00:23 My name is Nichole Braxton and I am super excited 00:26 to be with you here today. 00:27 Some of the dishes we'll be making are Carob Brownies, 00:31 a Strawberry Glaze, a Mango Smoothie and Doux Crepe. 00:35 And before we get started into all these delicious meals, 00:39 and different recipes, I want to share with you something 00:42 that's really keen to me and is really special to my heart. 00:45 When it comes to cooking, I love to mix different things 00:49 and try out what works well and to be creative.. 00:52 And also when I am cooking for people I always like to lean 00:57 upon God. For me, that is really important because 00:59 at the end of the day, He knows best. He created all my 01:02 taste buds, so, when I was preparing for all these different 01:07 recipes, I started to...this song came to me and I wanted to 01:09 share it with you. I am going to share it right now, 01:13 so another thing that important to me besides cooking is 01:16 also singing. I love to sing. 01:18 So I am going to sing a song to you that inspires me 01:21 when I'm in the kitchen. 01:51 Essentially that song is welcoming the Holy Spirit 01:54 into our lives, so for me when I cook, I like to welcome the 01:57 Holy Spirit along with me. 01:59 So let's skip into cooking, let's make our delicious 02:02 carob brownies but before we do, I have a really close friend 02:05 that is here with me. Jason will you come join me? 02:07 Good to see you. Good to see you. 02:10 So, I have to be honest with you. 02:13 I've been watching you on Creative Cooking, 02:15 I've been seeing all of these wonderful recipes being made, 02:20 I've tried the food. I love the food, 02:23 which surprised me because my diet is a little bit different 02:28 but I was very surprised. 02:31 So I am excited to jump into whatever we are going to be 02:35 making today. 02:37 What are we going to be making today? 02:38 So we'll be making carob brownies and the ingredients 02:41 for that include: 03:08 Wow! That sounds like a power packed desert. 03:13 Yes! Now how much does this recipe yield? 03:16 Yes. So this is a really good recipe because it is great 03:20 for groups. When making it you can make around 20 to 30 03:24 different brownies so remember with quantity, 03:26 this is a really good recipe for groups. 03:29 Twenty to thirty. Yes. 03:30 Or you can have a lot of leftovers. 03:33 Or you could have a lot of leftovers. 03:34 I'm with that plan. So you have that sweet tooth. 03:36 So to get us started we'll first put our dry ingredients 03:40 together. So if you can take the carob powder and 03:42 put it in the mixing bowl. Ok. 03:45 Ok. Then if you can take the flour as well as the 03:57 whole wheat flour. You know what, this is, 04:00 this is really good too because I'm not really that great with 04:03 baking like that. Um hum. 04:05 I can cook at home. Yes. But the whole baking thing 04:09 is not really my strong suit so I'm happy to be learning. 04:13 You know what I like, the recipe, this recipe is 04:17 really good to help have a good base so then 04:19 when you go home, it's easy to make so this is going to be 04:23 a good one. 04:24 And while you stir this up... Ok. I'm going to melt some 04:29 of the vegan butter. 04:36 Alrighty. 04:41 Now in general when it comes to desserts 04:43 the absolutely best desserts come directly from nature. 04:48 But if we do decide that we want to bake something like 04:52 a brownie like we are doing today...Um hum. 04:55 This is a good vegan recipe. 04:58 Nice. 05:01 Alright, so I am just letting this... 05:03 And I'm making a mess over here while I'm stirring. 05:05 You're doing good, so as you are mixing, 05:07 you are essentially making it so that all the different 05:09 dry ingredients come together and so when you put a liquid 05:13 with it, sometimes it will clump up. 05:15 So for example, have you ever had something that tasted like 05:18 chalky? Yeah. 05:19 Almost like when you make a rue. Yes...How that clumps. 05:23 Yes exactly. Gotcha. So that will come up. 05:25 So now our vegan butter is done. 05:29 Lovely, lovely. 05:32 Alright, so now we are going to combine our 05:35 liquid ingredients in a separate bowl 05:37 Ok. So what I found is apple sauce is a really good binder 05:45 for ingredients when you do like baking, 05:48 it really puts it together, keeps it moist and has a good 05:51 texture. So if you can pour this in here... 05:54 Tell me. I've got an interesting story to do with applesauce. 05:59 Ok. So when I was a kid and coming up, my mom... 06:03 she's very healthy...Ok, that's awesome. 06:07 So what she used to love to do was to put herbs and supplements 06:13 in the applesauce and mix it around so that I would eat it 06:19 and I would get those supplements and all of that. 06:22 So I wasn't really a huge fan of applesauce when I was a kid. 06:26 My cousins, they used to call my mom Aunt Evie 06:31 and they still call her Aunt Evie but they would say 06:34 no more applesauce Evie, like they didn't want any applesauce 06:37 because they were terrified because they knew... 06:39 Like it took on a brownish Oh wow...color. 06:43 Ok so you had it in a really medicinal way 06:47 all the properties of all the health stuff she put in there 06:49 was...Ok. So, it wasn't applesauce, it was a little 06:53 different than that. 06:54 Applesauce with a healthy... super healthy twist. 06:57 But this is actually going to be a little brown too. 07:01 That would make sense. But a different kind of brown. 07:04 So what do we do next? 07:05 Now we are going to pour our vegan butter inside. Um hum. 07:08 Also to replace any sugar, we can put some honey. 07:16 So if you will just hold that. There we go. 07:22 Team work makes the dream work. 07:23 It is. Loving it. 07:25 Alright so. Okay. 07:30 Now stir this up. I'm going to put these back here. 07:35 Ok, thank you. You are welcome. 07:38 Umm, can you smell this? 07:42 Wow! I know, I'm excited. It smells delicious. 07:47 So now what you are going to do, you are going to add the 07:50 carob chips in there as well. 07:53 Ok. Dry with dry. Um hum. 07:56 And then you will add a little salt to taste. 08:00 Ok. Alright. But this is a big group, this is a big group. 08:06 Big group. It's a big group. It's for a big group. 08:08 That's right. And then you add a little bit 08:13 baking powder without aluminum. 08:15 Alright we definitely don't want that. 08:18 You know, I've heard that aluminum can cause Alzheimer's. 08:20 Really. Yeah, it's not healthy for the body at all 08:24 That's for sure. Yes. 08:26 So I'm going to get my mix on while you are doing that 08:29 I want to be productive. 08:30 Alright, so now, so I am doing the same thing with the liquids, 08:34 I just want to make sure it doesn't have clumps 08:36 so it doesn't taste like applesauce in one bite, 08:39 vegan butter on the other. 08:40 So like a smooth consistency. Exactly. Exactly. 08:44 So when you have brownies, what are your favorite 08:46 kind of brownies? 08:48 Well let's just put it this way. 08:51 Tell me. I'm happy to be trying these 08:54 type of brownies because we are using carob instead of 08:57 the chocolate. Nice. and all of that. 08:59 I'm looking forward to testing this flavor out. 09:03 Alright, well we've got our liquids done. Um hum. 09:06 So now I am going to pour it in if you can continue to stir. 09:10 I can do that. 09:11 Alrighty. 09:19 There you go, see now it's all combining. 09:22 Ahh, this is really reminding me of my childhood right now. 09:25 This will taste a little different, 09:27 it will definitely appease your sweet tooth. 09:32 I better...we better hurry up and get this thing baked 09:35 before my mom tries to come in and put some herbs in it. 09:38 One of things I also like about this mixture, 09:41 I've added other things if I wanted to have a 09:45 different taste. Let's say if I want peanut butter 09:46 with brownies. I can add some peanut butter in this, 09:49 in the base and then it has its own taste. 09:52 It's delicious, it still combines with the carob 09:54 and the applesauce. Nice. 09:56 So this is a really great thing that you can do to be creative, 09:59 just add a little something extra to meet your taste. 10:02 How convenient because you are on Creative Cooking. 10:06 I know. Ding, ding, ding, ding. 10:08 Alright so then that just...you just keep stirring that until it 10:12 becomes like a nice mixture. That's right. 10:14 And if you decide that you would like to add a little more 10:17 liquid, I would recommend like water, that's a good thing 10:21 to add. So we are just going to add a little water 10:25 to make sure everything is mixing well. 10:27 Ok. This is definitely don't want to make a mess on 10:32 cause I do have to go to a little meeting after this. 10:36 Alrighty, so I will get the pan ready while you are doing that. 10:40 Alright. Make sure I get all that powder and dry ingredients. 10:48 That looks beautiful. Yes. Uh oh, I see a little 10:55 clump there. It looks a little dry under there. 10:57 Just mix that around. And if you want, 11:00 I usually mix with a spoon like you are doing. Um hum. 11:02 And also you can use a blender, that's, that's...I'm old-school 11:07 just using my hands but you can also use a blender 11:09 or so. You can do that when you are making this recipe. 11:12 I can see that, it's like flying all over the wall. 11:14 Yeah basically. One of those mixers. Yeah. 11:17 That's happened to me before so you know what, 11:20 I can use a spoon. You learn by experience. Trial and error. 11:23 Alright. So that's perfect. 11:25 So now, what we will do, we'll just give it one more mix. 11:28 That's awesome. 11:30 And now if you hold the bowl I will just pour this in. 11:33 Alrighty. Ok. 11:40 Ok there it is. 11:42 And then we'll spread it, just like flatten it out. 11:46 Ok. Alrighty. 11:51 Do we want to put a little more or are we going to make it 11:56 like super thick or... 11:58 This will be one batch, a few people will be eating it 12:04 we won't do the big group so we'll do one batch 12:09 but you can always...what you do with any extra batter 12:11 if it's too much, you can also put it into cupcakes 12:12 and you can have it for later and so we will put this 12:16 in the oven and it'll be good. 12:19 So hopefully you can try it soon. Take care. 12:33 Alright, so I am going to put these brownies in the oven 12:37 and get ready for our next recipe. 12:39 Alright, while those are baking let's get started on our 12:50 next recipe. And the ingredients for our next recipe include: 13:01 This will make our delicious Strawberry Glaze. 13:05 Now when it comes to our Strawberry Glaze 13:08 I really like it because strawberries are a great 13:10 source of antioxidants and I like to mix it up for 13:14 our glaze and what we are going to do is take a saucepan, 13:19 take a little bit of vegan butter... 13:23 You can also utilize water if you like to replace it. 13:27 Then we'll take some strawberries which is about, 13:32 it makes about 8 ounces to one cup of strawberries... 13:35 When you have your bag of strawberries, 13:38 you want 8 ounces to one cup. 13:40 Then you are going to put it inside of the saucepan. 13:45 The smell of the strawberries is amazing. 13:55 Awesome. So we are going to just keep stirring it. 13:59 Alright. Now as we are stirring it and letting all these 14:06 ingredients melt, I'm going to put a little honey to taste 14:11 and sweeten it just a bit. 14:22 So I will just keep tossing it in my saucepan... 14:25 Wow, the smell is amazing. 14:29 Basically you can see that we have strawberries right here 14:34 and they are just all coming together. 14:37 Just from the strawberries coming out... 14:39 We have a little bit of honey in there and some vegan butter 14:42 and at home if you like to use water, you can do that as well. 14:44 Just let it mix. Ok. That is good. 14:53 Next we will put it in a blender to make a good glaze. 14:58 So take it off the fire, put it in our blender. 15:02 Just pour it in, and now we will blend it. 15:28 Awesome. So with all of my sauces I like to give it 15:35 just a little taste, so for this glaze I am just going to test it 15:39 and see if it what I like. 15:40 That's good. Really, really good. 15:49 This is a great topping for different desserts. 15:51 You can put it on top of the brownies. 15:54 And when it is finished it will look something like this. 15:58 So for our next recipe, we'll be doing a mango smoothie. 16:03 This recipe includes: 16:15 So let's get started. 16:16 We will begin by taking the mango and putting it in our 16:20 blender. Next we'll put some yummy spinach inside... 16:28 You can use frozen or fresh. 16:37 Now I'm going to cut a banana in half 16:41 and one thing I want to tell you, when it comes to cutting, 16:44 since I have this in my hands already, 16:46 it's really important to know the sharper your knife, 16:49 oddly enough, the sharper your knife is, 16:53 the better you will be able to cut 16:55 and the less dangerous it is. 16:57 So for example if you have a dull knife and you are cutting, 16:59 it can wobble around and it makes you more likely to 17:03 cut yourself than if you have a sharp knife 17:05 because you have more grip and control. 17:07 So you want to make sure if you are cutting with like a 17:09 chef's knife or any type of knife, you want to make sure 17:12 it's sharp and you also want to be careful. 17:15 So for example this doesn't have a dull blade, 17:18 you don't want to cut with a dull blade. 17:20 So, we're just going to cut our banana in half... 17:24 Also when taking care of your knife, it is important to not 17:31 throw it in the dishwasher to clean it 17:34 because it makes the knife dull. 17:36 You want to rinse off your knife with cold water 17:39 so it doesn't take away the sharpness from the knife. 17:42 That's a good fun tip for you to know when you are home 17:45 and you are cooking and you want to have a sharp knife 17:47 not a dull knife and you also want to be careful when you cut. 17:50 Alright, so we have this banana and we will throw this 17:53 into our smoothie, next we will put some aqua, 18:00 some water in here. 18:03 Alrighty. Then we will put some ice cubes as well. 18:09 I like this dish in a smoothie because it's so fresh. 18:19 I like the mangos, the bananas and the spinach. 18:24 Alright, so now we are going to just blend it up. 18:45 The great thing I like about this smoothie, 18:47 it has a nice green color which to me symbolizes 18:52 the different nutrients I'm about receive from this 18:54 delicious smoothie. 19:06 Alright, it's time to do one of my favorite things, 19:11 which is tasting it out and see how it is. 19:13 I love smoothies. 19:17 That's good. I really like that. 19:24 It's fresh, it's not too sweet and if at home when making it 19:29 if you would like to add a little sweetness to it 19:31 you can add some more fruit or you could add a little bit 19:34 of honey just to sweeten it up but this is great for me so... 19:37 Enjoy! 19:38 This brings us to our next recipe which is our doux crepe 19:43 and the filling ingredients include. 20:19 And you will need a stainless skillet. 20:21 Now let's get started. 20:23 For our filling, what we are going to do, 20:28 we will take some dates which I really like, they're sweet 20:38 and I like the texture of them as well. 20:41 You can get them at your local grocery store or 20:44 health food. Now we are also going to put in 20:47 our cashew butter. Next we'll put some coconut oil 21:11 some honey, and then you will also add some carob powder. 21:32 Ok. So now we are going to let it blend, you can add 21:45 a little bit of water if you like to help it blend better. 21:47 It's up to you how thick you want your filling, 21:52 it's all up to you. So if you like it thick, then you don't 21:55 need to add water. 21:56 If you would like it to be a little bit more liquid... 21:58 have more liquid, then add some water. 22:00 So let's get started, we'll blend this. 22:19 All right, so we blended up everything 22:22 and now these dates are really thick so this will be a 22:30 very thick filler. 22:33 So when you are done, you will fill your crepe with it. 22:38 Now let's get started on our crepe mixture. 22:41 Now for this we will take our flour, we will add our milk, 22:54 some vanilla to taste, Chia seeds and another great thing 23:10 about Chia seeds is they are full of fiber, 23:12 so when eating them, it really acts like a broom within your 23:16 system. It helps get rid of toxins and things that your 23:19 body does not need. 23:20 So having fiber in your diet is really good and nutritious, 23:24 it's a really good, healthy thing to do and essentially 23:28 when we eat, we can actually be preventative for future things 23:32 that could come, so desserts you could have every 23:35 once in a while. That's why we only have one show of this, 23:38 so you can have desserts every once in a while, 23:39 but when you are eating, it is really important to know that 23:43 what we eat can also impact us in a positive way 23:46 so eating plant based foods is something that I have found 23:49 to be really helpful. 23:51 So now we are going to put some Chia seed in here 23:53 and you can put a little salt to taste and we will mix 24:18 and let all the ingredients come together... 24:29 Alrighty. You can add some water as well. 24:44 I really like this mixture because you can use it for 24:47 many things, you can make savory out of it, 24:50 you can also make dessert out of it like we are doing now. 24:54 The key to this is giving it some time to sit 24:57 and you can put it in your refrigerator for 25:01 a couple minutes, like 30 minutes or two hours 25:06 and you just want to give it a chance to combine 25:09 and become one. 25:12 You can put a little more water in there. 25:16 And this is where you can get creative when you are making 25:21 your crepes, you can fill it with whatever you like. 25:24 So this is the filler for the crepe, 25:27 it has the Chia seeds inside and it's full of fiber 25:34 with the Chia seeds, which I like. 25:37 Alright, so now we are going to turn on our stove... 25:46 We can have...if you have like a non-stick pan that's great 25:52 or you can put a little bit of water, something in the base 25:54 so it doesn't stick. 25:56 Then we'll get ready to pour in mixture, so remember, 26:01 when you make this, you want to make sure you let it sit 26:04 in the refrigerator for 30 minutes to an hour or two 26:09 if possible. 26:11 So after it sits, you will pour your mixture into your pan 26:25 and essentially a crepe is a very thin pancake. 26:43 So you just want to allow it to fill and spread out in your 26:49 skillet and then you will let it cook on each side 26:56 for two to three minutes and flip it. 26:58 And when you are done, you will fill it with your favorite fruits 27:02 such as pineapples, we have strawberries, oranges, 27:08 and then you will top it off with our 27:11 delicious carob filling... 27:13 So that's essentially how you make your crepe, 27:16 your Doux Crepe. Let's look at what we made. 27:22 We made a delicious brownie topped off with some walnuts 27:28 and you at home can also top it off with some 27:30 strawberry glaze.
