Who is Jesus to you? All that happens in this world and all 11:24 that goes on in this life today, there is one key to making sense of it all. One overarching 11:33 subject that will get us through another day. It is the story of Jesus, the story of his birth, 11:40 his life, and his death and sacrifice for us. You see, the story of Christmas is the story 11:49 of Jesus. But it's your story as well. The coming of Jesus is good news because he came to 11:57 save us. That is why Christmas, Christmastime is so wonderful. Reach out. Grasp the hand of 20:31 Jesus, the one who was born in a stable, slept in a manger, lived a life helping others, and paid 20:40 the ultimate sacrifice, giving his life for you. He gave everything for you. Let's pray. 20:53 Heavenly Father, we thank you for Jesus, we thank you that he came to save us. Please help us 20:59 to accept that gift today. We pray in Jesus' name, amen. 21:36 Friends, the holiday season is a special time where we can come together as families and eat 21:42 together. And today I'm so happy to have both Darlene Blaney and Bev Edwardsaines here in the 21:51 kitchen with me. And they are going to demonstrate a couple of recipes to keep our holidays 21:56 tasty but healthy. So ladies, what are we demonstrating today? DARLENE: We're going to start 22:02 with a stuffed squash. CHRIS: Okay, that sounds kind of interesting. So what are we 22:06 going to do to make a stuffed squash? DARLENE: Well, first we've got to focus on our 22:09 stuffing. So we're going to actually begin with some fresh breadcrumbs. And we just want to 22:16 take whatever loaf, whole grain bread, and put it in your food processor, and blend that all up 22:22 into a nice, fine texture, and keep them fresh. You don't want to toast these at all. 22:27 CHRIS: All right, now, Bev, this is a whole grain bread. What kind of bread is this actually 22:32 that we're using today? BEV: I think this is the Silver Hills bread that we're using, and you 22:35 know, that's one of the lifestyle centres that we have in British Columbia. 22:39 CHRIS: Okay, and the Silver Hills bread is all whole grain bread, and one of the beauties 22:44 of the Silver Hills bread is, when you read the ingredients, it only takes you a couple of 22:48 seconds 'cause there are very few of them. BEV: That's right. CHRIS: So what else are we 22:51 putting in the stuffing there, Darlene? DARLENE: Okay, we're going to add some grains. We're 22:56 going to add a couple of cups' worth of your choice of grains. This can be kamut, it can be 23:00 rice, it can be whatever grain you like. So we're going to use some wild rice. And we're also 23:05 going to use some brown rice today. CHRIS: All right, now, what are some of the advantages, 23:09 Darlene, of wild rice? What is wild rice going to do for you? DARLENE: Well, basically, any of 23:14 our grains in general are going to be high in fibre. That's probably the biggest key when it 23:19 comes to whole grains. B vitamins. Chromium. Chromium balances blood sugars. So not 23:25 only does fibre balance, but also, the chromium and the B vitamins. BEV: Absolutely. What 23:31 do we have next? DARLENE: Excellent. Now, we want to add some colour to this so 23:35 we're going to actually put in some onion and some celery as well as some shredded carrot. 23:40 CHRIS: Okay. I like onions and celery. BEV: Good combination. Of course, the celery has 23:47 wonderful sodium in there, natural sodium, and the carrots, vitamin A and that shot of nice 23:53 colour there. DARLENE: That's correct. BEV: Perfect. DARLENE: Now, lots of different 23:56 textures going on here. Added to it, we're going to add some dry roasted almonds, slivered 24:03 almonds. So you want to dry roast these just at a low temperature on your own in your 24:07 oven at home. And then we're going to add our seasonings. Now, you can add a little bit of 24:11 sea salt. We can sprinkle that kind of evenly over it there. And poultry seasoning. Now, 24:18 poultry seasoning does not have any poultry in it; it's just well-known for stuffing poultry 24:23 or stuffing mixes. CHRIS: So I know it's going to have some of that sage in there and different 24:29 things like that that's going to give it that real kind of stuffing flavour. DARLENE: Very 24:33 much so. And in fact, you can use sage if you prefer; just use half the amount. And colour, 24:37 beautiful, dried cranberries. You can add fresh, you can use frozen, whatever you like. 24:43 CHRIS: Now, ladies, what's the advantage of eating some cranberries? BEV: Well, first of 24:48 all, it's nice and sweet. CHRIS: Okay, I like that. I always like sweet. 24:52 DARLENE: Yeah. And again, high fibre. CHRIS: Very good. And then are we going to add 24:59 anything else now? DARLENE: We are. We're going to add some water and a little bit of our 25:03 olive oil as well, about a third of a cup of olive oil, so we can just go ahead and put it on. 25:07 BEV: All righty. DARLENE: Sure, all over, and then a little bit of our olive oil as well, and we 25:11 just want to mix this up and then put it into a casserole dish, if you don't have one 25:16 already that you're mixing it in, and cover it and just bake it in the oven until it's nice 25:21 and soft. You're mainly going by the vegetables being nice and tender. CHRIS: Now, if someone 25:27 wanted to make this a little lower fat, they didn't want to put the olive oil in, can they 25:30 get away with doing that? DARLENE: They can, they can. You can just do a little bit more 25:33 water, yeah. The oil just kind of gives it a little bit different flavour, but also 25:38 allows it to brown a little bit. CHRIS: All right. Now, so we put this in the oven? DARLENE: We 25:43 do, bake it until soft. CHRIS: And then through the magic of television, we actually 25:46 have a finished stuffing here. And what are we going to do with that stuffing after we've baked 25:54 it in the oven, and how long are we going to bake it in the oven for? DARLENE: It could take 25:57 about 20 minutes, 10 minutes, give it a stir, another 10 minutes. Just watch that it 26:01 doesn't get too brown. So the vegetables, you just want a little crispness. CHRIS: Now, 26:06 ladies, I see that we do have a squash that we're about to stuff. What kind of squash do we 26:09 have there, Bev? BEV: Is this a spaghetti squash? DARLENE: It is. BEV: It certainly is. You 26:13 know, we've been farming this past year and we've got all kinds of squash. I know my 26:17 squash now, I tell ya. DARLENE: Spaghetti is a very mild flavour as well. But you 26:23 can use any kind of squash that you like. And we're just going to put in our stuffing. 26:28 CHRIS: Okay, so you could use your butternut, your buttercup squash. DARLENE: Absolutely. 26:30 CHRIS: You could even use a pumpkin if you wanted to, I would imagine? 26:33 DARLENE: Absolutely, yes, yes. If you want that brighter orange colour, more vitamin A. 26:36 Interesting, this type of squash, not as much vitamin A, but has omega 3s in it, which is 26:42 unique to this squash. CHRIS: Now, you know, Bev, while Darlene is putting the stuffing 26:48 in that squash, a lot of people say, "Oh, spaghetti squash tastes kind of plain." What are 26:53 some things you can do with spaghetti squash to help it, other than stuff it, that make 26:57 it maybe not so plain? BEV: Right, well you know, one of my favourite ways is to just 27:00 roast it with a little bit of olive oil and some garlic. We use a lot of garlic in my house. 27:06 It's so good for you. And just that easy recipe right there, just roasted, wonderful. 27:13 CHRIS: All right, so Darlene, we've got these stuffed. We're going to then take them and put 27:18 them back in the oven? DARLENE: Correct. I should mention, you want to kind of 27:21 bake your squash 'til it's pretty much done first, okay? And then, you know, put it here, 27:26 put in your stuffing. You can cover it if you wish, if you need to bake it a little bit 27:30 more. If it's pretty much baked, just warm it now in your oven. And heap that dressing up. 27:35 Garnish it, make it look beautiful. CHRIS: That is wonderful. Ladies, this is 27:39 looking delicious.
