00:01 Well, if you just joined us on Cook:30,
00:02 we're cooking up a storm in the kitchen 00:05 with Shai and Amarie from Georgia. 00:08 What is on the menu today, guys? 00:11 Indonesian gado gado vegetable bowl 00:14 with satay sauce. 00:17 And for dessert, we have tropical fruit with lime. 00:21 That sounds so good, I can't wait. 00:26 Awesome. 00:27 And let's do a few more cherry tomatoes here. 00:29 So we're making excellent progress, 00:30 we got things under way. 00:32 Potatoes are probably couple of minutes away. 00:35 And we're getting most of the vegetables done. 00:37 I think that's most of things we need to have there. 00:40 So now we're gonna make the satay sauce. 00:42 And this is satay sauce 00:44 or basically peanut sauce is amazing. 00:46 Now a question for you. 00:47 What's the difference between satay and sauté? 00:51 Do you know? 00:52 For sautéing... 00:54 Yes. 00:56 You do like, you put some oil in the pan 00:59 and you just put the vegetables in. 01:01 Yes, that's right. 01:03 So sauté like a sear as sautéing 01:05 where you make things soft. 01:06 And satay is... 01:08 A sauce. A sauce? 01:09 It's generally a peanut sauce. 01:11 Peanut sauce. Yes, exactly. 01:13 Most of them are crispy, just a little bit more to go. 01:14 Awesome. 01:15 Let them going, they're getting nice and crispy. 01:17 Look at those. 01:18 You're doing an awesome job there, 01:19 Amarie, on the stirring. 01:21 Thank you. Yes, sauté and satay. 01:22 Sauté is... 01:24 I got to keep this on. 01:25 So onions in the pan and satay 01:26 is what we're making now a peanut sauce. 01:28 So we're just gonna add some exciting ingredients 01:29 into this blender. 01:31 Oh, one more tomato, oop, 01:32 we can't leave him there, can we? 01:33 No. 01:35 No, he's gonna get lonely without his friends. 01:36 So we're gonna put some exciting ingredients in here. 01:38 So the first thing we're gonna add is, 01:40 where's my peanuts gone? 01:42 Here they are. They're hidden down here. 01:43 But just I bought some roasted and salted peanuts. 01:47 So if you're gonna give us one cup. 01:49 Just grab a cup measure of peanuts, 01:53 put it in the blender. 01:54 All right. 01:56 I'm just gonna get a lots of lovely ingredients here. 01:58 We're now gonna add some liquid honey, 02:00 one tablespoon. 02:01 You could use agave or maple syrup 02:05 or any kind of healthy kind of sweetener. 02:08 We use a lot of agave at home. 02:10 Yes, it's a great sweetener 02:11 from Texas just believe it or not. 02:13 One more? 02:14 No, just one cup is fine. Okay. 02:16 So we're gonna put in some sesame oil. 02:18 So you're gonna put in a teaspoon, sorry, 02:21 tablespoon of sesame oil. 02:22 Can you guess, or do you want to have a measure. 02:24 I'll give you a measure, there you go. 02:25 Okay. One tablespoon of sesame oil. 02:27 And we want one tablespoon of soy sauce or Tamari. 02:32 And these are just lovely kind of Indonesian flavors 02:34 that just really make this sauce just really yummy. 02:37 Yes. 02:39 We're gonna add some ginger puree. 02:40 So you can get ginger in this little kind of things 02:42 from the supermarket. 02:44 We're just gonna add two tablespoons of that. 02:46 Ginger and peanuts go together amazingly. 02:48 It's about. Good. 02:50 Empty it out. Only two tablespoons. 02:53 And limes, lime juice. Lime juice is amazing. 02:56 So we'll just cut these in half. 02:58 If you can squeeze as much lime juice 03:00 out of these as you can. 03:01 A lot of people will choose lemon juice. 03:04 Yes. 03:06 So you could use lemon juice as well, 03:07 but lime is a really nice flavor there. 03:09 Give it a good squeeze, 03:10 and these limes don't have pips, 03:11 so we don't need to worry about that. 03:13 Yes. 03:14 So while you're doing that I'll just check the potatoes. 03:16 And to check the potatoes, just put a knife in them 03:17 and just see how soft they are. 03:19 So, yup, that went in quite well. 03:22 Quite easily this knife. 03:24 So these potatoes are pretty much nearly done, 03:26 probably another minute, and they'll be ready to drain. 03:28 So they cook really, really quickly, 03:30 especially when they're nice and small. 03:32 If you use big chunks of potato or whole big potatoes, 03:35 they could actually probably take perhaps 03:37 30 minutes to cook. 03:38 So the size of your vegetables really matters 03:40 when you kind of cooking fast. 03:42 It's looking beautiful there. 03:44 I think it's almost ready, we'll turn the gas off here. 03:46 We'll keep cooking for a little bit more. 03:48 But particularly that tofu, just look at that, 03:51 it's nice and spongy, and it's crispy, 03:53 and it's looking absolutely beautiful. 03:56 Just gonna add little bit of salt to it, 03:57 just to give it a little bit of a salty taste. 04:01 Woo! 04:02 Often I'll add more kind of things to the tofu, 04:05 but because of the other flavors 04:06 in the satay sauce, we're just gonna keep this 04:07 just like a very simple, salty kind of oil on the tofu, 04:13 and all the other flavors from the satay sauce 04:15 would do a lot of work. 04:16 So we just need to be fully flavored. 04:19 Oh, before we finish, we got these beans here 04:21 that we cut before. 04:22 We're just gonna put these in the top here. 04:26 And those will just take a couple of minutes 04:27 just to cook through. 04:29 They just need to be 04:30 very just slightly kind of cooked, 04:31 and that boiling water will cook them 04:33 just very briefly because beans have got 04:34 kind of quite a raw taste so we wanna make sure, 04:36 we just cook them a little bit. 04:38 So why do you boil the green beans? 04:41 Just to keep them nice and soft, 04:43 soften up a little bit which is great. 04:45 Just checking the recipe anything missing? 04:47 Oh, we need a quarter cup of water. 04:48 So if you can get quarter cup of water. 04:50 Of course. 04:51 And we need some lime juice, we got all the ingredients in. 04:56 And we're then ready to blend. 04:59 So it's a whole cup, we want a quarter of a cup. 05:01 A quarter of it. So just pour quarter of it in. 05:02 Okay. 05:04 So you spill some of it out there. 05:05 This is a lovely sauce. 05:07 You could use peanut butter if you want it as well. 05:08 But it's really very nice when you're using, 05:09 you know, fresh peanuts. 05:13 Okay. So you're gonna mix it up? 05:15 We're gonna mix it up. Pour it in there. 05:18 And if you wanna press the button, 05:20 press that high button there. 05:23 Whizzing around, look at that. 05:25 Just have to tidy up going there. 05:27 Put in that, we're using a bit and a bit of a cream as well. 05:39 Okay, that should be enough. 05:43 And that is... 05:45 Look at that. 05:47 As you grab a spoon, I want you to try some. 05:50 Okay, guys, you got to try this, here you go. 05:51 Try a little bit. 05:53 You want to try a little bit, Amarie? 05:55 What do you think of this? 05:57 Just try a little bit there. Tip your spoon in. 06:00 What's that taste like? I taste little sweet flavor. 06:03 Yes, kind of bit honey in it. 06:05 Should it be like salad dressing? 06:09 Kind of, yeah, kind of salad. 06:11 Not really, 06:12 but it has different flavor in it. 06:14 Oh, wow! It's really nice satay sauce. 06:16 And we haven't actually cooked this one, 06:17 this is one you don't cook. 06:19 It's just going on just like this 06:20 over the warm vegetables. 06:21 So it's kind of a warm dish not a hot dish. 06:24 This is very delicious really, really quick satay sauce. 06:26 You can make them on the stove with onions and things, 06:29 but this one here, 06:30 this one looks very well, isn't it? 06:32 Yes. Just to blend up. 06:34 It's delicious. 06:35 So we're now gonna do the dessert. 06:37 And I'm gonna flip the board over. 06:38 We've been cutting vegetables and things on here. 06:41 And you don't want your dessert 06:42 tasting like vegetables and things. 06:44 So we're gonna flip the board so this side, 06:46 here's got a clean side 06:47 that we can use to do the next dish. 06:50 And we're just gonna prepare some basic tropical fruits. 06:53 This is not a very fancy dessert, 06:55 oh, but it tastes amazing. 06:56 So the tofu is done? Sorry. 06:58 The tofu is done. 06:59 Just cooking nicely, just clean the knife. 07:03 And what we're gonna do now is just cut off 07:04 some of this fruit. 07:06 Okay. So we're just gonna cut it. 07:08 This is a mango. 07:09 And we got papaya and a watermelon, 07:11 we're just gonna cut some fruit that is just going to be 07:15 really yummy just to have. 07:16 So we're just gonna cut just around there, 07:18 I'll just do this one here kind of nearly running 07:20 at a time here. 07:22 This is the hardest thing about this program 07:24 is actually getting finished. 07:27 Mikhail, like my big brother, his name is Mikhail. 07:30 He loves mango. 07:32 Does he? Yes, it's a great fruit. 07:34 And with fruit you kind of wanna shop in season. 07:36 Sometimes things are in a season, 07:37 different times of the year. 07:39 And that makes it easy as well. 07:40 So put some mango. 07:42 I'll get some watermelon here. 07:43 So we're just kind of slice the thing of here. 07:44 Yes. 07:47 Watermelon. It's great. 07:48 Watermelon. 07:49 So we're just gonna just cube it up. 07:51 As I'm gonna do slices, 07:52 so we're just gonna do lots of little slices. 07:54 And we're gonna arrange it 07:55 in this little nice wooden dish here. 07:59 Just roughly, we'll do some slices of watermelon as well. 08:04 I'll just slice off, you wanna slice off all the stuff 08:07 you don't wanna eat, 08:09 if we kind of start cutting them. 08:11 And they would just kind of cut through here. 08:13 So you can kind of cut it here if you want, 08:15 but just I quite like it with this one 08:17 just doing a little wedges. 08:18 You can actually use to pick up with your fingers. 08:21 That's much easier. 08:22 So we'll just kind of arrange those in kind of roughly, 08:25 a rough area there. 08:28 And then we've got some of this. 08:29 What do you call this? Papaya. 08:31 Papaya. Excellent. 08:32 So you generally wanna cut it down the middle. 08:35 Look at that. 08:36 Is that gonna taste good or what? 08:37 Oh, wow! Yeah. 08:39 That's a lot of seeds. It is. 08:40 So we're just wanna scrape out the seeds like that. 08:44 Maybe you can plant them and make some more. 08:47 Exactly, that's what seeds are for. 08:48 Exactly. So there we go. 08:51 And we have a lovely papaya. 08:53 So this is lovely tropical fruit 08:54 will just be a lovely, fresh kind of taste. 08:57 Look at that. 08:59 So whatever your favorite fruit is... 09:01 And this is much healthier than having like 09:03 a ice cream or something like that. 09:06 And it's much, much better for you, as you know. 09:09 So I'll just kind of cut this as well. 09:12 Again, we're just gonna take all the skin off. 09:15 Oh, it's a tough one. 09:18 Little bit of waste there. 09:21 It's a very pretty color. 09:22 It is a very pretty color, indeed. 09:24 Kind of like orange-pink. 09:27 Exactly. Like a salmon color. 09:29 It is. Yes, true. 09:31 So here we just kind of, I'm just gonna just cut it of 09:33 and cut little wedges 09:34 that we can just pick up with our finger. 09:39 Again, slicing through like that. 09:43 And we just scatter that in the bowl. 09:44 And to finish it off, the number one thing 09:47 it just transforms this kind of a fruit is, 09:51 oh thanks for your help there, is lime juice. 09:54 Lime juice, just that kind of nice acidic 09:57 kind of flavor of lime juice. 09:59 So we'll put this up here now. 10:01 Making a good mess here, aren't we? 10:03 Yeah. We'll just transform this. 10:04 So okay, you guys, just squeeze some lime juice over it. 10:07 One for you, one for you. 10:09 Lime juice has a great flavor for a lot of things. 10:12 It is. 10:13 And we'll just kind of slice another lime as well just to... 10:17 We're just gonna give some lime wedges 10:18 that we can actually put on there 10:20 to get some decoration. 10:22 And that'll help it. 10:23 Look, how colorful that dish looks 10:25 with these limes on this. 10:26 This one is not coming out at all. 10:27 Very colorful. 10:29 And in the break we'll add some more mangoes as well. 10:30 And what we're gonna do now 10:32 is we're gonna drain these potatoes. 10:34 I've got a colander over here. 10:38 Here we go. 10:40 And we know those are cooked now. 10:42 And we're just gonna basically 10:44 put these into the gado gado. 10:49 And there we have our meal. 10:52 A little more garnish in that meal, 10:54 we're gonna put satay sauce over it. 10:57 And that will be a lovely delicious meal. 11:00 Oh, and the tofu as well. We need to get the tofu. 11:02 Yes. |
