinking the other day, apples is almost in,
10:03 not everything, but it's in a lot of things.
10:05 And so today, we want to do some of the special,
10:07 we call it the Wonders of Apples,
10:11 WOA, Wonders of Apple.
10:13 There's so many different types of apple.
10:15 Apples, they get credit for a lot of things
10:17 but then they also get the blame.
10:19 You remember what happened in the Garden of Eden,
10:20 some say it was the apple, I think was a mango, you know,
10:22 that thing is unresistible.
10:24 But there's so many different types,
10:25 you have the Granny Smith, you have the Galas,
10:27 my favorite was the Red Delicious,
10:29 even though they didn't have that at the local supermarket.
10:31 So many different kinds,
10:33 they make so many things out of it,
10:35 they do applesauce, we all know the apple pie and stuff.
10:38 But today, we're going to do that one thing,
10:40 and we're going to make some delicious applesauce
10:42 and, you know, I could do a little cooking,
10:45 but I had to invite my expert, my home economic expert
10:49 to make this delicious applesauce.
10:52 Welcome back. Donna, how are you today?
10:54 I'm doing good, Nyse, I'm doing good.
10:56 Donna wears many hats, she's a nurse, what else?
10:59 A social worker, and most importantly,
11:01 she's a wife and a mother.
11:02 Yes.
11:04 And so you've come across quite a bit of apples
11:05 over the years, no?
11:07 Yes.
11:08 And anything in particular you like about apples
11:10 or you use them for?
11:12 My kids don't tend to like the applesauce at the store.
11:15 Mm-hmm.
11:17 They like homemade applesauce.
11:18 They like homemade applesauce.
11:19 Who knew you could make the applesauce
11:21 yourself at home?
11:22 And that's what we're going to do today
11:24 is make the applesauce.
11:25 But before we get there, what are some other things
11:26 that you use apples for, you find them in?
11:28 We love apple pies, we do a lot of apple pies,
11:32 apple pastries, just all kinds of stuff.
11:36 Just a lot of things, but a lot of people forget
11:38 one of the key items is apple juice.
11:41 A lot of people love apple juice,
11:43 and apples are so magnificent, why?
11:46 Because they have such a thin skin.
11:48 Yes.
11:50 But it protects its goodies inside, I mean...
11:51 That's right.
11:53 You know what they used to say, apple a day keeps a...
11:54 Doctor away. But don't keep the doctor away.
11:56 There's nothing wrong with the doctor,
11:58 the problem is the disease, so the apple a day
12:00 will probably keep some disease away
12:01 because we want to go see the doctor, no?
12:03 Right.
12:04 We wanna see our nurses and make sure
12:05 we're decency and in order.
12:07 But watch this, that skin is so good and that's why
12:10 I wash it properly and I eat the skin,
12:11 that once you burst that or you take a bite into it,
12:14 you ever notice when...
12:16 If you wait a couple of seconds,
12:17 the apple begins to turn brown.
12:18 It begins to turn brown.
12:20 Because it's oxidizing a little bit there
12:21 so that apple skin contains.
12:23 And I've noticed a lot of people peeling off the apples
12:26 and I guess within reason sometimes
12:27 because they sometimes wax them.
12:29 Yes. A lot of pesticides and stuff.
12:31 The more shiny the apple,
12:32 the more it's got something on it to make it pretty.
12:34 Have mercy, man, sin, Donna, messed up this thing
12:38 but enjoy the apples many different types as well.
12:42 Apples is good for a couple of things.
12:44 One person says good for constipation
12:46 but if you have diarrhea, it's good for that too.
12:49 It keeps the teeth, you know, sometimes I'm on a road,
12:52 my toothbrush was locked in a bag and I can't get to it,
12:55 you know, sometimes, now you don't do it all the time.
12:57 I finish off my meal with the apple and it gives
12:59 such a refreshing taste to the mouth.
13:03 And so, man, I literally travel with these.
13:05 And when I see them sometimes, you know, in the airports
13:08 and, you know, have the apples there,
13:09 I'll grab three or four, keep it in my bag
13:11 because I know the time will come well,
13:12 I'll need that apple again.
13:14 And so good for your teeth, good for a lot of things.
13:17 Good for a lot of things. A lot of things.
13:18 However, I was at the store and I picked up
13:21 some apple crisp or dried apples.
13:25 You can even have apples as chips,
13:26 you know what I mean, that's one way.
13:29 Also applesauce, everybody knows the applesauce.
13:32 But now you don't have to buy it anymore,
13:34 you can make it yourself.
13:36 Please have the kids make it with you.
13:39 Kids are thinking...
13:40 I always ask kids, "Where's the applesauce come from?"
13:42 "The store in a package."
13:45 I'm like, "No, you can make this yourself."
13:47 And so today, we're going to learn how to make some what?
13:50 Some WOA Applesauce.
13:52 WOA Applesauce, here's a simple recipe,
13:55 I mean, it's so simple, you won't even believe it.
13:57 For the WOA, World of Apple Applesauce,
14:00 here it is.
14:01 All you need is, that's it:
14:11 I mean, people, do any kind of apple you like,
14:14 you can use it.
14:16 You don't even need that many different types of apples.
14:17 If you just like the Red Delicious, hello,
14:20 then that is all you need to use for this,
14:22 but we're going to try...
14:24 Why are we mixing up different apples here?
14:25 So this recipe, the apples that I would normally get
14:28 in Northern Indiana, Michigan they're not ready yet.
14:31 They're not ready.
14:32 So for you all, here in Thompsonville,
14:34 this is a recipe from the lady I met this morning
14:36 in the supermarket.
14:38 So we're using her recipe, and you can use and mix
14:40 and match any kind of apples you want.
14:42 The reason why I'm mixing and matching, one,
14:44 because I don't have to add any sugar.
14:47 Because the different apples will give me a sugar,
14:49 they'll give me tartness, they'll give me sweetness
14:50 and all of that.
14:52 And then also I like pink applesauce,
14:54 so my applesauce when it comes out,
14:56 it's going to be this color pink.
14:57 It's gonna be pink. So what do we do?
14:59 We take these apples, we put them in a pot?
15:00 Yeah, we take all these apples and we're gonna put them
15:02 in a pot of water and we're gonna boil them.
15:04 You don't want them mushy
15:06 but you want them like soft, this consistency.
15:10 Now let me show you why I like...
15:13 So we have Golden Delicious, we have Paula Reds.
15:17 The apple that I love is the Idared.
15:19 Okay.
15:21 Ida, Paula, soon there's gonna be
15:22 a Jenny apple, I mean, like...
15:24 Well, the reason why is,
15:26 let me cut one of these apples open for you
15:27 and look at the skins, look at the skins,
15:30 look at that pinkness,
15:31 and that's what I want my applesauce to look like.
15:34 Wow.
15:35 So you guys just check that out...
15:36 So I want my skin to soak in and I want that pinkness
15:38 into my applesauce.
15:40 We still got the stem and everything.
15:41 That's okay. That's okay.
15:42 You know what, when I eat apples,
15:44 y'all remember this a long time ago,
15:45 I thought if I ate the whole thing, you know,
15:47 I would just continue to grow the apple tree in my stomach.
15:49 You don't remember that.
15:51 No, no, we're not eating the whole thing.
15:52 That doesn't happen, but you know what?
15:53 Even till today, sometimes I'm traveling on a plane,
15:55 I literally just eat the whole apple
15:57 and a flight attendant comes by and is like, "Okay,
15:59 you want me to take that?"
16:00 I'm like, "What?"
16:02 Now she says, "You ate the whole apple?"
16:03 I'm like, "I ate it all." And the seeds as well.
16:05 And with the seeds I ate everything.
16:07 I don't think we're supposed to eat the seeds though.
16:08 Yes, somebody said, you're not supposed to eat the seeds
16:10 but I eat them.
16:11 You know, they say they have a little arsenic in it.
16:12 Well, I used to be a little medicine
16:14 back in the days so here, no let me stop.
16:15 But don't eat the seeds or whatever like that.
16:16 Everybody do their own little weird thing.
16:18 So we take these,
16:19 these are really soft, we cut them.
16:21 Yes, we cut them up and so if you have one of these,
16:25 you can use the same thing.
16:26 Put your soft apples in here and you can turn it,
16:30 and basically your applesauce to come out the bottom.
16:32 What is that called?
16:33 This is like a strainer.
16:36 A strainer?
16:38 And this is like 25 bucks.
16:39 Twenty five bucks, but it will be worth it.
16:41 It's worth it but because I tend to do things
16:44 on a little bit larger scale,
16:46 we have an applesauce maker here.
16:48 A applesauce maker.
16:49 So let's take a look at this applesauce maker
16:51 you're talking about.
16:52 So basically, my apples will go in here
16:54 and as I'm mushing, I'm using, turning this crank
16:57 and my apples will come out of here
16:59 and all the peeling and the core,
17:03 the seeds will go out one way
17:05 and the applesauce will come another way.
17:06 Okay, so this is what I'll do. So, just throw them all in.
17:08 Now, you know, I mixed all these apples
17:10 so we want to get some different flavors and taste.
17:12 Okay. So I'm just gonna mush.
17:15 Now that looks like some ground beef grinders
17:18 and stuff that we used back in the days.
17:21 When I get the kids, my kids help me do this.
17:23 They like turning the crank.
17:25 Ah, you have to have the kids involved.
17:26 Yeah, and so come on.
17:29 I got to load it up? You got to load it up, my dear.
17:31 So just put in all the apples as you go.
17:34 And you'll see the different colors
17:35 that I'm getting.
17:37 Wow.
17:38 Now you can add vitamin C
17:40 or a fruit fresh to keep your color.
17:45 Okay, lemon juice, no?
17:47 No, I don't want lemon juice in my applesauce.
17:48 What?
17:50 Yeah, I don't like that taste. All right.
17:52 So this is what my applesauce looks like.
17:54 So like vitamin C crystals or something like that?
17:57 You can, it actually is fresh, it's in the canning section.
18:01 Let me go ahead, and get this little knife here
18:04 and cut off the rest.
18:05 And this makes quite a bit of applesauce.
18:07 Now like I said, that looks like those beef grinders.
18:10 Yeah. Ground meat grinders.
18:12 We got to put a little oomph in there.
18:14 Well, look at that, that thing is just pouring out.
18:17 So it's just pouring out, and if you have a spatula
18:21 and I'll show you guys, this is so good.
18:24 You don't need to add any sugar to this.
18:27 You need me to crank it up?
18:29 You're welcome, you can crank it.
18:30 All right.
18:32 But let me show everybody real quick.
18:33 Let me tilt this up just a little bit,
18:34 and look at this applesauce.
18:36 So this is homemade. It's nice and pink.
18:39 So if I want to eat this three months from now
18:41 after I've canned it,
18:43 it'll still have that same pretty color to it.
18:45 Look at that. Yeah, and so that's what it is.
18:48 You wanna taste?
18:49 Wait, wait, wait, I've got all these apples in here.
18:51 Yeah, oh, let's put this back over here.
18:53 You've got to get this thing grinding.
18:56 So all you do is basically...
18:57 Now what if you don't have one of these
18:58 little neat devices?
19:00 And then well, you can mush it with like a food musher,
19:04 masher or you can use one of the strainers.
19:07 You gotta go clockwise.
19:10 There you go. This way?
19:11 Yeah, then you gotta put more apples in.
19:14 All right. So you really got to...
19:16 Man, and you know what?
19:17 This is good to do with the family
19:18 during the holidays and stuff.
19:20 Yeah.
19:21 These are the memories.
19:22 And that's it.
19:24 That's how you make applesauce.
19:25 Wait a second.
19:28 I think these apples are too big though.
19:31 No, we can cut them up, and cut some up.
19:34 My applesauce is not coming out like yours.
19:37 Let me get some oomph in here.
19:39 And then you just board on,
19:41 you said the other way to do it was to what?
19:43 You can mash it like with a potato masher,
19:46 and just remove the seeds and the skins
19:48 and then just mash it up.
19:50 Your applesauce would be a little bit more chunkier,
19:52 but it depends on how you like to with your applesauce.
19:55 How do you like it, the consistency?
19:57 Now... Whoa!
19:59 Little too much straining up in here.

20:02 And that's enough for the applesauce

20:05 Okay. So here we go.
20:06 Now if it's a little,
20:08 we got to taste this to make sure it's legit.
20:10 Yeah. It's legit.
20:12 It's legit, huh?
20:13 So here we go.
20:16 You all can see.
20:17 Here's a spoon.
20:19 Here's our applesauce.
20:20 Now there's a different things that you can do,
20:22 like a lot of kids like fruit roll ups,
20:25 you can make fruit leather out of this,
20:27 you can put it in a dehydrator, you can...
20:29 Wait, wait, wait, wait a second.
20:32 Yeah. No.
20:34 It's good.
20:35 No. It's good.
20:37 That won't make no sense.
20:38 Yeah, but it's good. It tastes...
20:41 Better than store bought.
20:43 This is like the real thing right here.
20:44 Yes.
20:46 This is serious business.
20:47 All you have to do is basically chop up the apples...
20:49 Well, boil them.
20:51 You boil them a little bit? Yeah.
20:52 How long do we boil them for them?
20:54 Until they're just a little bit soft.
20:55 You can stick a knife through them.
20:56 So 15 minutes, 12 minutes to 15 minutes.
21:00 Well, 12 to 15 minutes. Yep.
21:01 And you should have that.
21:02 Now you said add vitamin C, why we add vitamin C to that?
21:05 Just for color.
21:06 If I was going to have this out,
21:09 then I would probably add a little bit of fruit fresh
21:11 or something like that, but if I was canning right away,
21:14 I can it right away
21:15 and then I wouldn't have to add anything.
21:17 And I would still have that nice color in there.
21:19 So let's put it in there but real quick vitamin C
21:23 now that we're adding...
21:24 That it helps with the color. All right.
21:26 So the vitamin C will hold it from getting retarding.
21:28 From, yellow, exactly, from browning.
21:30 And so when we read that on the ingredients.
21:35 Well, look at this one.
21:36 This one says apples, high fructose corn syrup.
21:39 Right, there's no sugar in that.
21:41 She straight up that sugar. All right.
21:44 Water and ascorbic acid, vitamin C.
21:47 So they add the vitamin C to it,
21:49 but here's the question how.
21:51 Do we just buy the vitamin C pills,
21:52 crush it up, or it's just vitamin C crystals?
21:54 I have actually brought the pills and crush them up,
21:57 but you can just fruit fresh, it's the same thing.
21:59 It's ascorbic acid, it's vitamin C.
22:01 You can go to the health store, I mean,
22:02 if you want it in a powder or something like that.
22:03 Now you mentioned no lemon juice,
22:05 why no lemon juice for that?
22:07 I just don't...
22:08 I mean, if you want to put lemon juice,
22:09 you can put lemon juice, but I don't want it
22:11 any runnier than what it is.
22:12 I like this consistency.
22:14 And then also I don't, I mean,
22:16 some people like a tart applesauce but, no,
22:19 I like a little bit of kind of tart and sweet.
22:21 So this is tart and sweet.
22:23 So it doesn't need any measures.
22:24 Now how do we take this and make
22:26 fruit leather as you mentioned?
22:27 Okay, so if I was going to make fruit leather with this,
22:29 I would take a flat tray,
22:33 then I'm gonna stick in the oven.
22:34 And you can either spray it down
22:37 with whatever oil spray that you have.
22:41 Can you use a little olive oil?
22:43 Use a little olive oil.
22:45 I've tried it with parchment paper,
22:47 I've used it with aluminum paper, aluminum foil
22:50 and then I'm going to spread it all out
22:52 and I'll stick it in the oven for 190 degrees overnight.
22:57 And then when I wake up in the morning,
22:59 I can actually peel it, separate it,
23:01 and then I just throw it in a Ziploc bag,
23:03 and put it in the freezer,
23:05 and my kids can have fruit leather.
23:06 Just with this applesauce.
23:07 Just with this applesauce.
23:09 I haven't added anything to it.
23:10 And another weird thing that we like in our family
23:12 is applesauce sandwiches.
23:14 My husband, I know, when he married me he said,
23:17 "That's weird, never heard of that.
23:19 Who does that?"
23:20 Now he eats applesauce sandwiches.
23:22 Tell me real quick, how in the world do you do...
23:25 Now I used to do a sandwich with peanut butter.
23:27 No, it's a little different.
23:30 What would you be doing?
23:31 So just like you would make a grocery sandwich.
23:32 So you put butter on either side of your bread,
23:34 instead of putting the cheese in,
23:36 put my applesauce in there.
23:37 Put it together and fry it in a pan.
23:39 Brown it on one side, flip it and then slice it and eat it.
23:44 My family eats it.
23:45 That's a time out, we call it time out on that one.
23:48 So basically, you can make a grilled...
23:50 Applesauce sandwich.
23:52 It's so good. I can't even say it properly.
23:53 I wanted to say grilled cheese
23:54 but it's a grilled applesauce sandwich.
23:57 You basically toast both sides on that nice little skillet.
23:59 Toast both sides. Yes.
24:00 You put it in the middle.
24:02 Yes. And then you work it.
24:03 Put it in the middle and then toast either side.
24:06 Get all nice and warm with a little crunch
24:08 on the outside and it's good.
24:10 It's the best thing you've ever had.
24:11 Now real quick.
24:12 We have a pot here still full of applesauce or, no, apples.
24:15 Apples.
24:17 So if we were to make this applesauce
24:18 that's gonna be too much.
24:19 We're all gonna start slithering away
24:21 if we eat all that is apple, you know what I mean.
24:22 Yeah.
24:23 So what do we need to do to preserve it, to hold it?
24:25 You can freeze this, you can can it,
24:28 or you can stick it in a Tupperware dish and eat it.
24:30 Now there's a quick idea, now with the can,
24:32 do I just put this on and put the lid on,
24:33 what's the process?
24:35 So what I would do is, again, I will still have my warm jars
24:37 and I would fill up this jar with applesauce,
24:41 but I need to leave at least
24:42 an inch and a half room at the lip line.
24:44 You don't need to fill it to the very top.
24:46 And then I put my lids on and then this would need to be
24:49 in a hot water bath for like 20 minutes.
24:52 When you say hot water bath...
24:53 So that it would evenly seal. Let's see.
24:56 So I'll just show you here real quick.
24:58 So we'll have this pot, right? Right.
25:00 This pot will have water in it.
25:02 Yeah?
25:04 Yes.
25:05 This, how will this go?
25:07 This would go in there, actually,
25:09 you would probably need to have a canning pot,
25:11 specific canning pot.
25:14 If you don't have a specific canning pot,
25:16 you need something that's going to elevate the jar
25:18 off of the bottom of the pot.
25:22 Something metal of any kind.
25:24 You know those metal things that you put on the table.
25:26 Yep. Can I use that?
25:28 Even if it was, you know, I treat it and I've used
25:31 some of those in a big pot and you just want this.
25:32 And you hold it in.
25:34 Exactly, you don't want that
25:35 sitting on the base of your pot.
25:37 So it's going to be in a hot water bath.
25:40 The water would be probably almost up to the first rim.
25:43 That's with or without the applesauce?
25:45 That's with the applesauce in it.
25:46 So with the applesauce,
25:48 so let's just run a little mock try real quick for you.
25:50 Yeah, so we fill this up.
25:51 All right, so let's fill that up.
25:52 So you fill this up.
25:54 And, ideally, we'd have a funnel of some kind,
25:57 so we'd be a little bit more pretty.
25:58 All right.
26:00 Yeah, so we could fill this up
26:03 and we did like three bags of applesauce
26:06 and I probably could get four-five jars,
26:09 four-five quarts out of three bags.
26:11 So three bags will provide a lot like you do not need
26:15 to buy applesauce for the kids to go to school.
26:17 You can make this yourself, literally.
26:19 So there you go. So here we go.
26:21 And then, I also want, for me,
26:23 some people use like a plastic stick
26:25 or like a spatula,
26:27 end of a spatula to get all the air out
26:30 and because of the consistency I can just kind of.
26:33 Now will the air causes to firm in or what happens?
26:35 No, the air will actually just have packets
26:38 and it'll rise up, exactly.
26:40 So I want to leave some headspace
