00:37 >> Hello and thank you 00:38 for joining us on 00:39 It Is Written Canada. 00:41 Our guest today is 00:42 Carolyn Nichol who is a 00:44 certified wholistic 00:45 nutritionist and also the 00:46 co-owner and manager of the 00:49 Energy Shack Juice Bar which 00:50 is really a family company in 00:52 Scarborough, Ontario. 00:54 >> Carolyn was not always 00:56 a certified wholistic 00:57 nutritionist. 00:58 Her energy and drive to help 01:01 her family and her community 01:03 came from a burning desire to 01:05 follow God's leading 01:06 in her life. 01:08 When she was transformed 01:10 by the power of God, 01:11 Carolyn became an agent of 01:14 healing and wholeness for 01:16 everyone she met. 01:18 Carolyn, thank you 01:19 for joining us on 01:20 It Is Written Canada. 01:22 >> René, Mike, thank you so 01:23 much for having me. 01:24 It's really a privilege to be 01:26 here, I've been a long-time 01:28 fan of It Is Written so 01:29 to be here today with you 01:31 is such a blessing. 01:32 >> It is an honour 01:33 to have you. 01:34 Your story is fascinating to 01:35 us and we want to really 01:38 focus on that and so 01:39 let's go back to your early 01:41 childhood years, what it was 01:42 like in your family when you 01:44 were growing up. 01:45 >> Sure, so growing up I 01:46 wouldn't say we didn't have a 01:47 Christian home. 01:49 My mom was Baptist, 01:49 my father was Greek Orthodox 01:51 so he's Palestinian, 01:51 my mom is from England. 01:53 So there was a little bit of 01:54 tug-of-war in the family as 01:56 far as religion goes, 01:57 but I have an older sister, 02:00 younger sister, 02:02 a younger-younger brother 02:03 so, you know, we had 02:04 a good size family. 02:05 My mom did her best, 02:07 middle class family, as they 02:08 did to make sure that we had 02:10 all the necessities, but when 02:13 we were younger she brought us 02:14 to church. 02:15 So it was a little Baptist 02:16 church, we'd take the bus, 02:17 but, you know, life gets busy 02:19 and she babysat for a living, 02:23 part of it anyways, and there 02:24 was a lot of kids in the house 02:26 so after a while, Sunday 02:27 morning she got pretty tired 02:29 and we started missing the bus 02:31 that would take us to church. 02:33 >> OK, so, Carolyn, tell us 02:34 about Christianity. 02:36 When was your first 02:37 conversion experience? 02:40 >> So it's interesting because 02:42 when I look back at my 02:43 childhood, I feel like I was 02:46 just always in conversations 02:47 with God. 02:48 And I have this distinct 02:50 memory, and maybe I'll only 02:51 find out in heaven if it 02:52 actually happened, of when I 02:54 was in this Baptist church one 02:56 Sunday morning, I remember, 02:57 I must have been like six or 02:58 seven years old, I feel like I 03:00 went up for an alter call and 03:02 it would make sense to me 03:03 because from then, none of my 03:05 other family members would do 03:07 it, but I'd always pray before 03:08 bed, I'd always be talking to 03:10 God, if my friends didn't show 03:11 up for recess, me and God 03:13 would have conversations, 03:14 you know, if I said a bad 03:15 word, I felt bad and I'd say 03:16 sorry to God. 03:17 So I had this little 03:18 relationship with God 03:20 that I think started 03:20 very, very young. 03:23 >> Health is a big part of 03:23 your life right now. 03:25 How was your health when 03:26 you were young? 03:27 >> So, you know, of course, 03:30 child growing up in the 80's, 03:32 you know, white bread, 03:33 cupcakes, and milk is, 03:34 you know, part of a healthy 03:36 diet with Bologna between the 03:37 two slices of bread. 03:39 So that's pretty much what we 03:41 grew up on. 03:42 Of course, you know, my mom 03:43 made every meal and she fed 03:46 like about fifteen kids on one 03:48 can of ravioli, but this was 03:50 our diet. 03:51 And the truth is is that I 03:52 always had stomachaches, 03:55 there was really no limit on 03:56 the sugar that I could eat, 03:58 it was encouraged. [laughs] 04:00 We should all have a treat. 04:02 So I definitely jumped into 04:03 that and did not eat well, 04:06 but I didn't put that together 04:08 with the fact that I always 04:09 had stomachaches, I always had 04:10 headaches, I would very 04:12 regularly get colds, 04:14 I would always get this really 04:15 bad swollen gland to the point 04:17 that we were thinking that I 04:19 might have to take 04:19 out my tonsils. 04:21 So, you know, although 04:22 happy-go-lucky, very, 04:24 you know, optimistic kid, 04:26 I was sick a lot. 04:29 >> So, Carolyn, I have 04:30 a question. 04:32 With regards to your 04:33 commitment to Jesus, you said 04:35 this happened when you were 04:36 six years old so you were 04:38 really young at that time, 04:40 did that stick throughout 04:41 your teen years? 04:43 >> Ahh, that's a great 04:44 question, René. 04:45 So I definitely, although I 04:49 didn't read the Bible much, 04:50 I read Bible stories that I 04:52 would get as gifts from family 04:53 and friends and I would always 04:57 be talking and in conversation 04:59 with God and desiring to 05:01 go to church. 05:03 So when I was about, I think 05:04 about thirteen or so, 05:06 I got a letter in the mail and 05:07 it was inviting us to to a-- 05:09 to enjoy-- to join a 05:11 youth group. 05:13 None of my family members 05:14 wanted to go so I just went by 05:16 myself and my friends from 05:18 school joined me, you know, 05:19 we're young kids and happy 05:20 to go to church. 05:21 So we started going to this 05:23 church on Friday nights and 05:24 soon they invited us so we'd 05:25 have a devotional and then 05:27 we'd play basketball and 05:29 finish the night with the 05:30 vending machines. 05:31 So eventually, of course, as a 05:33 good church would, they were 05:35 leading us to come to church 05:36 on Sunday and so we started 05:38 going to church on Sunday, 05:39 but again, it was just me and 05:40 my friends or sometimes my 05:41 friends wouldn't come, but 05:42 because I had this love for 05:44 God, I just wanted to go. 05:46 So I would go every Sunday 05:48 morning by myself, sometimes 05:49 drag my little sister along 05:51 with me or my little brother. 05:53 And then that started to grow 05:55 into where the church is 05:57 saying, "You know, you've" 05:58 "been coming here for a" 05:58 "while, why don't you try," 06:00 you know, "study to become" 06:01 "a member?" 06:02 There was no real baptism to 06:03 become a member, but you would 06:05 just go through a class. 06:07 So now we're pressing on 06:08 sixteen years old, my friends 06:10 are getting a little older, 06:11 church is not as enticing to 06:13 them as it was to me and, 06:15 you know, we started going to 06:17 all-age clubs, boys started 06:19 getting in the picture, 06:21 friends would go away for a 06:22 weekend and they're like, 06:23 "You know, we could raid the" 06:24 "alcohol cabinet." 06:25 I'm like, "OK, let's try!" 06:28 You know, so I had a few 06:30 situations, incidents of, 06:33 you know, binge drinking and 06:35 then we'd pull out-- somebody 06:36 found some pack of cigarettes 06:38 and so I'd smoke a whole pack 06:39 in a day and both my parents 06:41 at the time were smokers so I 06:43 knew how to smoke really well 06:44 just from watching them. 06:46 But, you know, my conscience, 06:49 the Holy Spirit was speaking 06:50 to me through all of this and 06:53 I distinctly remember a night, 06:54 I was in the club and the 06:57 music was playing and the guys 06:59 were there and we were dancing 07:01 and all I could hear in my 07:02 head was hymns. 07:04 And I'm just like, 07:05 "I don't wanna be here." 07:06 "I just don't wanna be here." 07:08 And I remember calling my mom, 07:09 God bless her, you could call 07:10 her at any time. 07:11 She knew I was at the club, 07:13 she'd let us do things like 07:14 that if that's what we wanted, 07:15 I said, "Mommy, I want you" 07:16 "to come and pick me up." 07:17 She's like, "Where are you?" 07:18 I'm like, "I'm all the way" 07:20 "downtown on Spadina" 07:21 "and something." 07:22 One o'clock in the morning, 07:23 she pulls up in front of the 07:24 club and I get in the car. 07:25 She's like, 07:26 "Is something wrong?" 07:27 I'm like, "I don't think" 07:28 "Jesus wants me to be here." 07:29 You know? 07:30 So that was-- that began for 07:33 me, just a pulling away, God 07:36 calling me saying, you know, 07:37 "There's something" 07:38 "better for you." 07:39 [Mike & Rene] Mm-hmm. 07:40 >> So you had a very 07:40 sensitive conscience... 07:41 [Carolyn] Mm-hmm! 07:42 >> And then God was leading 07:45 you further into deeper, what 07:47 you call a true conversion. 07:48 >> Yes! 07:49 [Mike] What did that 07:49 look like? 07:50 >> So...you know, I wouldn't 07:53 say I never went back to clubs 07:54 or with friends, but it was-- 07:56 I was starting to pull away a 07:57 little bit because the Holy 07:59 Spirit was speaking to me. 08:01 And I remember one Sunday 08:02 morning after another clubbing 08:04 night, I was just really tired 08:07 of it and I remember walking 08:08 to church and I was just 08:09 holding my Bible so tightly 08:11 and I said, you know, "God," 08:12 it was Easter Sunday and I 08:14 said, "Lord, if I could" 08:15 "just-- if You could just" 08:16 "lead me to truth..." 08:17 Because at home there was 08:19 confusion with religion. 08:21 My parents didn't tell me to 08:22 go to church, my dad is a 08:24 different religion than my 08:24 mom, my friends all have 08:26 different religions. 08:27 And I said, "Lord, if You" 08:28 "could just lead me to truth" 08:30 "I will never leave You." 08:31 "I will follow it." 08:33 So that Sunday morning I sat 08:35 in church near the back pew as 08:37 usual and I'm listening to my 08:39 pastor talk, telling us to 08:41 turn to John 20, verse 1. 08:44 And if I could backtrack a 08:46 little bit, one of the friends 08:47 I was going to clubs with all 08:49 the time, wouldn't come with 08:50 us anymore on Friday nights 08:52 'cause she would say, 08:53 you know, "That's the Sabbath" 08:55 "and I'll go Saturday night," 08:56 "but not Friday night." 08:57 And then when I would tell her 08:58 about what I was doing at 08:59 church, she would always say, 09:01 "You know you're going on" 09:01 "the wrong day." 09:02 And I would say, "At least" 09:03 "I'm going to church!" 09:04 "You could worship Jesus" 09:05 "any day!" 09:07 So anyway, so that was also 09:09 playing with my mind and as I 09:11 sat there and he read from 09:12 John chapter 20, verse 1 and 09:14 in his Bible he said, 09:15 "On Sunday morning when Mary" 09:16 "Magdaline went to the tomb." 09:18 And in my Bible it said, 09:20 "On the first day of the week" 09:21 "Mary Magdalene went" 09:22 "to the tomb." 09:23 And honestly, I don't remember 09:24 anything else he said after 09:26 that, all I could feel was the 09:28 Holy Spirit saying, you know, 09:30 "Sunday's the first day of" 09:31 "the week, Carolyn, not the" 09:32 "seventh." 09:33 So as soon as service 09:35 finished, I went to talk to 09:36 the pastor, and I said, 09:38 "You know, I'm a little" 09:39 "confused." 09:39 "Why are we going to church" 09:40 "on the first day when" 09:42 "Saturday is the Sabbath." 09:43 "Aren't we supposed to be" 09:44 "keeping the commandments" 09:45 "of God?" 09:46 And he proceeded to tell me 09:49 that we're here to worship 09:50 the resurrection now, 09:51 not the Sabbath. 09:53 He said, "But, Carolyn, this" 09:54 "is all too much information." 09:55 "There's a lot of people that" 09:56 "I want to talk to." 09:56 "Why don't you come" 09:57 "Wednesday after school?" 09:58 So I did and he opened up to 10:01 me that, you know, a long time 10:03 ago Emperor Constantine had 10:05 changed some things so instead 10:07 of Sabbath they were worship-- 10:09 they were celebrating the 10:10 resurrection and I was blown 10:12 away that-- 10:13 I said, "Pastor, can you show" 10:15 "me in the Bible then where" 10:16 "it says man can change the" 10:18 "laws of God?" 10:19 He said, "Well, it's not" 10:20 "really changing the" 10:21 "laws of God." 10:22 I said, "Then why aren't we" 10:23 "keeping the true Sabbath?" 10:24 And he says, "Well, Carolyn," 10:25 "you know, maybe that's" 10:26 "something between you and" 10:27 "God that you have to" 10:28 "figure out." 10:29 And I went to the library 10:31 because we'd to go to 10:32 libraries then, not the 10:33 internet to find information, 10:35 and there it was in history 10:37 books, this whole history of 10:40 Emperor Constantine and how so 10:42 many things came to pass and I 10:45 went to my friend at school 10:46 and I said, "You know what?" 10:48 "Bring me to your church." 10:48 "I wanna see what a" 10:50 "Sabbath-keeping church" 10:51 "is like." 10:52 And I had told my pastor at my 10:53 Sunday church that, 10:55 "I need to find a Christian" 10:55 "church that keeps the" 10:56 "true Sabbath." 10:58 And it was shortly after that 11:00 that she started bringing me 11:01 to her church, that there was 11:03 an evangelistic series going 11:04 on at church and all I was 11:07 seeing was truth after truth 11:09 after truth and when I'd ask a 11:12 question to the pastors it 11:14 wasn't their opinion or what 11:15 history told them, they would 11:17 show me in the Word of God. 11:19 And that to me was just-- 11:20 that this-- that was my answer 11:23 to prayer and this is where 11:24 God needed me to be. 11:26 >> Wow, so, Carolyn, now you, 11:29 after learning all this you 11:31 are really on fire for the 11:33 Lord, it sounds like it, 11:35 and with your experience. 11:36 So how did this lead 11:37 to marriage? 11:39 >> Mmm, so of course I still 11:41 had, you know, I'm always 11:44 sorry that I ever had any 11:46 experience of clubbing or 11:48 smoking or drinking because 11:50 those things do stay in you, 11:52 you know, and to some degree 11:55 it was just sort of hard to 11:56 get away from this, 11:58 my husband's not gonna like 11:59 this, but this rude-boy 12:00 mentality, you know? 12:02 That's what I was growing up 12:03 with is that, you know, all 12:04 our girlfriends were just 12:06 like, "We like the rude boys." 12:07 And so I became attracted to 12:09 this rude-boy looking guy who, 12:12 God bless him today, he's the 12:13 most gentle soul, but... 12:15 [laughter] 12:16 So, you know, I start dating. 12:18 I didn't date a lot, you know, 12:20 I always had my commitment to 12:22 God about keeping pure in 12:24 relationships so not a lot of 12:26 guys wanted to stay around 12:28 very long with me. 12:29 But, you know, I'm about 12:31 nineteen years old and I 12:32 start-- I was working at 12:34 McDonalds for probably a good 12:35 six years of my life, since I 12:37 was thirteen, and he'd come in 12:38 every day to get 12:39 his boss coffees. 12:40 And just for a year we kinda 12:41 looked at each other and then 12:43 finally, I mean the attraction 12:45 was so much there that one day 12:46 we exchanged numbers and we 12:48 went on a few dates. 12:50 He was such a rude boy and we 12:52 had, honestly, this could be 12:55 another episode for another 12:57 time, but had such a rough 12:59 dating and courting 13:00 experience. 13:01 We both have no idea who we 13:03 ended up married. 13:04 I mean, there was so much 13:05 fighting, there were so many 13:06 arguments, there was so much, 13:09 you know, we knew we were 13:10 attracted to each other, 13:11 but I'm not sure it went 13:13 past that. 13:15 But God was really speaking to 13:19 me, crazy enough. 13:20 I mean, I would get 13:21 phone calls, "Don't marry" 13:22 "this guy!" 13:23 "You're on fire for the Lord," 13:24 "what are you doing with" 13:25 "this guy?" 13:27 But I had some refining to do 13:28 and I tell you He brought us 13:30 both together because we both 13:32 needed some changing. 13:33 So I ended up marrying this 13:35 good-looking rude boy and life 13:38 wasn't easy for a long time. 13:41 But I tell you, that really 13:43 became my most refining 13:46 moments was in my first few 13:47 years of marriage. 13:49 >> So you went through quite a 13:51 number of experiences, what 13:53 brought you to the place where 13:55 you wanted to go into 13:56 nutrition as a profession? 13:58 >> Yeah, so that's a great 14:00 question because since I 14:01 changed my diet, as I 14:02 mentioned, when I came into 14:04 the church, I was about 14:05 sixteen, seventeen years old 14:06 when I was baptized, and it 14:08 was at that time that 14:10 Dr. Thomas Jackson came up to 14:13 our church. 14:14 So he's a natural doctor, 14:16 PhD doctor, but practices the 14:18 laws of health and he came and 14:19 explained them to the 14:20 congregation. 14:22 And when I heard this, I'm new 14:23 in the church, I'm like, 14:24 "Boy, Lord, You are giving" 14:25 "me so much truth!" 14:26 "No more cupcakes and" 14:28 "pork rinds and," you know, 14:29 "white bread? What?" 14:30 He said, "The whiter the" 14:31 "bread, the quicker" 14:32 "you're dead," I'll never 14:33 forget that. [laughs] 14:34 And so from there, I just 14:36 changed my diet. 14:38 I'm just-- I came home and I 14:39 told my parents, 14:40 "I'm never eating meat again." 14:41 And my father, you know, 14:42 Palestinian, he said, 14:43 "You're gonna die." 14:44 "You can't not eat meat!" 14:46 But then, you know, and it 14:48 was, I would say, by the time 14:50 I was 22, 23, I'm just like, 14:53 "Hey, I haven't been sick" 14:54 "for a while." 14:55 "I haven't had a stomachache" 14:56 "or a headache." 14:57 And I was just, I was so 14:59 convinced that it was just the 15:00 way I changed my diet and so 15:03 once I got married, so now I'm 15:04 in my-- I've got my own 15:06 platform here, I've got my 15:07 own opportunity. 15:09 I got pregnant pretty quickly 15:11 so, you know, raising children 15:13 I thought, "Here I am with" 15:14 "this opportunity." 15:15 "I've learned truth from" 15:16 "the Lord, I've learned truth" 15:18 "from the health message," 15:19 "I'm gonna apply it to" 15:21 "everybody's life because," 15:23 you know, "they don't need to" 15:24 "go through those" 15:24 "stomachaches and headaches" 15:25 "and swollen glands." 15:27 So I began to try it out 15:29 on my family. 15:30 They never took 15:31 over-the-counter medication 15:33 or medication of any sort and 15:37 I just became so passionate 15:38 about it that people that I 15:40 met, I just wanted to share 15:43 truth, I've always 15:44 loved truth. 15:45 [Mike] So when you're talking 15:46 about your family, you're 15:46 talking about your children. 15:47 [Carolyn] Yes. 15:48 [Mike] So your children were 15:49 so healthy because you just 15:51 got them to eat this way... 15:53 [Carolyn] That's right, I just 15:53 got them to eat this way. 15:54 [Mike] And to live this way. 15:55 [Carolyn] Yeah, I mean, 15:56 it took my husband a 15:57 little while. 15:58 He's been ten years completely 16:00 eating on the eight laws of 16:01 health so it took-- it was a 16:03 little bit of tug-of-war, but 16:05 I mean our entire family at 16:07 one point was completely 16:08 eating by the laws of health, 16:10 but because I saw the change 16:11 in me and everybody I shared 16:13 it with, I knew, like I was 16:15 just so passionate about our 16:17 body being the temple and how 16:18 this transformed me that I 16:20 knew this was just something I 16:22 really somehow wanted to share 16:24 with the world. 16:25 I just-- I wasn't sure how 16:26 that was gonna be. 16:27 [Mike] Mm-hmm. 16:28 So, Carolyn, a big topic for 16:30 me, something I really enjoy 16:31 is nutrition, but before you 16:33 talk more about nutrition 16:34 we're gonna join Bev in the 16:36 kitchen and she's going to 16:37 share with us a very 16:38 delicious recipe. 16:40 >> Bev is gonna make for us a 16:42 totally plant-based recipe 16:45 called, "Fresh Marinara Sauce" 16:47 "and Zucchini Noodles." 16:48 Take a look at this. 16:52 >> Hi, everyone, I'm Bev and 16:55 today we're experiencing life 16:57 in the kitchen. 16:58 If you love pastas and pasta 17:01 sauces, but are a little bit 17:02 afraid of the calories that 17:04 can accumulate, you're gonna 17:06 be happy about today's recipe. 17:08 I'm gonna be making a fresh 17:10 marinara sauce and by "fresh" 17:12 I mean raw and fresh 17:15 zucchini noodles. 17:16 So let's talk about 17:17 the ingredients. 17:19 First of all, we're gonna be 17:20 using four smallish-medium 17:23 sized Roma tomatoes and then 17:26 as well we're gonna be using 17:27 some bell pepper and then one 17:31 of my favourites, we've got 17:33 garlic, fresh garlic. 17:36 As well, we're gonna be using 17:38 some fresh basil, we're gonna 17:40 be using some other spices 17:42 like dried basil and some 17:44 Italian herbs, cayenne pepper, 17:47 chili flakes, garlic powder, 17:49 onion powder, some "Nooch" 17:51 which is nutritional yeast, 17:53 and some salt and we've got 17:56 sun-dried tomatoes as well. 17:59 And we've got about a cup of 18:00 these, we've softened them by 18:03 soaking them in some hot water 18:04 for a little bit just to make 18:05 them nice and tender for when 18:07 we put them in the food 18:08 processor and then we've 18:10 drained it. 18:11 So that's gonna be the base of 18:14 our fresh marinara sauce and 18:17 then I'm gonna put this aside 18:18 and we'll work on the 18:20 zucchini noodles. 18:21 And I'll introduce you to one 18:23 of my favourite toys in the 18:25 kitchen, but first, let's get 18:27 the sauce happening. 18:28 So that's one large red bell 18:32 pepper and then we're gonna 18:34 put in our tomato and I'm 18:38 gonna put the fresh basil in 18:40 towards the end. 18:43 I'm gonna put the garlic in 18:46 and we're gonna put in 18:49 our sun-dried tomato. 18:52 And I'm gonna start the 18:53 process off by just having 18:55 those things so I can get them 18:57 going and then then I'll add 18:59 the salt and the spices 19:00 and the oil. 19:02 So let's get this going. 19:04 [processor whirring] 19:12 We don't want it puréed. 19:14 We still wanna have some nice 19:15 chunks in there. 19:17 So let me put in now, I've got 19:19 about a quarter teaspoon of 19:21 chili flakes and just a dash 19:23 of cayenne. 19:24 You know when you're using 19:25 cayenne you don't have to use 19:27 a lot, it can be overpowering. 19:29 And then I'm putting in three 19:31 quarters of a teaspoon of 19:33 Himalayan salt, 19:35 putting in one to two 19:39 tablespoons of the nutritional 19:41 yeast, putting in two 19:45 teaspoons of garlic powder and 19:47 then instead of using fresh 19:49 onion for this, we're gonna 19:50 use the onion powder. 19:52 So two teaspoons of 19:54 onion powder. 19:55 We've got our Italian 19:57 seasoning here and our basil. 20:02 So that's about one tablespoon 20:04 of the dried basil 20:07 and two teaspoons of the 20:09 Italian seasoning. 20:11 Whip that a bit, hold on... 20:13 [processor whirring] 20:19 Doesn't take long. 20:20 And now I'm gonna add in 20:22 the fresh basil. 20:26 'Cause we still want it to be 20:27 nice and fragrant 20:29 when you eat this. 20:31 OK, we've got that and the 20:33 oil, I do have an eighth of a 20:35 cup of olive oil and I'm going 20:38 to add that in slowly through 20:42 the top of the processor. 20:43 So here we go. 20:44 [processor whirring] 20:50 And voila, it's done. 20:53 Look at that, fresh pasta 20:56 sauce ready to go. 21:00 And it smells heavenly. 21:02 So now let's make our 21:04 zucchini noodles. 21:06 Start with a good-sized 21:07 piece of zucchini. 21:09 There's different types of 21:11 spiralizers you can find. 21:13 Here's what I'm gonna 21:14 do with it. 21:16 I'm gonna position my zucchini 21:18 in the middle. 21:19 I'm just going to do this 21:23 and hold on, you're gonna see 21:24 zucchini noodles coming out. 21:31 Look at this, 21:33 fresh zucchini noodles! 21:36 And now I'm going to put on 21:37 the marinara sauce that we 21:39 just finished making and we're 21:41 gonna put it on our pasta. 21:43 And now, have any parmesan on 21:46 hand, any cashew parmesan 21:48 on hand. 21:49 And so now you have got 21:52 a fantastic take on the 21:54 traditional pasta 21:57 and marinara sauce. 21:59 And look at that, beautiful! 22:02 Hardly any calories, chock 22:04 full of vitamins, minerals, 22:07 all kinds of nutrition. 22:09 So do your body a favour, 22:12 your much better to palate 22:49 than actual pasta noodles, but 22:52 that was so delicious, 22:54 I could eat it now. 22:54 >> Oh, it tasted so good. 22:56 I ate that recipe, so did 22:57 René, it was really good, 22:59 very nutritious. 23:00 [Carolyn] I bet, I bet! 23:01 So just, I mean and just 23:03 looking at that recipe, that's 23:04 basically what I was growing 23:06 my family up on, what I was 23:07 making for everybody and I 23:09 just-- when the time came I 23:11 had a very cushy sales job, 23:12 but my desire and passion was 23:14 for nutrition and when the 23:16 opportunity came up, I went 23:19 back to school part-time while 23:21 working full-time and being a 23:22 mom and that's really when my 23:25 career in nutrition started to 23:27 take off is once I graduated. 23:29 >> Wow, that's wonderful! 23:31 So, Carolyn, tell us when and 23:32 how the Energy Shack 23:35 came to be. 23:36 >> Well, so really quickly is 23:38 that after I finished school, 23:39 I started to just, through my 23:42 case studies, started to work 23:43 with people, ensuring the 23:45 eight laws of health, getting 23:46 them off their medication, it 23:47 was just, I mean, I wouldn't 23:49 get them off, but they'd have 23:50 to come off because their life 23:51 was changing and I worked 23:53 with, from All Dunamis, 23:55 Dr. Higgins who had a 23:56 chiropractic doctor-- who is a 23:58 chiropractic doctor and I was 23:59 working with nutrition 24:00 with her clients. 24:01 And one day, as she was 24:03 growing out of her Scarborough 24:05 facility, she said, 24:06 "Carolyn, I want you to come" 24:07 "look at this new facility" 24:09 "that we are going to open" 24:11 "up, maybe you wanna put a" 24:12 "little juice bar in our gym." 24:14 So my husband and I came to 24:15 look at this plaza and he 24:18 said, "Carolyn," 24:19 "you know what," 24:20 "we're not gonna put a little" 24:21 "juice bar in the gym." 24:22 "If we're gonna do this," 24:23 "we're taking over" 24:24 "a whole unit." 24:25 And we basically had less than 24:27 four months to get the 24:28 Energy Shack that we didn't 24:29 even know would exist, 24:31 recipes, everything together 24:34 so that we could be open in 24:35 less than four months, 24:36 it was incredible. 24:37 >> How did that affect 24:38 your family? 24:40 How did it affect your life, 24:41 opening up a whole restaurant? 24:43 >> Yeah, so in the beginning, 24:45 my husband worked full-time 24:47 for the first eight months, 24:48 he took some time off work, 24:50 but, you know, he's not a 24:51 nutritionist and I was working 24:54 very full-time and we were 24:56 dependent on my income, 24:58 but there just came a time, 24:59 I was always home with my 25:01 kids, understand, I always 25:02 worked from home. 25:03 They always saw Mommy morning 25:05 and evening and afternoon. 25:07 And in November of 2016 I had 25:09 to go to the Energy Shack and 25:11 work full time and my family 25:14 almost never saw me again, 25:15 but I gotta tell you, 25:17 it was the best thing that 25:18 happened to everybody. 25:19 [Mike] Why was that? 25:20 >> Because I think for so long 25:22 I was everybody's Holy Spirit 25:24 at home and as I pulled away, 25:27 everybody worked out their own 25:28 salvation and got to know God 25:30 for themselves without Mommy 25:32 telling them, "You have to" 25:33 "say sorry now!" 25:34 So it was really wonderful and 25:36 I just began this incredible 25:37 prayer for my family 25:38 in the background. 25:39 My husband stepped up, my kids 25:41 got more bonded with him, 25:42 it really wasn't just 25:43 beautiful for the Energy Shack 25:44 and what we're doing in the 25:45 community, but it really 25:46 actually blessed my family. 25:48 >> Aww, well, Carolyn, we need 25:51 to have you back
