00:27 Steve: Hello again, this is Part 3 of Body Battles. 00:30 I'm Steve Wohlberg... 00:31 I'm here with Jack McIntosh who is a health educator 00:34 and we're talking about how to strengthen... 00:36 how to strengthen you... 00:38 your body for the battles of life 00:41 so that you don't die early so you can be happier... 00:44 you can be healthier... you can live longer 00:46 and the first couple of programs we've talked about how... 00:50 it's really not that complicated in order to do this 00:54 that many of the solutions to 00:58 so many of the struggles that we have these days 01:00 are... are simple, 01:02 they're simple like eating a good diet and taking a walk... 01:04 and getting... getting a good night's sleep 01:06 and breathing fresh air 01:08 and so, we're going to continue along that theme 01:12 and we're going to focus on this Program 01:15 which is called: The Eden Diet 01:16 going back to the beginning and seeing what kind of food 01:20 is really the best for us 01:23 in order to fight the battles of life. 01:25 So, Jack, again thank you for being here. 01:27 Jack: My pleasure. 01:29 Steve: It's a blessing to have you 01:30 and I'd like to start out with just a couple of texts. 01:33 I think this is a good one to begin with... 01:35 Genesis... we go all the way back to Genesis, 01:38 we're going to call this Program The Eden Diet. 01:40 Jack: Back to the beginning. 01:42 Steve: Back to the beginning, so Genesis 1:29 God said, 01:45 "Behold, I have given you every herb bearing seed, 01:47 which is upon the face of all the earth, 01:49 and every tree, in which is the fruit of a tree yielding seed; 01:54 to you, it shall be for food. " 01:56 So, this is God talking to... to Adam 02:00 and eventually to Eve and also to all of us 02:03 about a diet that is optimal... that's good for us. 02:08 Before I turn you loose, let me read... 02:11 just read a couple more texts that I really like 02:14 in Genesis chapter 2 verse 7... I'm sorry verse 8, 02:16 it says, "The LORD God planted a garden eastward in Eden; 02:20 and there He put the man whom He had formed. " 02:22 I like this verse... God planted a garden 02:25 and He put man in the garden 02:26 and verse 15 also says that the Lord God took the man, 02:30 and put him into the garden of Eden to dress it... 02:35 or cultivate it and to keep it... " 02:37 and that just impresses me that part of God's original plan 02:41 for... for human beings... 02:43 part of, you know, the Owner's Manuel you might say 02:47 from the Creator is that we should cultivate... 02:51 grow and we should eat food from the ground. 02:55 Jack: Food from natural environment. 02:57 Steve: Yeah, in a natural environment. 02:59 So, continue on... talk about that. 03:02 Jack: Sure, well, yes, He placed them in a garden, 03:05 what was in that garden? 03:07 Trees... flowers... fruit... food in general 03:13 as He said, "Trees that yield seed and fruit... 03:18 these are all-natural things that we find out in nature 03:22 that comes right from the hand of the Creator... 03:25 unprocessed... so on... 03:28 now, when this was given, there was no sin problem, 03:31 this is the first thing to realize. 03:34 This was the perfect environment 03:37 and guess what kind of diet this was? 03:40 The perfect diet... 03:42 keeping with the sinless perfect environment. 03:45 Steve: Okay. 03:47 Jack: So, when we pay attention to this instruction 03:50 that was given to us in the beginning 03:52 about what kind of fuel we should put into the body, 03:55 we find that it protects us from disease... 03:59 all kinds of disease... heart disease... Alzheimer's... 04:03 Diabetes... Hypertension... on and on and on, 04:07 you know the lifestyle diseases that do so much 04:11 to create the mortality in this country 04:14 and create the risk factors for disease. 04:17 So, it's really important to realize that this is the perfect 04:22 diet that was given to us in the beginning 04:24 and when we pay attention to it, 04:28 we reap the benefits... the blessing that comes 04:32 from paying attention to the Creator. 04:35 For instance, let me give you one example, 04:39 in the morning, when I get up, 04:41 I have breakfast of course 04:45 and one of the things I will have is whole-grain toast 04:50 because it's whole-wheat... has everything in it... 04:54 all the vitamins, the minerals and so on 04:56 but I have a choice when I get up in the morning. 05:00 I can put margarine on that toast 05:02 or I can put Eden Butter. 05:06 You say, "Wait a minute, what's Eden Butter?" 05:09 I'm so glad you asked. 05:11 Steve: What is Eden Butter? 05:13 Jack: That's the avocado, you see, 05:16 it has fat just like the margarine 05:19 but it's not artificial fat. 05:21 It is fat that is locked in fiber and it has antioxidants. 05:27 The margarine is digested... it has... 05:31 you need to have an emulsifier because it's a naked fat... 05:35 has no fiber, right, 05:38 so, it has to be emulsified 05:41 and that takes cholesterol to do that... 05:43 bile... to emulsify it. 05:45 If I eat the avocado, 05:48 instead of releasing bile to digest it, 05:51 it's digested way down in the lower part of the intestines 05:55 and that makes a huge difference in our health. 05:58 So, Eden Butter... 06:01 Steve: Good, well, you know, 06:02 I didn't know you were going to say that... 06:04 but I'm thinking about my breakfast this morning 06:07 and I had two slices of Ezekiel 4:9 Sprouted bread 06:10 and then I put on top of that, my Eden Butter... 06:14 I used... I eat a lot of avocados 06:17 and then I put on top of that some... some... 06:19 some beans that my wife made and I cooked them... 06:22 I heated them up... I put them on top of that 06:25 with a little bit of... I don't remember exactly 06:27 what kind of a dressing I put on there... it was good 06:30 and it was... so I had my Eden Butter today 06:33 and that's good. 06:34 Jack: Let's talk about those beans... 06:37 those beans are... remember what He said, 06:39 seed-bearing plants... guess what? 06:42 Legumes are seeds 06:43 so are walnuts... so are almonds... 06:45 so is wheat... all those things are seed 06:50 so, seed-bearing plants provide the proteins... 06:54 the vitamins and very critically the minerals that we need. 06:57 We don't talk much about minerals these days, 06:59 we talk about vitamins... 07:01 but all those natural foods... high-fiber foods... 07:05 fat... locked in fiber like the... 07:07 like the walnuts and the avocados. 07:10 Those are the things that come 07:13 right from the hand of the Creator 07:15 and if you do that, 07:17 you are protecting yourself from a host of diseases... 07:22 lifestyle diseases that are out there today, 07:24 that are killing people left and right. 07:26 Steve: Yeah and we all know that we're no longer in Eden 07:29 obviously, we've come down a long way. 07:31 Jack: Yes, we have. Steve: Sin has entered the world 07:34 and we're exposed to, you know, all kinds of temptations 07:37 and... and we... we get old 07:39 and we eventually die... 07:40 we can't completely avoid that in this world 07:43 but you're saying that if we go back and fuel ourselves 07:48 with the original diet, 07:49 we're going to enhance our body's ability 07:53 to deal with these issues... 07:54 to fight the body battles and we're going to... 07:58 you know the goal again is to have less disease... 08:01 to live longer... 08:02 to be happier... to be more useful through... 08:05 through such a simple thing 08:07 as eating more simple food that comes out of the ground. 08:10 Jack: Yes, paying attention to what the Creator said 08:14 right in the beginning. 08:16 Now, I want to move to something else 08:20 that we need to understand about fuel and food in general. 08:26 This is a statement by Dr. David Perlmutter 08:30 and I'm going to read this statement 08:33 then I'm going to explain why he said what he said. 08:36 Now, listen to this... it says, 08:37 "We recognize that food is far more than protein, 08:43 carbohydrates, fat and micronutrients... " 08:46 listen to this... 08:47 "and that food really does represent information... 08:52 food really does represent information. " 08:56 Now listen, "The foods that we consume 09:00 are instructing our genes. " 09:02 I'll say that again... 09:05 the foods that we are eating... consuming... 09:08 are instructing our genes... giving instruction to our genes 09:12 and I'll... I'll unpack that in a minute. 09:15 "Therefore, that's a very empowering notion: 09:18 you can change your genetic destiny 09:21 based upon the food choices that you make. " 09:24 So, here's what's happening now, 09:29 the wisdom of the Creator. 09:30 Did he say in Genesis that you're instructing your genes? 09:34 The answer is no... He didn't. 09:36 But by doing the simple thing that He asked us to do, 09:39 we see the implications 09:42 and they go far wider than we expected. 09:45 Who knew that you were going to be instructing your genes 09:49 when you put... when you drink a sweet drink 09:53 with high fructose corn syrup 09:54 or you eat an avocado on your whole-grain toast, 09:57 who knew that you were instructing your genes? 10:00 Now, what do we mean by that? 10:01 Steve: What do we mean by that? 10:03 Jack: Well, it turns out 10:04 that we have two basic kinds of genes in the body. 10:08 We have the worker genes. 10:11 They make the proteins and they make the hormones 10:14 and, you know, the enzymes and so on. 10:17 They do the... they do the work. 10:19 Think of it... 10:21 sort of its kind of like your hard drive on your computer. 10:24 It does the... the grunt work, if you will. 10:27 Sitting on top of your hard drive 10:30 is the software... Microsoft Word or whatever it is 10:35 right, and it tells the hard drive what to do. 10:38 Those genes are referred to as: 10:42 epigenes or the epigenetic system 10:45 and it turns out that the software system... 10:49 the epigenes is far greater in number 10:53 than the worker genes 10:55 because the Creator had in mind 10:58 to be able to have a sophisticated system 11:02 that would take care of a sophisticated person. 11:06 See... and so, the epigenetic... epi means above, 11:10 it sits on top of the worker genes, if you will, 11:13 and it gives instructions. 11:16 Now, everybody knows that software is programmable. 11:21 Is that correct? 11:22 Steve: Right. Jack: Software is programmable. 11:25 In the same way, your genes can be programmed. 11:28 When you put food into your mouth, 11:30 what are you doing? 11:32 You're programming your genes. Steve: Wow! 11:34 Jack: You are turning off bad genes 11:37 and turning on good genes 11:38 if you use Eden Butter and fresh fruits and vegetables 11:45 and nuts and grains. 11:47 Turning off bad genes... turning on good genes. 11:50 That's the epigenetic system. 11:51 Steve: And then the genes tell the hardware what to do. 11:54 Jack: Exactly. Steve: Got it. 11:55 Jack: But if I go ahead now and instead of... 11:58 instead of putting the... the natural things on my food 12:03 or, you know, I'm using all the Trans Fats, you know, 12:07 the hydrogenated hard fats and eating processed foods 12:11 and I'm drinking, you know, high fructose corn syrup, 12:15 you're also programming your genes 12:17 but guess what you're doing now, 12:19 you're turning on the bad genes that your grandmother gave you 12:22 or your grandfather 12:23 and turning off the good genes. 12:25 Genetic expression is programmed by food. 12:29 Steve: Wow! 12:31 Jack: Who knew that when the Lord gave that instruction 12:34 in Genesis... He was telling us something extremely important 12:37 and that is, you need to program your genes 12:41 even though He didn't say that. 12:43 Steve: So the... so the Science of today is validating 12:47 the original Eden Diet. 12:50 Jack: Absolutely and the American Heart Association... 12:53 American Cancer Society all of them are telling us... 12:56 sending the same message. 12:57 When it comes to fueling your body, 13:00 you need to eat the natural things that come from nature 13:03 unprocessed... fresh fruits... vegetables... 13:07 nuts... grains... 13:08 and the more you go toward the animal-based diet 13:12 which came in after sin entered, of course, 13:13 the more you go toward that diet, 13:16 the more you're going to turn on the bad genes 13:18 and turn off the good genes 13:20 and create trouble for your heart and your lungs 13:23 and your body in general... your brain. 13:26 Steve: So the good diet will help with the body battles. 13:30 It provides the weapons that help tell the hardware 13:34 what to do. 13:35 It turns off the bad guys and turns on the good guys. 13:38 Jack: The weapons of our warfare as we read in Part 1 and Part 2. 13:42 Steve: So... so these instructions 13:44 are really critical for us to... to understand. 13:47 So, let's talk about some of those simple things 13:49 that are in the natural foods. 13:51 I've got a list here that you gave me... 13:52 why don't we just go through those as quickly as we can 13:55 and put some more research and... and make it simple 13:58 so people can understand. 14:00 Jack: All right, so now we're going to put some flesh on the 14:02 skeleton that we produced here. Steve: Okay. 14:03 Jack: So, it turns out that... that fiber is very important... 14:09 the natural fiber that comes from food. 14:11 Remember I said the avocado... the fat is locked in fiber. 14:15 When the fat is removed and it becomes naked... 14:18 you know, you can... you can get oil from avocados 14:22 but why do that when you can use the avocado naturally. 14:27 So, it's very important to use... use the food 14:30 in the natural environment with the fiber. 14:33 Now, it turns out that that fiber is... 14:36 is... and the phytonutrients that come with the fiber 14:40 is anti-inflammatory 14:41 and inflammation is at the root of heart disease 14:44 and diabetes and all these lifestyle diseases. 14:47 So... so the fiber is really important. 14:50 The other thing that fiber does is... 14:52 let's say I have a choice in the morning. 14:54 I... I can drink orange juice or I can eat an orange. 14:59 There's no difference, is there? 15:02 Steve: Is there? 15:04 Jack: Or is there? Steve: Is there? 15:05 Jack: One is naked... that's the orange juice 15:09 and the other is locked in fiber... 15:11 the juice is locked in fiber. 15:13 If I drink the orange juice, 15:16 my blood sugar rockets right through the roof. 15:18 If I eat the orange, 15:23 I get a rise in my blood sugar 15:26 but instead of going like that... a spike... 15:28 it goes like this and it rises and rises gradually... 15:33 gradually and then it comes down 15:35 four... five hours later. 15:36 Steve: That's because the sugars are locked in the fiber 15:38 and so they're released slower. 15:40 Jack: Slowly... you got it. 15:42 That is critical... slow release of that carbohydrate energy... 15:47 that sugar in the... in the orange... 15:48 slow-release... so when you have slow-release, 15:51 you don't get a... a strong insulin response. 15:54 See, because if I do that with the orange juice, 15:56 I get a rush of insulin 15:58 because if my blood sugar goes too high, 16:02 I go into a coma... I... you know, 16:03 so, the body has to control what they call: homeostasis. 16:06 It's the narrow limits that the body likes to keep things in. 16:10 So, if something goes high, 16:11 it puts out something to bring it down 16:13 and Insulin brings down that sugar. 16:15 Steve: It's like temperature, right, 16:17 if the temperature is too high, the body works to bring it down. 16:19 If the temperature is too low, the body wants to bring it up. 16:22 Jack: That's that homeostasis thing, you know, 16:24 to... to keep it in certain limits. 16:26 So, this... this whole... ah... ah notion then 16:31 of controlling that blood sugar by eating the natural fiber, 16:36 that's what prevents Diabetes 16:37 because when we drink those sweet drinks 16:40 and we get that rush... you know, several times a day, 16:43 we exhaust the pancreas 16:45 and now the pancreas starts to produce less insulin 16:49 and we're eating a lot of animal fat... the burgers 16:53 you know, the fast-food French fries, 16:57 fried in that hydrogenated artificial Trans Fat, 17:01 you know, all those things... 17:03 they create trouble for the body. 17:06 They create insulin resistance and things like that. 17:09 and... and move us toward the diabetic condition 17:12 so, we want to eat foods that are high in fiber 17:16 just the way they come from the hand of the Creator. 17:19 Steve: Foods high in fiber are 17:21 the foods that are in their natural state. 17:23 Jack: In their natural state with all the phytonutrients 17:26 the minerals... the vitamins, et cetera. 17:28 The Creator has packaged everything in those foods 17:31 and we don't have to go look for vitamins over here 17:35 or look for vitamins over here, 17:36 as long as it's naturally grown 17:38 and it's not sprayed and you know, 17:40 all those other things... organic food, 17:42 that's what we want 17:43 and that is the best medicine for the human body. 17:48 Optimal medicine, if you will, 17:51 prevention... which, you know, they say, 17:54 "An ounce of prevention... " that's the food... 17:57 "is worth a pound of cure... " 17:58 and that's the expensive pharmaceuticals to control it. 18:01 So, fiber... fiber brings down the inflammation... 18:04 phytonutrients and all that. 18:05 Steve: You mentioned the the... Allium... 18:07 what do you... how do you call that? 18:08 Jack: The Alliums... now that's the onions and the garlic 18:10 and things like that. 18:11 They are wonderful for the... for enhancing the immune system 18:15 that we were talking about in our last program. 18:18 I make a dressing in my... at... at home... 18:21 it's a... a parsley dressing... 18:24 it has cashews and it has parsley 18:27 and little bit of onion 18:28 and I put in two cloves of fresh garlic 18:32 and I mean, that really... you can taste that garlic. 18:36 That garlic will kill any virus that's down in your gut 18:40 or any bacteria... it's... 18:42 it's particularly good for viruses 18:43 but fresh garlic is a wonderful immune enhancer. 18:47 It's part of your battle system. 18:49 Steve: Okay, I mentioned the... the vegetables... 18:52 the cruciferous vegetable. 18:53 Jack: Yes, of course, that's the cabbage family... 18:55 the broccoli... the cabbage... 18:57 the Brussel sprouts and things like that. 19:00 They're particularly good for enhancing your 19:03 ability to fight cancer for instance, 19:06 so... all of that. 19:08 Steve: And the fats... talk to us quickly about the fats... 19:10 Jack: Saturated fat... limit that... 19:12 so... so... the animal products are where you're going to get 19:16 most of the saturated fat. 19:17 Coconut oil has saturated fat also in it 19:21 but that seems to have some brain enhancement effects 19:27 but again, because it's refined 19:31 and it's removed from the coconut, 19:32 you want to be careful not to overuse it. 19:35 It is a saturated fat 19:37 but most of where we're getting saturated fat 19:39 are from animal products. 19:40 The chicken... the fish... 19:42 the... the meat and so on and so forth 19:45 so, we want... because that drives the heart disease process 19:49 especially the oxidized cholesterol 19:51 and speaking of oxidized cholesterol, 19:54 I want to mention a couple of things 19:56 that tend to really damage your arteries. 20:00 There are some foods that are actually dangerous 20:02 that from experimenting with animals, 20:06 they have shown that these foods when they feed them to animals, 20:10 it will damage their arteries overnight... 20:13 in other words... within 24 hours, 20:15 they can start to see fatty streaks in the... 20:18 in the arteries of these animals 20:20 when they feed this kind of food to animals. 20:22 So, I know what you're saying, 20:24 "Boy, I'd better pay attention here and see what these are. " 20:27 That's a good thing to do... pay attention. 20:29 Steve: Okay... I'm listening. Jack: Here we go... 20:31 all right, the first one of these foods 20:34 that we want to recommend that you avoid 20:38 is something that most people would never think of 20:40 and that is... Pancake Mix. 20:43 In other words, it sits on the shelf in a box 20:48 in the Supermarket... 20:50 you'd say, "Why would that be dangerous?" 20:51 Well, the answer in a word... actually two words 20:55 is oxidized cholesterol 20:58 because you see the danger from cholesterol 21:00 is not cholesterol itself 21:02 but oxidized cholesterol that actually damages the arteries... 21:06 it's a free radical. 21:08 So, the question is, 21:09 why would pancake mix have oxidized cholesterol in it? 21:14 The answer is... in a word... eggs... 21:18 eggs have large amounts of cholesterol. 21:21 However, it's not just eggs that Pancake Mix has, 21:25 it's powdered eggs. 21:28 Now, think about what happens when you take an egg 21:33 and make powder out of it, 21:34 you increase the surface area dramatically 21:37 and when you expose that to oxygen, 21:39 guess what happens? 21:41 It oxidizes. 21:42 I first learned this from Dr. Neil... 21:47 Steve: Nedley... Jack: Nedley, thank you... 21:50 little brain freeze there... 21:52 oxidized cholesterol is the real problem 21:56 when it comes to cholesterol 21:57 and he put this in his book... that's where I first found it. 22:00 Proof Positive... it's a wonderful book 22:03 and I encourage people to acquire that book 22:05 and that oxidized cholesterol is what damages the body overnight. 22:13 The second one... there are four of them... 22:15 the second one is lard... 22:17 lard is a fat that sits out, you know, in the open, 22:20 we often get it in refried beans and things like that 22:24 in the restaurants, you know, and all of that, 22:25 so, you need to ask questions when you go into a restaurant, 22:28 "Is there lard in this?" 22:29 because that can damage your arteries. 22:30 Steve: In one day. 22:32 Jack: In one day... 24 hours it can damage... 22:34 because of the oxidization... 22:36 see, the lard sits out and there's cholesterol in it 22:38 and it oxidizes... that's the point. 22:40 Steve: When it's exposed to air. Jack: When it's exposed to air. 22:42 Yes, and he tells a... 22:44 Dr. Nedley tells a wonderful story 22:46 about how they discovered this but we don't have time for that. 22:49 Let's move on. 22:50 Now, this one is kind of counter-intuitive. 22:54 Parmesan cheese... 22:56 Why would Parmesan cheese damage your arteries overnight? 23:00 Because most of... 23:02 most of the time when people eat Parmesan Cheese, 23:04 it's in a little green can, you know, powdered cheese, 23:08 and we shake it out on our spaghetti, right? 23:10 There is the spaghetti sauce and we shake it out. 23:13 Why would Parmesan Cheese... powdered Parmesan Cheese 23:16 be damaging to your arteries? 23:18 The answer is again... oxidized cholesterol. 23:21 Cheese has cholesterol. 23:23 When you make it into a powder, you increase the surface area... 23:27 the amount of cholesterol in it that is exposed 23:30 dramatically increases and so it oxidizes 23:32 and the first part to oxidize is the cheese on the top 23:38 as it sits in the can. 23:39 When you do that, guess what you've just done? 23:42 You've put the oxidized... 23:44 the most oxidized part of that cholesterol on your food. 23:47 It will damage your arteries overnight. 23:49 Steve: In one day... Jack: In one day. 23:51 That's what the research shows. 23:53 Oxidized cholesterol sitting there... 23:56 Steve: And, of course, the number one cause of death 23:59 is still heart disease. Jack: Absolutely 24:01 and so, you need to be careful of that food 24:03 and the last one that we're going to talk about 24:06 is custards... custards that are... 24:09 that are made from eggs 24:10 and sugar and milk for some reason 24:14 and I don't think we understand all of the reasons. 24:17 Oxidized cholesterol may be a part of... 24:20 is a part of that because there are eggs in it, 24:22 but for some reason, 24:24 that combination of milk and sugar and eggs 24:28 is very damaging. 24:31 Now, there is a custard that we eat commonly in America... 24:34 a milk-and-sugar combination... 24:36 can you guess what that is? 24:38 Steve: Eggnog? 24:39 Jack: Eggnog... that's one of it... 24:41 but there is also Ice Cream... Steve: Oh, Ice Cream. 24:44 Jack: Ice Cream is a milk-sugar combination 24:46 and for some reason, 24:47 Ice Cream tends to pose an extra risk 24:50 because of that sugar-milk combination. 24:53 So, these are some of the things 24:55 that we need to be cognizant of 24:58 that can actually protect us. 25:01 Again, the principle is simple: 25:04 Food that comes from the hand of the Creator 25:10 in as natural form as possible... 25:12 fresh fruits, vegetables, nuts and grains 25:15 and, of course, the seeds... the legumes... 25:18 black beans... garbanzo beans, 25:20 you know, tremendous importance for things like hypertension. 25:24 We'll get into that when we talk about reversing hypertension 25:28 all right. 25:30 Steve: So, when the Bible... when God says in Genesis 1:29, 25:34 "And God said... " 25:35 He's given us these natural products and He says, 25:39 and then He says, "To you, it shall be for food" 25:43 if we eat more of that food, 25:47 the natural food that God made... 25:49 that grows in the ground, 25:51 in more of its whole state, 25:53 we're a lot better off, right.
