00:01 If you've just joined us on Cook:30 for Kids,
00:03 we're cooking up a storm in the kitchen today.
00:06 We have Zander and Caitlin from Tennessee
00:09 and on the menu we have...?
00:11 Omega Asian tofu and sweet potato salad
00:13 with cashew aioli.
00:15 And a cherry berry banana smoothie.
00:18 Doesn't it sound yummy?
00:20 Things are going well
00:22 so if you wanna get the kumara sorry, sweet potato,
00:25 kumara is what they call in my country, New Zealand.
00:27 Sweet potato out of the oven, that'd be great.
00:29 And I'm gonna add some flavorings
00:31 to this wonderful tofu dish,
00:33 so if you wanna throw in some honey,
00:35 just a drizzle of honey, it's great.
00:41 Now they will come through,
00:42 just give it a squeeze in there.
00:44 Lovely. It's great, keep going.
00:47 So probably around about a tablespoon of honey.
00:49 Put in some tamari or soy sauce.
00:53 So you can use either one of this,
00:55 just gives a nice saltiness,
00:56 the honey give us some sweetness.
00:58 So give it a little bit of squeeze over.
01:02 Lovely, just bit more, bit more,
01:05 so it's gonna sizzle a bit. Cool.
01:07 Give it a bit of a stir
01:09 and add some sesame seeds as well.
01:11 Just gonna sprinkle out there some sesame seeds.
01:16 And I'm also gonna put on some lemon juice as well.
01:21 And we just gonna squeeze over
01:23 some lemon juice through my fingers,
01:24 give it a little bit of a stir around.
01:26 And that will make this tofu taste amazing.
01:30 So just probably add one table of lemon juice
01:32 and that'll be great.
01:33 Look at that, so we can tune that down now.
01:36 Just give it a quick stir
01:38 and I will put this in here shortly.
01:40 So now we're gonna make a cashew and lime aioli.
01:44 Do you know what aioli is? No.
01:46 It's kind of like a dressing with garlic effectively,
01:49 and most dressings use things like lots of oils
01:52 and lots of egg yolks and things,
01:53 but this is an aioli that's made of cashew nuts.
01:56 Sounds yummy? Yes.
01:57 So if you wanna measure a cup and a half of cashew nuts
02:00 in a blender.
02:01 Sorry. Do I keep stirring?
02:03 Keep stirring so it doesn't burn,
02:04 jut a little more it'll be finished early.
02:06 Where's the cup?
02:08 All right, just pour in here, into this cup here.
02:11 Here we go.
02:13 And also under your chopping board,
02:14 make sure you have a nice tea towel
02:15 and that stop us from moving,
02:17 so here is another chef step for you.
02:18 So cup and a half,
02:20 so it's probably up to about here,
02:21 keep going, keep going, keep going.
02:24 Oh!
02:26 Okay, put that in, just don't put all of them in,
02:27 we'll put some back, how's that?
02:30 That's about cup and a half, there we go, put that in there.
02:35 It's the number one ingredient.
02:37 We're also gonna put in to measure out
02:39 a teaspoon of coriander,
02:42 so measure out two teaspoons of coriander.
02:45 I'll put the lime juice in, put it in, yep, that's great.
02:50 Is this good?
02:52 Yeah, that's looking good there,
02:53 I think that's excellent, it's looking beautiful.
02:54 I'm done.
02:56 Okay, if you wanna put some mustard in,
02:57 we got some seedy mustard, we want about a tablespoon,
02:59 so if you can open that and squirt it in.
03:02 You can turn the heat off there now,
03:03 we'll turn it to off.
03:05 That should be finished going with the tofu.
03:06 Should I put it in there?
03:08 Just squeeze it in and then I'll tell you where to stop.
03:10 Squeeze it in, lovely, seeded mustard is nice.
03:12 Yep, that's about right.
03:14 Throw in a water, we got half a cup of water.
03:17 And I'm gonna also throw in some lime juice,
03:22 I'll just squeeze it in here to around about
03:25 three tablespoons of lime juice.
03:29 It's a really, really nice limy kind of flavor.
03:32 I'm gonna put in a half teaspoon of salt.
03:34 There's a little thing there,
03:36 so putting half of one of those,
03:39 and I think that's all the ingredients we have
03:41 for the dressing.
03:42 Perfect? Yep, perfect.
03:44 All right, and a clove of garlic,
03:45 so put a clove of garlic here so put them in as well.
03:48 And let's put the lid on and let's go blend.
03:51 Hit the go button.
03:53 Whoa, oh.
03:55 This is a lovely dressing to have on any salad,
03:57 it's really, really healthy.
03:59 Keep going, keep going, keep going.
04:02 Look at that.
04:03 I think that should be nearly done,
04:05 little bit more.
04:09 Okay, stop it.
04:11 It's little bit thick,
04:13 we might add little bit more water.
04:14 So we just add bit more water in here
04:16 and if you're wanna go again.
04:17 Just a little bit, just so it has a nice
04:19 kind of thick kind of pouring consistency.
04:20 So hit the go button.
04:23 Lovely, excellent.
04:28 Perfect, yep. Turn it off.
04:30 So we got a beautiful lovely dressing here
04:32 that we can use to drizzle over
04:35 our salad we're about to do shortly.
04:38 So that's the same with salad, we've done everything,
04:39 we got the base there,
04:41 so if you wanna put some of the kumara on there,
04:42 just kind of grab it and sprinkle it over.
04:45 It's little bit hot
04:46 so we just kind of throw it over,
04:48 and again you wanna just sprinkle it over
04:53 and I'll just, I'll use this, this is about hot,
04:54 I'll just put in this over like this,
04:57 and we just spoon this lovely tofu.
05:02 Oops, dropped one.
05:05 Look at that salad.
05:08 That's a great salad.
05:09 So just remove the tray here.
05:15 And what else goes on it?
05:17 We're gonna finish it off with some mint,
05:18 so if you wanna grab the mint there.
05:20 We're just gonna grab some mint.
05:22 Mint is a lovely flavor for salads.
05:24 I'm just gonna chop it up quickly just like that,
05:27 just chop it up
05:30 a nice big chunks and sprinkle it over.
05:32 Actually, before we do we're gonna put the aioli over
05:34 and what we do is just grab the aioli
05:36 and we just drizzle it
05:39 like that so you get nice look, doesn't it look beautiful
05:42 with the just nice streaky bits there?
05:46 There you go.
05:47 And we put this on top, a sprinkle of the mint
05:50 just like that, just drop it from the height.
05:53 And doesn't it look like
05:54 that would be the most amazing salad ever,
05:55 what do you think?

05:59 So we just put that to the side
06:01 because we've only got a couple of minutes left
06:02 and what are we making next?
06:04 Smoothie. The smoothie, yes.
06:06 So we'll just use another blender.
06:08 So if, you guys, wanna use, we're gonna use some berries
06:09 from the fridge and the milk and we can start the smoothie.
06:15 Have a quick tidy up here,
06:17 it's always good to keep a nice tidy counter.
06:23 So making a smoothie is really easy,
06:25 once you've made one they're really, really good.
06:28 So, Zander, if you can just put some berries in,
06:31 so probably around about a cup of berries each,
06:33 so get you a little serving cup that you can put them in.
06:37 So got a cup each.
06:39 And if you can grab two bananas from over there and peel them
06:41 and throw them in as well.
06:43 So all it is to make a smoothie is just putting fruit
06:46 and some milk into a blender.
06:49 And frozen fruit is really good
06:50 because it gives a really nice kind of icy taste
06:53 and it's very nice and thick,
06:54 just probably pour it out into the cup will be easiest.
06:57 And we're using blueberries and cherries today,
07:01 but you can use any kind of fruit that you want.
07:03 The banana adds a lot of thickness
07:05 and little bit of sweetness as well.
07:07 Yep, throw that in. Nice one.
07:10 You got them all in the cup, well done.
07:13 Yep, just put them in like that.
07:15 So two bananas, two cups of berries.
07:22 And I'll put the milk in, so any milk that you want,
07:25 I'm using almond milk today.
07:27 So put around about half of almond milk in.
07:32 You may have to adjust the amount of liquid you put in
07:35 because sometimes that may end up
07:37 being too thick or too thin.
07:38 We get out there. Oh, lovely, perfect.
07:40 Look at those beautiful cherries.
07:43 Okay, put the lid on
07:47 and press the go button.
07:48 Ready? Three, two, one, go.
07:52 Whoa, oh.
07:54 Look at that go.
08:03 Okay, you can push stop.
08:06 And there's a smoothie ready to go
08:08 so I'll just sort of pour it in the glasses
08:10 and as you can see that is gonna be an amazing,
08:12 delicious, smoothie, check it out,
08:16 cherries and blueberries.
08:19 So what do you think, guys?

08:24 Oops, that one's a little bit on the low side but never mind.
