00:01 If you just joined us on Cook:30 for Kids,
00:03 we're cooking up a storm in the kitchen.
00:05 We have Sophia from California,
00:07 and Lachlan and Lily from Illinois.
00:10 What's on the menu today, guys?
00:13 Today we're making butternut mac cheese platter
00:16 with a creamy coleslaw, sounds amazing.
00:19 Yes, it does.
00:20 And for dessert, we're going to have
00:22 some macadamia cherry ice cream.
00:25 Ice cream!
00:29 Okay, we got three very passionate chefs
00:31 in the kitchen here. Is it going well?
00:33 Oh, we didn't turn it on, that would have helped.
00:36 We get that cooking, fortunately,
00:37 it doesn't take very long to cook pasta so
00:38 and it's already boiled.
00:40 So the butternut squash is cooking,
00:41 it's probably a few more minutes,
00:43 it doesn't look kind like it's some soft yet.
00:45 We got this dressing done which is great.
00:47 Did you know that I can lick my elbow?
00:49 Can you? Yup.
00:51 Okay. Ready?

01:03 I think some people can but it's very hard.

01:20 Yup, that's okay, the leaves of the celery
01:21 are actually really flavor some as well,
01:23 as long as they're nice and everything,
01:24 that's s brilliant. Okay.
01:26 So we better start mixing this in,
01:27 so, Sophia, if you can just pour this over...

01:30 And just kind of start mixing
01:31 and you can use your hands to mix this.

01:34 There's nothing like using your hands to do things.
01:35 Whole thing? The whole thing, yup.
01:36 So, Chef Jeremy, what's your favorite vegetable?
01:38 My favorite vegetable would probably be...
01:42 I quite like cherry tomatoes.
01:43 They're just lovely and so I can actually eat
01:45 a pound of them for lunch
01:46 just kind of eating cherry tomatoes,
01:48 they're really, really yummy.
01:49 So we're actually going to prepare this as a platter.
01:51 So a platter, rather than having
01:53 individual bowls of stuff,
01:54 we're just gonna make one platter
01:56 with all these yummy ingredients.
01:57 What did you got there? Chef Jeremy...
01:58 Yeah? This one isn't good.
02:00 No, leave that one out, this one.
02:01 Leave it out side. Oh, okay.
02:03 So mix it through, get your hands dirty,
02:04 looking good, get the celery in there as well
02:06 'cause it's lovely dressing.
02:08 I'm also gonna add some sesame seeds in here as well,
02:10 toasted sesame seeds. It smells delicious.
02:12 Just for a bit of extra flavor so keep mixing around,
02:17 it'll be a really, really beautiful salad.
02:19 It's not cooking unless you get your hands dirty.

02:24 So that's underway so we could probably,

02:27 Oh, olives. So we got some olives.
02:29 So we're gonna use some olives on the platter
02:30 just to make it interesting.
02:32 We might just, if you can just drain those in the sink?
02:34 So just tore them out
02:35 so that hold your fingers on the end
02:36 and does pour it through so you just got olives left
02:38 and no juice. Got some carrots.
02:40 That's looking beautiful, well mix there.
02:42 So what we're going to do, I'm just going to grab this
02:45 and we're just going to pour this
02:47 into the bowl in like this?
02:48 Can I wash my hands?
02:50 You certainly can wash your hands.
02:51 I probably should too. Yup, that's good?
02:54 So basically just gonna have one side of this platter
02:55 which is going to be coleslaw, and the other side mac cheese,
02:58 all these lovely ingredients around the plate.
03:00 So always when you prepare dish in one platter,
03:02 it saves on dishes, they just looks absolutely delicious.
03:06 Better wash my hands too.
03:10 Now we're gonna make a sauce that's kind of the mac cheese.
03:13 So we got blender here.
03:15 So, Lachlan, if you can get some cashew nuts,
03:19 so if you can get a cup of cashew nuts
03:20 into the blender here.
03:22 So we're just gonna add lots of yummy ingredients
03:24 to make this really lovely cheesy sauce.
03:28 A bit of clear up here.
03:30 So we're gonna add a cup of cashew nuts.
03:33 What is the vinegar at for in the olives?
03:38 I'm not sure that what just comes in the olives.
03:39 It just kind of a way they kind of pickle them
03:41 to make them that. Okay.
03:43 Yes, put in there, so one cup of cashew nuts.

03:51 if you can grab the almond milk from the fridge,
03:52 it's in the round bottle. Okay.
03:54 And so two cups of almond milk, one cup of cashew nuts.
03:58 And we're gonna add some flake yeast.
03:59 And flake nutritional yeast is a really lovely ingredient
04:02 to use it gets really nice cheesy taste.
04:04 If you can put three tablespoons
04:05 of that in there, Lachlan?
04:07 So what does the yeast do?
04:08 The yeast just adds a really nice kind of,
04:10 it's just a very nice salty kind of cheesy kind of flavor,
04:13 so we're not using cheese, it's a good alternative.
04:14 Yes, that's awesome. So two cups of almond milk.
04:17 My brother drinks almond milk, but I don't drink it.
04:23 There's lots of great milks around you,
04:24 you can get almond milk, hemp milk, macadamia milk
04:27 is really nice, soy milk, rice milk...
04:30 I like soy milk.
04:31 You name it, oat milk,
04:32 there's so many awesome plant based milks around.
04:35 There is oat milk? Yeah, oat milk.
04:37 Yeah, it's one of my favorites, it is great.
04:39 I've never heard of that. Me either.
04:42 So we better add a little bit of honey to sweetened up,
04:44 just a touch, just a teaspoon.
04:47 Is that to make the cheese?
04:49 Yup, this is to make the cheese.
04:50 So just double check my recipes here
04:52 and that's pretty much it,
04:54 so all we need now is the pumpkin.
04:56 Everything smells delicious.
04:58 So can honey substitute sugar in a lot of stuff?
05:01 Yeah, so lot of people use sugar in their cooking
05:03 and especially stuff you buy at the supermarket
05:05 is just loaded with sugar.
05:08 So that's like, not just little bits,
05:10 it's like huge amounts, like you drink a soda,
05:12 there's like seven or eight teaspoons
05:14 of something in the soda,
05:16 it's like huge, huge, huge amounts.
05:17 And all my cooking, we use little bit of sweetener
05:20 and the one stuff I do use rather using
05:21 processed white sugar,
05:23 I use things like honey that we're using today.
05:25 You can make a date puree up, mixing up dates with water,
05:28 agave, maple syrup, some really healthy sweeteners.
05:32 That's good. Really maple syrup?
05:33 Maple syrup is really good sweetener.
05:36 So this is looking like it's getting soft now.
05:37 So if you just give me those, it's a hot handle here.
05:40 So I'm just gonna drain this in the sink.
05:43 I'm just gonna drain it, just put on the side like that.
05:47 Lost one and that's okay.
05:49 And what we're gonna do is pour this butternut
05:52 into the blender like this.
05:55 So we want about... Can I taste one?
05:57 Two cups, that'll be really hot.
06:00 You can though, it's much more nicer now.
06:02 That's right. Into there.
06:03 And, Lachlan, if you can put the blender
06:07 on to this base and give it a whiz around.
06:10 Yup, you can try this if you like.
06:11 This is just cooked butternut.
06:13 Pumpkin or butternut squash.
06:16 Well, it's hot, it's hot. Don't burn your tongue.
06:19 What's it like? It's good.
06:21 There's no flavoring on it, but it's yes,
06:23 much nicer like that.
06:24 So give it a well round, yup, go for it.
06:32 It's looking pretty good, stop the blender.
06:34 Look at that lovely sauce there, look at that.
06:36 Isn't that just delicious? Looks great.
06:38 Steaming. Great.
06:39 Awesome, so we're gonna throw those macaroni cheese.
06:41 So, Sophia, if you can just chop
06:42 some cherry tomatoes in half?
06:44 Landscape? Yup.
06:45 So just grab them and just slice it,
06:47 bring your finger like that and just,
06:49 put them on the board there.
06:51 It will be great and I'm just going
06:52 to drain this in the sink.
06:55 We got the pastas all ready to go through a colander.
06:59 So you want to cook so it's s firm.
07:03 So get all the water out.
07:06 You don't water in 'cause this basically gonna
07:08 make everything go runny.
07:11 And what we do then is just add this beautiful pasta sauce,
07:15 turn the gas off, this butternut sauce here.
07:19 Can you give that bit a stir around, Lachlan?
07:21 Yeah. Looks great.
07:22 There you go. Looks amazing, doesn't it?
07:24 Isn't that great healthy sauce? So it's great.
07:27 So, Lily, if you can go to the freezer
07:29 and get me some frozen bananas, top left and some cherries?
07:32 We're gonna make this ice cream.
07:33 This is a great way to make ice cream
07:35 with the frozen bananas.
07:36 Ice cream! Shall I just get one container?
07:37 Yeah, one container is fine. Okay
07:39 And if you can get the black cherries as well,
07:40 there should be some black cherries.
07:42 This is about three small bananas
07:44 into the food processor.
07:45 Looks delicious. It's gonna be great.
07:48 And we're gonna add some honey
07:49 or you can use any sweetener of your choice.
07:51 Put a tablespoon, that's right, dark cherries.
07:55 Are they frozen? We put them in here.
07:56 And then we're gonna blend them round and round.
07:59 Put about two cups, they're frozen cherries
08:01 and this will become ice cream in no time at all.
08:04 So start the food processor.
08:07 Look at that turn around.
08:10 So after while it gets nice and smooth like that,
08:12 look at that.
08:13 We're just gonna pour in some macadamia nuts
08:14 and just mix it through a little bit,
08:17 we don't need to blend up so it's nice and crunchy.
08:20 And that lovely crunchiness, look at that beautiful
08:22 ice cream texture, isn't that amazing?
08:24 So creamy, I'm gonna dive in.
08:27 So we're gonna pour this macaroni cheese into the bowl
08:31 that we've got here like that, look at that.
08:36 It is a really lovely macaroni cheese.
08:38 We're gonna sprinkle on some of these tomatoes
08:41 you've just chopped,
08:42 just coming to give a bit of decoration.
08:45 I'm gonna pour some olives as well
08:47 and we'll garnish it with some cilantro
08:49 and this is an amazing macaroni cheese bowl
