01:34 -style split pea soup, believe it or not, I thought about Greg
01:41 Lindbergh and Judy Lindbergh, because John invited Greg to

02:37 So the recipe I'm sharing today, I fixed exactly
02:43 according to what Judy told me, believe it or not, 30 years
02:48 ago.
02:49 So split pea soup Russian -style.
02:52 We'll take a cooking pot.
02:57 You see our peas, they may be green color, they may be this
03:03 light orange color, doesn't matter, and we wash them
03:06 thoroughly.
03:07 So we put them in the cooking pot.
03:12 We'll add carrots, and we add one whole onion.
03:19 Whole onions?
03:20 Yes.
03:22 And we'll add water.
03:24 Okay.
03:26 Yeah.
03:27 We put it on fire, or we heat it up, and we'll bring it to a
03:35 boil, and then we'll reduce heat, I would say, to a
03:41 minimum.

03:48 overnight, they will cook pretty quickly.

07:17 with two more ingredients necessary for the pea soup.
07:21 The first ingredient will be a whole grain bread.

07:34 Fahrenheit.
07:35 But before doing that, we'll add a little bit of oil.
07:41 If somebody doesn't want to do so, don't add oil.
07:45 So, oil is optional.

07:51 And I put it in the oven.
07:55 And now, Julia, it's time for the onion.
07:59 Okay, Russian people love onion.
08:03 This is a whole one onion that we chopped.

08:10 You can take a white onion or a yellow onion.
08:13 Don't take a red onion.
08:15 So, we'll remove the pot.
08:20 I'll take a pan.

08:23 Heat it up.
08:25 We'll try to add as little oil as possible.

11:50 Russian style split pea soup.
11:53 Put peas, onion and carrot in a pot with enough water to cover.
11:58 Simmer until the peas are done and the onion and carrot are
12:02 soft.
12:07 Remove and discard the onion.
12:09 In a blender, blend the peas and carrots until smooth.
12:13 Put the blended vegetables back in the pot, add salt and return
12:17 to a simmer.
12:18 Remove from heat.
12:20 Put finely chopped onion in an oiled pan.
12:23 Lightly saute for 5 to 10 minutes or until crisp.
12:28 Garnish the split pea soup with crisp onions, smoked paprika
12:32 and croutons and serve.
12:36 Croutons.
12:37 Preheat oven to 305 degrees Fahrenheit.
12:41 Line a large baking sheet with parchment paper.
12:44 Set aside.
12:46 Cut the bread into 1 inch cubes.
12:49 Toss gently with olive oil until lightly coated.
12:53 Place bread cubes on a baking sheet in a preheated oven at
12:57 305 degrees Fahrenheit for 15 minutes or until golden.
13:03 Cooking time will depend on the thickness of the cubes.
