00:22 And welcome to Creative Cooking. 00:24 My name is Nicole Braxton, 00:26 and I will be your host and tour guide 00:27 as we travel the world one bite at a time. 00:31 Today, we'll be making a stop at the beautiful Middle East. 00:35 Some of the delicious meals we'll be making are hummus, 00:39 a delicious hummus wrap, tabouli, and beet hummus. 00:44 We're going to a place where the weather is beautiful, 00:47 the food is full of flavor and fresh ingredients. 00:51 So I am super excited to get to our first item 00:54 that we'll be cooking today. 00:56 The ingredients for our hummus include... 01:19 So let's get started. 01:22 All right. 01:23 Now for this dish, you will need a food processor. 01:26 So I have my food processor right here, 01:30 and we'll put some garbanzo beans that are already cooked, 01:33 so it makes the process more streamline. 01:35 So we'll put this into our food processor. 01:38 Alrighty. 01:40 Next, we can put some nutritional yeast flakes, 01:43 it gives it a cheesy, consistency, 01:46 and also lots of great vitamins with its B12 and amino. 01:54 Okay, so next, we'll put in some garlic, 01:59 it gives us a nice flavor. 02:04 We'll put in some paprika... 02:11 and some freshly squeezed lemon juice. 02:14 This definitely makes the dish vibrant, 02:17 and full of fresh flavors, 02:20 and makes it come alive essentially. 02:22 I really like adding the lemon juice. 02:23 We'll put that in there. 02:25 And then add a little bit... 02:27 Make sure you get all of our paprika. 02:30 Okay. 02:32 Then we'll add our cumin. 02:37 When making different dishes such as different Indian food, 02:40 it's really nice, I love putting cumin, 02:43 and mixing it with ground cumin, 02:45 mixing it with cumin seeds, 02:47 and essentially mixing that with curry 02:48 really makes a nice base. 02:50 So when we travel to other countries in the future, 02:52 remember, when you put ground cumin, cumin seeds, 02:56 and curry together, it makes a delicious flavor. 02:59 But back to our delicious hummus. 03:02 Okay, so we'll have some olive oil, 03:04 so we talked previously, extra virgin. 03:07 If you can get extra virgin cold-pressed olive oil, 03:09 it's better that it's less refined 03:11 than regular olive oil that you would get. 03:15 And the less refined it is, the more healthy it is for you. 03:18 Ultimately, the less oil you use, 03:20 the better it is for your body. 03:21 But if you do use it, 03:23 extra virgin cold-pressed olive oil is the best. 03:26 We're gonna put some salt to taste. 03:33 All right. 03:35 Then we'll put some tahini, 03:36 this is a super star in this dish. 03:38 It really brings it together. 03:40 We'll put some tahini in there. 03:53 All right. 03:58 And if you want to add any fresh herbs, 04:00 you can do that as well. 04:06 Okay. 04:08 So now we're gonna also add some water to help it blend 04:14 and combine everything. 04:18 So now you can see everything kind of coming together. 04:22 So we'll put in our food processor top 04:29 and blend it. 04:32 Everything's coming together so nicely. 04:41 Smell is so amazing, the smell is great. 04:44 Let's keep blending. 04:49 Good. 04:56 Great. 05:01 When making your hummus, 05:03 if you find that you'll like to add some more liquid, 05:05 you can add additional water, 05:07 you can also add a little bit of oil if you like. 05:12 Just a little, and let it just come together. 05:32 Now we're gonna take out our hummus 05:34 and see what we made. 05:36 It's a very simple dish. I love this. 05:39 You can put this on pita bread, you could have it as a snack, 05:42 you could use it as base, 05:43 or you can make a wrap that we'll be making shortly. 05:46 So we'll put our hummus into the bowl. 05:59 Wow! 06:01 Oh man! 06:03 I'm excited to add this to our wrap shortly. 06:06 Smells so good. 06:09 It's a nice base. 06:10 If you do meal prep throughout the week, 06:12 it will be a good base to add to different meals. 06:15 Again, you can have it as a snack also. 06:18 Don't do that. 06:19 You can have it as a snack, and you can also put it 06:22 as something to layer your different dishes. 06:26 Okay, so now we've completed our hummus. 06:29 This is our finished product if you like to look at it. 06:33 It all came together, it's creamy and smooth, 06:35 it's nice to add to your different dishes 06:37 and to eat alone if you like to dip bread in it. 06:40 So now we're gonna take a look at our next recipe 06:43 which is our hummus wrap. 06:45 The ingredients for our hummus wrap include... 07:13 So to get us started with our wrap, 07:16 we'll go ahead and take some red pepper. 07:22 Alrighty. 07:24 And just chop off the sides. 07:35 All right. 07:37 I really like red pepper because as you cut it, 07:39 you can smell the different flavors of it. 07:43 When you add it to your dishes, 07:44 it really accents like your salads 07:48 or our wrap that we're going to make today. 07:51 So I'll just cut it into more slices. 08:00 Okay. And you can make them as thin as you like. 08:03 Just put it into strips. 08:10 All right. 08:11 Now, we've got some strips going. 08:14 So you get how you do you red bell peppers. 08:18 And next, we're gonna start and warm up our tortillas. 08:23 Also you can take some beans from the can 08:27 or just cook your beans separately, 08:29 you can season them however you like. 08:32 For me, I like to add a little bit of garlic into my beans. 08:36 This is all up to you 08:37 on how you would like to season them. 08:40 So I add a little bit of garlic. 08:43 You can add a little bit of honey if you like. 08:47 Just season them like that and heat them up. 08:51 All right. 08:52 So now this has warmed up, 08:54 and we're gonna take some corn tortillas. 08:58 The great thing about this is, when you warm them up, 09:02 on each side of it, 09:04 it begins to get a little bit crispy, 09:05 you don't need to add oil or anything, 09:07 just applying it to the heat. 09:10 So I'll put our corn tortillas in. 09:15 So let that sit a little bit. 09:16 And as it continues to cook, it'll rise a bit, 09:19 and that's how you'll know that you're ready to flip it over. 09:24 So we have our corn tortillas, 09:26 and then we can use our delicious hummus 09:29 to layer it next. 09:31 Let's check on the beans. 09:36 Also if you want, you can put some different herbs in here. 09:40 This dish is a really good base for you to add 09:43 the different creative things that you would like to add. 09:46 So I'll flip it over now. 09:49 Give it a couple of minutes. 09:51 I'm gonna finish up these red bell peppers, 09:54 just keep making some slices. 09:59 Alrighty. 10:08 So the other things that 10:10 we'll be adding is the tomatoes, 10:13 we have the cilantro, it really helps, 10:15 it brings out the different flavors 10:18 and garlic of course. 10:21 So for each tortilla, we're gonna make a rub, 10:26 and this is exactly how we do it. 10:28 We put some garlic... 10:34 some paprika... 10:40 and some extra virgin cold-pressed olive oil. 10:48 Alrighty. 10:50 Then we'll put it in a blender, and just let it mix. 11:08 All right. 11:10 Now, we're gonna take our mixture, 11:13 and we will put it on each tortilla. 11:20 It adds a nice accent to it. 11:23 And for the base, 11:24 so the tortilla doesn't taste solely like corn. 11:26 And if you look a little bit closer, 11:28 you can see that the tortillas are starting to rise 11:33 and bubbles are starting to form 11:34 showing you that it's ready. 11:37 And now we're gonna put the rub over it. 11:47 Next, we're gonna start layering our delicious wrap. 11:54 Okay. 11:58 So we'll take it off the heat, 12:02 and we'll begin to layer. 12:11 Wow! I love the texture of it, it's very crispy. 12:14 If you see in the outside, has a nice crispy layer. 12:19 So when you are eating it, you'll have a nice crunch. 12:23 All right. 12:24 So we're gonna put the hummus first. 12:35 We'll put our hummus first. 12:37 All right. 12:39 And we'll layer it just like... 12:40 So look how creamy it is. 12:43 Very, very creamy. 12:45 Okay. 12:47 Then we'll put it on our next tortilla. 12:52 I like the contrast and texture, 12:55 so you have the crisp from the corn tortilla 12:58 and the creaminess from the hummus. 13:00 So it really comes together well. 13:04 All right, so we have that. 13:06 Then, I am going to layer it with our beans 13:11 that you already have prepared. 13:18 Just like so, it has a nice amount of protein in it, 13:22 and beans are great 13:24 because they have proteins inhibitors 13:25 which slow down the cell of carcinogens. 13:28 Also for diabetics, it allows sugar to break down slower 13:32 within your body. 13:34 It helps to regulate glucose levels as well. 13:36 So beans are a great thing to add into your meals. 13:39 So then, we're going to put some red bell peppers, 13:43 we'll put that next. 13:48 Okay. 13:50 I like this dish 'cause it has like a mix, 13:52 we have some Middle Eastern flavor, 13:55 we have some beans in there, 13:56 so it's a bit of fusion, that's for sure. 14:00 So we have three strips of our red bell peppers. 14:03 We'll put some corn on top as well. 14:11 Okay. 14:13 And also if you want to put 14:14 some garlic to taste. 14:20 Alrighty. 14:21 Then we'll put some tomatoes. 14:38 And then next, we will put some cilantro. 14:44 You can also add some different herbs and spices 14:48 to give it some more flavor if you like. 14:50 I'm going to put some more garlic on mine. 14:57 And if you like to put a tad bit of salt to taste, 15:00 you can do that as well. 15:03 You can use some Himalayan salt 15:06 or any type of salt that you would like. 15:08 The less processed the better. 15:12 All right. 15:14 And there you have it. 15:16 Here are our hummus wraps that we made together. 15:19 Really delicious, light, and nutritious. 15:23 So let's get started on our next recipe. 15:27 And for the beet hummus, we will need... 15:47 So let us get started. 15:49 So this is a cool recipe 15:50 because it takes a spin on the traditional hummus 15:53 you and I have gotten to know. 15:55 What we're using to have that different vibrant color 15:58 is the beet as described in the recipe. 16:00 Normally, when you make this recipe, 16:02 you will take a beet from your local store, 16:05 you'll cut off both ends, you'll peel it, 16:08 and then you'll let it bake 16:09 in 350 degrees for about an hour. 16:13 So, just so that you can see the process after it, 16:17 I've already got it started. 16:18 So after an hour, I'll pull it out of the oven, 16:21 and your beet look like this. 16:23 Oh, let me get my mitts, it's hot. 16:28 All right. 16:32 Wow! 16:34 Woo! 16:36 Be careful at home. 16:37 Make sure you have your mitts 16:38 or something like a towel to protect you. 16:41 So now, I'm going to take the beet, 16:43 you wrap it in aluminum 16:45 to really allow it to cook under pressure. 16:50 Then when it's done, you'll start unwrapping it, 16:53 and it'll look like this. 16:55 Whoa! Be careful. 16:57 And explain to everyone that you're making beets 16:59 'cause it has a really unique color. 17:02 So we'll take our beet, we'll cut it up. 17:09 It's so tender. Wow! 17:11 It's kind of hard to make hummus dish 17:12 'cause it makes me want to eat the beet as I'm chopping it, 17:15 but it is delicious. 17:18 Look at the vibrant red from the beet. 17:20 If you take a quick look at that, 17:22 it's really vibrant. 17:24 And then as you make it, you'll see in your hands, 17:25 you'll have a little bit of red, 17:27 but it just makes for a great hummus. 17:30 So now I'm going to put some chickpeas, 17:34 still use chickpeas as a base 17:36 but we're going to add the beet in there for the color 17:38 and the different taste. 17:40 So we'll put the chickpeas in here. 17:44 We'll add our beets, chop them up, 17:47 just give a processor break, 17:50 but you can throw them in whole, 17:51 especially if you let it tenderize. 17:53 Throw our beets in there. 17:58 Be careful, it's a little bit warm. 17:59 So what you can do is also let it cool 18:02 before you put it in the hummus as well. 18:09 Now, we're going to add our other spices. 18:16 I'll wipe my hands really quick. 18:18 We're going to add garlic, paprika. 18:21 The garlic in. 18:25 Okay. 18:26 We have our paprika, 18:29 have our nutritional yeast flakes, 18:33 ground cumin, 18:34 so the similar things that we made 18:35 for our first hummus. 18:39 We have some more lemon juice keeping it fresh 18:42 and put that citrus in there, 18:45 some salt to taste, 18:49 some tahini... 18:51 which, again, is a really good acid to this beet, 18:56 really helps bring everything together. 19:00 Okay, then we're going to add some olive oil. 19:07 Alrighty. 19:09 Now we're going to put in the processor 19:15 and let it blend. 19:20 Wow! 19:21 Look at that. 19:27 Amazing! 19:29 Now if you see, 19:30 all of the colors are coming together, 19:32 and it really shows the vibrant red from the beet. 19:37 Really nice. 19:50 Wow! 19:51 This looks amazing. 19:54 So purple is one of my favorite color. 19:56 So having this color as a hummus 19:59 that I'm going to eat, I'm super excited. 20:01 It's beautiful, and it is going to be delicious. 20:04 So let's give it a try. 20:05 You can let it blend as long as you want. 20:07 If you want it smoother, 20:09 let it stay in the processor for a little longer time. 20:11 But if you like the consistency as a little thicker, 20:14 just have less time. 20:17 All right. 20:22 I'm gonna take this hummus. 20:25 Actually, I think I will put it in this bowl. 20:42 So you can have this over on with pita bread, 20:45 you can dip fresh veggies in it. 20:47 There's so many things, 20:48 you can put it as a base for a sandwich. 20:51 So here is our beet hummus, and you can make it smoother, 20:57 I have mine a bit chunky but it's really flavorful. 21:01 And just to give it a try, 21:03 I'm going to dip a red pepper in it, 21:05 see how it tastes. 21:10 Wow! 21:12 I do recommend this at home, 21:14 dip red peppers in your beet hummus, 21:18 it is delicious. 21:19 I'm using the other end, 21:20 just in case someone else wants to try. 21:25 Amazing. 21:26 All right, I'm having too much fun. 21:28 We have one more recipe. 21:31 And we are going to be making some tabouli. 21:33 The ingredients for tabouli is... 22:01 To start this off, let's look at our fresh veggies 22:05 we have inside of this tabouli. 22:08 So I like to get my tomatoes off the vine. 22:11 So I'll take some tomatoes, 22:13 and we'll dice it into four first. 22:17 So one down the middle, and we'll chop it. 22:22 And what you want to do... 22:23 And so if you see the tomato, 22:25 it has the inside which has all the different seeds. 22:30 I kind of look at it as the heart of the matter. 22:32 So what you want to do is go around the outside 22:36 and take out the seeds for this tabouli. 22:43 Okay, and you just cut. 22:45 So now you see, it looks like this 22:47 after you take the seeds out. 22:52 And you'll do that for each part of the tomato. 22:57 So you'll cut it around. 23:03 All right. 23:06 So this helps so when you make your tabouli 23:08 doesn't add extra juices from the tomato, 23:11 you can really just get the flavor 23:13 and some of the nutrients from the tomato 23:15 as opposed to the seeds and all the extra liquid. 23:20 So putting that to the side. 23:27 And also another thing, for our tabouli, 23:30 we are using couscous. 23:32 So when you make it, you will take your couscous, 23:36 you let it boil, and then as it's boiling, 23:38 you let it cook for about 30 minutes, 23:41 you'll pour it in. 23:43 And then when you're done cooking your couscous, 23:45 you'll refrigerate it. 23:47 And you can refrigerate it overnight 23:49 or just refrigerate it for two hours, 23:52 and then you're ready to start dressing 23:54 your couscous with all of these fresh ingredients. 23:58 So now you just chop up your tomatoes. 24:03 I like this tabouli 24:06 because it's a Middle Eastern fresh spin, 24:09 and it also combines a little bit 24:11 of Mediterranean cuisine with inside of the tabouli. 24:15 I was trained in how to kind of fuse 24:18 different countries' cuisines, 24:21 and this is a nice fusion. 24:23 So we have the tabouli with a lot of fresh herbs 24:27 that you'll see soon and veggies. 24:29 So it makes it really refreshing when you eat it. 24:32 Okay, so we're going to chop the tomato. 24:37 All right. 24:46 All right, so then you have your tomatoes chopped up. 24:54 Now, you'll move on to your cucumber. 25:00 And you can cut it in the middle, 25:04 and you can cut it down, 25:10 and you can cut it into three or four sections, 25:15 do three. 25:17 And then you'll do that rocking motion 25:19 that we talked about earlier. 25:21 So you just rock it. 25:29 Okay. 25:31 And then if you want it smaller, 25:32 you can just cut on top of it. 25:39 Do the same thing for the other section, 25:41 cut it into three. 25:43 Cucumber is great, you can also make 25:45 a nice cucumber water from the cucumber. 25:49 It's a great thing to add to water if you're detoxing 25:53 or just cleansing your body. 25:54 It's a good thing if you make cucumber water 25:56 to put cucumbers in your water 25:58 and let it sit overnight. 25:59 So it can be infused in your water. 26:02 So now we have our tomatoes and our cucumbers. 26:05 Next, we're going to be utilizing 26:08 our fresh herbs and spices. 26:10 We have mint, we have basil, 26:13 and we're going to add this as well. 26:17 So this is a new, unique spin 26:21 on the delicious tabouli. 26:24 So we just chop those up. 26:26 Now we're going to add all of our ingredients. 26:28 We'll put our onions in. 26:32 We'll add our cucumber, our tomatoes, 26:38 our mint, and our basil. 26:42 We'll also add some garlic. 26:47 There we go, some lemon juice, 26:52 olive oil, and salt to taste. 26:56 Now we'll mix it up. 26:59 Then you'll let it refrigerate, 27:02 so all of the different flavors can combine effectively. 27:06 And then you can serve it to your family. 27:10 So this is our finished tabouli, 27:11 you let it sit, 27:13 and let it marinate to get all the different flavors. 27:15 So we cooked a lot today, 27:17 and I'm so excited to try all this 27:19 fresh and flavorful food. 27:21 Today, we made our hummus which is really delicious. 27:25 You can add this to different wraps, 27:27 as you see, our next dish, 27:29 we had our wrap infused with all the different beans, 27:32 and we had the different red bell peppers, 27:38 and we had corn, and then we had our beet hummus 27:41 as well as our tabouli. 27:43 So we had a full meal today. 27:46 This might seem light but once you start eating this, 27:49 especially with the beans, it's really filling. 27:51 So as always, it is a pleasure to travel with you 27:55 one bite at a time. 27:57 Thank you again for tuning in 27:59 and be sure to check us out 28:01 on our next Creative Cooking program. |
