00:29 and today I'm gonna show you that
00:31 one healthy food can taste great
00:34 and two that kids can cook awesome meals.
00:38 Speaking about, we have too wonderful guests with us today,
00:41 we have Amari and Shai from Georgia.
00:44 Welcome to Cook:30 for Kids.
00:46 Thank you.
00:47 So we're gonna need to know these guys
00:49 a bit before we start cooking.
00:50 So firstly, Amari, tell us some, how old are you?
00:53 Nine.
00:54 Nine years old and what's your favorite food?
00:57 Lasagna. Lasagna.
00:58 Have you tried cooking lasagna at home before?
01:01 No, not really.
01:02 Ah, we're gonna make a cook out of you today, that's for sure.
01:05 And welcome Shai, and how old are you?
01:07 I am 12 years old.
01:09 Twelve years old, and what's your favorite food?
01:11 My favorite food is veggie pomegranate chicken
01:14 with jasmine rice and asparagus.
01:16 Wow! That sounds very chefy, doesn't it?
01:17 Yeah.
01:19 And do you want to be a chef when you grow up?
01:20 Yes. Look at that, excellent.
01:23 Chefing is a very, very fun occupation.
01:25 So, welcome to Cook:30 for Kids.
01:27 So, what is on the menu today?
01:30 Macadamia and cranberry toasted granola
01:34 with homemade almond milk.
01:35 And wild berries with maple yogurt.
01:39 Hmm, that sounds so delicious.
01:42 So, to get started with cooking,
01:44 we wanna make sure we start with a really clear bench.
01:47 We got all our ingredients out.
01:49 We got a chopping board, we got our blender ready.
01:52 We got the oven turned on.
01:54 We got boiling water in the jug.
01:55 All these little things
01:57 that you start beforehand a couple of minutes
01:58 getting set up can save you 10 or 20 minutes later
02:02 when you're cooking, so take the time
02:04 when you begin to set up really well.
02:06 And there's one thing that's really important in cafe
02:08 and restaurant land is called prep,
02:10 so the more set up and planning you can do, the better.
02:12 So today, we're cooking a breakfast.
02:15 So, we're going to be doing stuff
02:16 you would normally find in the supermarket.
02:18 And this stuff where you normally find
02:19 with lots and lots preservatives and sugar
02:21 and really bad stuff.
02:22 So we're doing a toasted muesli,
02:24 so you can buy cereal in packets full of sugar.
02:26 We're gonna show you how to make a healthy one
02:28 and we've got a yogurt.
02:30 We've got a very nice yogurt made of tofu of all things
02:33 that tastes really yummy, believe it or not,
02:35 and our own homemade almond milk,
02:38 so this is a really great breakfast combination
02:40 and once you learnt to make these,
02:42 they're just so, so, easy
02:43 and you really enjoy making them.
02:45 So let's get started.
02:47 So the first thing you wanna start with the thing
02:48 that's gonna take the longest and that is the almonds.
02:50 So we're gonna actually soak the almonds,
02:52 we got some boiling water here.
02:54 So if you can grab some almonds behind the blender there.
02:58 So if you can measure up one cup of almonds.
03:01 And we're gonna soak these in boiling water
03:02 for probably about 10 minutes before we make the almond milk
03:05 and this will just help soften them up.
03:07 So when we blend the milk, it becomes nice, and creamy,
03:10 and smooth.
03:12 And by using boiling water or hot water,
03:15 that speeds up the process.
03:16 When usually something goes colder
03:18 that kind of moisture transfer happen slower.
03:20 The hotter the water it is, the faster it happens.
03:23 So yeah, pour those in there.
03:24 Be careful it's boiling,
03:25 so don't want to get burn on here,
03:27 so we'll just move it out the way.
03:28 So we'll come back to that
03:30 in probably about 10 or so minutes
03:31 and that will be little bit more softer
03:33 and help us make a creamier almond milk.
03:35 Do you guys like almond milk?
03:37 Yes, we drink a lot of almond milk at home.
03:39 Oh, really.
03:40 You make it yourself or buy it from the supermarket?
03:42 I wanted to make it myself.
03:44 I really wanted to make almond milk myself
03:46 but we usually buy it from a supermarket.
03:49 Exactly, it's much more convenient
03:51 buying from supermarket,
03:52 but when you see how easy this is,
03:53 you wanna make it yourself all the time.
03:55 And it works out, probably about half the price as well
03:57 making yourself so it's cheaper and better for you.
04:00 Okay, so that's underway.
04:02 So we're now gonna make a granola.
04:04 So granola when we use it
04:05 is a really great healthy breakfast to start with.
04:08 So we're gonna start with all these yummy ingredients here.
04:11 So we're gonna start with some oats.
04:13 Now, we gonna use two types of oats today,
04:15 so if you guys can see here on the camera,
04:17 but basically we have whole oats here
04:20 and we have cut oats.
04:22 So this old fashioned whole ones
04:25 and these are called quick one minute oats.
04:28 And the difference between these oats,
04:30 they're exactly the same thing but one is just cut finer
04:33 and in that granola we're gonna use the two different types
04:36 so just gives us more of a interesting texture.
04:37 You've got the big bits, little bit of crunch
04:39 and a little bit just kind of just blend out
04:41 the granola very nicely.
04:43 So, if you can measure out, Amari, two cup,
04:47 one cup of each.
04:48 So use this cup measure,
04:50 and measure one cup and put on this tray here.
04:52 I'm gonna mix everything into this tray here,
04:55 we're gonna be roasting them.
04:56 Awesome keep pouring, do a nice cup measure.
04:59 So when you're measuring, you wanna make sure
05:00 if you can to make sure
05:01 it's effectively the level of the top there.
05:04 It's looking good, a little bit more.
05:07 Getting most of it in there is the main thing.
05:09 And don't be afraid to make a mess when you're cooking it.
05:11 It's really fun when you're in the kitchen,
05:12 food going everywhere that's a part of cooking,
05:14 so put that in the pan there.
05:16 Oh, just dump it in there
05:18 and then do one cup of the big oats as well.
05:21 So we gonna start measuring stuff in,
05:23 so we've got some buckwheat that has a amazing crunch
05:25 so try if you can measure half a cup of a buckwheat.
05:29 And it's great, got the oats there
05:33 and we got to put in...
05:35 Cool, wonderful, get this out of the way,
05:40 and we're gonna put in some sesame seeds,
05:43 so if you can measure in
05:44 the quarter of a cup of sesame seeds.
05:46 I'll get some measure so you can measure them accurately.
05:50 So why do we use two different oats?
05:52 It does make the texture more interesting and variant.
05:55 So if you are having one of the oats,
05:56 that's absolutely fine
05:57 but it just keeps it interesting.
05:59 You can measure in quarter cup of sesame seeds,
06:01 and if you can put your half cup.
06:04 Just make sure, you can use a full cup
06:06 and just measure, fill it up half way.
06:09 So we're gonna measure these in, wonderful.
06:11 What else we got? Some coconut.
06:14 So shredded coconut, we need coconut,
06:16 you wanna buy the stuff that's kind of as you can say,
06:19 it's kind of a long and kind of shredded.
06:22 You can't get coconut that's kind of really fine
06:24 so it's much nicer if you can get the longer stuff,
06:27 that kind of works better in the tray.
06:30 And then just a nice mouth texture,
06:32 but again if you only got the fine stuff that will fine.
06:35 So we're gonna put in quarter of a cup of that as well,
06:37 I'm gonna just sprinkle it in.
06:39 So do I just pour this in?
06:40 Pour it in. Yep, just pour it in.
06:42 And pour that one as well.
06:44 And the main feature ingredient,
06:45 this one is macadamias,
06:47 so we got some macadamia pieces here.
06:49 And this are slightly more expensive,
06:50 so you can start to chose cashew nuts if you want,
06:53 so you just gonna, you can pour those in there.
06:54 You put the macadamia pieces,
06:56 and macadamias are really nice creamy nuts.
06:58 I'll just put it straight in there,
06:59 we'll just use a whole packet,
07:00 since it's probably round about half a cup or more.
07:03 The whole packet? Yeah, put all in.
07:05 Put in some sliced almonds,
07:07 so if you can put packet of sliced almonds in,
07:09 it's about half a cup each.
07:11 Sesame seeds, these ingredients flying everywhere that's fried.
07:15 And we got some...
07:18 Now the fruit we gonna put in later.
07:19 So we've got some nuts,
07:21 you can measure out half a cup of that.
07:24 You got a quarter cup, you gonna need two of those.
07:26 So two quarter cups equals one half cup so two.
07:28 Should I scoop it up? Yep, scoop up two of those.
07:31 Okay. Put it in? Yep.
07:35 That's great, and you can be very fixed.
07:37 Whatever your favorite fruits or nuts
07:39 you had or seeds is great.
07:43 You're getting it through there.
07:45 Our oats.
07:46 Okay, you gonna push. I'll help you like that.
07:48 So basically you wanna, see if you can stab and do that.
07:51 Oh, wow!
07:53 Those few sticks, you can put those ones in as well.
07:55 Okay. The whole thing?
07:56 Yeah, pop the whole thing. Oh, wow.
07:57 And we're using slivered sliced almonds
08:00 because they are a much nicer,
08:04 bit more interesting in texture,
08:05 so you probably have about 20 of these makes up
08:07 one whole almond.
08:08 See, you better off having like
08:10 20 little slivers than one big almond.
08:12 This makes it more exciting.
08:13 Oh, wow.
08:15 So let me check my recipe, wanna get this right.
08:17 So we're gonna put in four tablespoons of oil
08:21 which is actually quarter of a cup.
08:22 So if you can measure in quarter of a cup of oil Shai.
08:27 And I'll get you to measure in some,
08:29 we gonna put some sweetening in as well.
08:31 We want some honey, so same again,
08:34 we want to measure in some honey.
08:36 So just pour over the granola if you can measure in.
08:43 Lovely.
08:45 So why do we use olive oil? You can measure it.
08:48 Use any oil you want really.
08:50 So, Amari, you can just squeeze it in,
08:52 so you got quarter of a cup.
08:53 I mean, you can use any oil you want
08:55 but the oil just helps it to not to burn
08:57 and gives it kind of flavor as well.
09:00 Keep squeezing, squeeze hard, squeeze hard.
09:02 Getting there, keep going, keep going, keep going.
09:05 Getting there, nearly there.
09:07 Keep going.
09:09 Nearly there, squeeze, squeeze, squeeze, squeeze.
09:11 Making little twirls.
09:12 It does make twirls, doesn't it?
09:15 Great, and you can pour it over there as well.
09:18 So that's all the ingredients.
09:20 So we got fruit, we gonna add the fruit
09:21 after we cook it or else the fruit kind of burns.
09:23 Lovely.
09:25 And we gonna put some honey now.
09:28 Cool.
09:29 You can scrap it out with your finger.
09:31 Scrap it out.
09:33 If you can mix up with your hands
09:35 and give it a bit of a stir,
09:36 put your hands in and got to mix up.
09:37 My hands?
09:39 Yep, get your hands dirty, they are lovely. Really?
09:41 Yep, and nuts all around go, go, you get honey all over it.
09:45 Make sure it's mixed really well.
09:48 Lovely, look at that, squeeze it together.
09:50 It hasn't been mixed properly.
09:53 This is so messy.
09:55 It is, yep, keep going.
09:58 Try to keep most of it in the tray.
10:00 It's quite exciting.
10:02 So this is how easy it is to make your own granola,
10:04 and this how the make it all in the cereal factories,
10:06 except they add tons and tons and tons of sugar
10:09 and stuff as well and preservative.
10:10 So you're missing some here, mix them well.
10:12 Get the corners in,
10:13 mix it through so it's all evenly coated.
10:15 There's some more here, excellent.
10:17 Don't just massage it, keep mixing it as well.
10:19 Push it all around.
10:21 And lay it out so it kind of stir it around,
10:23 so kind of it's evenly on the tray.
10:25 So kind of distribute it so it's nice and even.
10:28 So can you make granola bars like this too?
10:31 Yes, but basically we just probably add more honey
10:32 and press them together more
10:34 so, that's pretty much how you make them.
10:36 Oh, my hands.
10:37 So spread it out so it's even,
10:38 so spread it out so it's on all the areas of the tray
10:40 so it's gonna get cooked evenly.
10:42 That's cool.
10:44 So we mixed in there, we're spreading it out.
10:46 There you go, how easy is that?
10:48 That is very easy.
10:49 So you can make your own cereal at home.
10:51 Yep, that's right.
10:52 And it will probably work out.
10:54 It hasn't cost this one, anything work at half the cost
10:56 if you make them at home
10:57 and it's gonna be much, much, healthier.
11:00 You guys wash your hands, I'm gonna put it in the oven.
11:02 It's great. Okay. So there we go.
11:04 Pop in the oven.
11:06 It will probably take round for about 15 minute.
11:09 Looks like that's pretty warm.
11:11 And that will come out really nice and toasty.
11:14 So we've made excellent start.
11:16 So now we're gonna move on to the almond milk.
11:19 Ready to make almond milk, guys?
11:20 Yes.
11:22 So we're gonna use our trusted friend,
11:23 the blender here and this will really help
11:27 so you can get food processors
11:28 which are more for mixing kind of solid things,
11:30 but a blender or liquidizer like this
11:32 with a blade like this is really good for making milks
11:35 and anything that's liquid.
11:37 Okay. Okay.
11:38 So get those, if you wanna stray...
11:40 Grab the almonds there, Shai.
11:43 And we'll just sever through a sieve.
11:46 Kind of just take, go over here,
11:48 you can hold that, go over to the sink
11:49 and we'll just drain the water out.
11:51 Now it's still pretty hot so be careful.
11:53 Don't kind of, it won't be boiling now,
11:55 but it'll be still hot so pour it through here.
11:58 Lovely.
12:00 Get into them there and come and put it in the blender.
12:03 Okay. No, over here.
12:06 Put it in the blender.
12:09 That's cool.
12:10 Yep, just empty it in, tip it in.
12:12 You're going well there.
12:14 So in the kitchen it's really important
12:16 to use these little skills
12:17 and after while your brain kind of get to know
12:19 how to do these things, so it's brilliant.
12:21 So next ingredient we're gonna add,
12:23 just a touch of salt, so just a little sprinkle
12:26 and a little bit of salt
12:27 just helps it to taste like milk really.
12:30 And we're gonna add some water,
12:32 so if you can get one liter of water.
12:36 So it should be our cups,
12:37 so that should be up to this level here.
12:39 I'm pretty sure it's four cups.
12:43 And then we will blend that.
12:44 We gonna add some, a bit of sweetness,
12:45 so we're gonna add some honey.
12:47 Where's the honey?
12:49 Can you squeeze a bit of honey in there?
12:50 There you go.
12:51 You're the honey expert now.
12:53 There's not much in there, hope it's gonna come through.
12:55 So want about a tablespoon of honey,
12:58 and again you're gonna adjust this recipe to your preference.
13:00 Once you made it a few times,
13:01 you can make it slightly sweeter
13:03 or slightly less sweet.
13:06 Yep, there's probably little bit more,
13:07 keep squeezing.
13:08 Yeah, there we go.
13:10 Awesome, pour water in.
13:12 So can you do this with like cashews and rice?
13:16 Yes, it's very exact that any milk you buy
13:18 at the supermarket, you can make this way.
13:20 Put cashews in, you can put even coconut.
13:23 You can actually make your milk just putting this coconut here
13:26 in the blender with water
13:27 and you got your own coconut milk.
13:29 Oh, wow.
13:30 So we're gonna blend it.
13:31 It's gonna make a bit of a noise.
13:33 You ready? Yes. You gonna push the button here.
13:34 Amari, push high.
13:36 Ready, set, go, oh-oh.
13:38 That will blend away.
13:40 It might take about a minute to get to go,
13:43 but then you get creamy almond milk
13:45 and 'cause we soaked,
13:46 it's gonna make it easier to blend.
13:50 Looking good.
13:51 And that's as simple as it is.
13:53 Look at that. Just keep on going.
13:56 I think that might nearly be done.
13:57 Push the stop button there.
14:00 Yep, push the stop.
14:01 Just lift it off and see what it looks like.
14:04 How easy is that? Exactly.
14:06 Look at that, nice and creamy. Oh, wow.
14:08 So what we'll do, we'll just wanna serve it
14:10 'cause you got all those almonds shell on it.
14:12 You can buy almonds with the blanch
14:14 but don't have the shell.
14:15 But we're gonna just serve it through here
14:16 to get rid of the shell.
14:18 So if you want to pour that in there.
14:19 Okay.
14:20 And we'll just sever through a sieve
14:22 just to get those little almond flakes out.
14:23 You can leave it if you want to, but it's much nicer
14:28 if you kind of have little bit of clean milk.
14:30 Keep pouring. Yep, that's great.

14:36 So here, there you go, and any nut you want, so yep.
14:41 We'll get a spoon and we'll just...
14:43 What you can do, you can just help it
14:45 kind of get through the spoon 'cause you can see the almonds.
14:48 The almond meal is, kind of,
14:50 blocking off the holes there of a sieve.
14:54 You go.
14:55 Now, you can actually use that almonds...
14:57 See here, this is almond meal
14:59 and all of that would actually really good for baking
15:01 and so you can actually reserve that
15:02 and use for something later.
15:04 Just put there.
15:05 And you can...
15:07 Want to pour it again, pour some milk in.
15:13 Stir it around, and eventually come out like that.
15:15 Look at that, it's very nice and creamy.
15:17 Oh, wow!
15:18 Put more water or less nuts
15:20 if you want a creamier or less creamier one,
15:22 and that is almond milk.
15:24 So I think you guys need to try this,
15:25 so dip a spoon in and have a try.

15:44 There is your very own almond milk,
15:46 so just got a nice pitcher to put it in,
15:48 and the only, only, slight drawback is that
15:50 because it's not processed it may suppress.
15:54 Every time you use it...
15:55 Oops, every time you use it, you may need to give it a stir
15:58 because it's gonna settle, but that is really awesome.
