00:02 how to prepare healthy food that actually tastes good? 00:04 Well stay tuned while Evita Tezeno and Brenda Kemp 00:07 and yours truly, Nyse Collins, 00:08 show you just how to do it 00:10 and give you "A Taste of Paradise" 00:31 My name is Evita Tezeno and my name is Brenda Kemp,I 00:35 and we're so glad you joined us today. 00:36 We are going to be doing collard green wraps today, 00:40 my very favorite recipe! 00:42 Wait a minute, Evita... Are you telling me 00:44 you're going to make a collard green wrap out of 00:46 a raw collard green? Yes! 00:49 Aren't those tough? 00:50 Yes they are tough, but you have to do a couple 00:54 of things with them before you eat them this way. 00:58 So let's begin... 01:00 We'll start out with a collard green leaf and we take the 01:06 stem off and then we shred the spine of the stem a little bit. 01:15 And why are we taking off the spine? 01:17 Because the spine is really woody and it's tough. 01:22 So we take the spine off so it will be more edible. 01:26 And then we break the spine, just break it like this. 01:32 Now to make it more... Tender? More tender, yes. 01:39 we are going to marinate it. 01:41 Then what do you marinate it in? 01:42 We're going to marinate it with lemon juice, olive oil and salt. 01:47 So let's read the recipe... 01:57 So what we're going to do is, we're going to combine 02:01 the salt and we're using mineral sea salt today, 02:08 and the lemon juice and we just mix it up a little bit. 02:21 And again, this is going to make the collard green tender? 02:23 Yes it will. 02:25 So you baste it on the back side and then you turn it 02:31 and you baste it on the other side and you put it in the 02:39 refrigerator and it sets overnight. 02:42 So all of these ingredients on here 02:44 will make it tender. Okay! Okay! 02:47 So we have one that we already did. 02:50 So this is how it looks... That is tender! Yes 02:57 So now we're going to do what goes inside. 03:01 First we're going to do a walnut-taco meat recipe. 03:05 For this you will need... 03:19 So let's begin! 03:22 Evita, is that a food processor 03:24 you're going to be using? Yes, it's a Cuisinart. 03:26 This is one of my favorite tools to use. 03:32 And what about these walnuts, are these raw? 03:35 Yes these are raw and they have been soaked overnight. 03:38 And what happens is that when you eat nuts that have not been 03:43 soaked overnight, they have enzyme inhibitors. 03:46 So it makes it hard to digest. 03:48 So you want to soak them overnight and rinse them. Yes 03:52 So we begin with 1-1/2 cups of walnuts, 03:58 and then we have liquid aminos 04:00 which is like a soy sauce substitute. 04:05 And what is that? This is cayenne. Cayenne. Um hm. 04:09 Coriander, and this is cumin. 04:14 And then we process it. 04:18 And how long should we process? 04:19 Oh, until it starts looking real kind of grainy. 04:33 So we're finished processing it. 04:36 Doesn't it look like meat? 04:43 It smells so good! 04:49 So, can you get the things ready for me for the next recipe? 04:53 Well and we're going to clear off this station. 05:02 So the next recipe that we're going to do is the: 05:05 Macadamia almond cheese. 05:30 So let's begin! 05:31 So Brenda, hand me the walnuts. 05:34 These walnuts have been soaked overnight, 05:37 and the benefits of soaking nuts again, overnight, 05:41 is because they have enzyme inhibitors, 05:44 and to make them more digestible, you want to soak 05:48 them overnight and rinse them. 05:50 So we have raw almonds that have been soaked overnight, 05:54 and these are macadamia nuts and also soaking them 05:59 makes the cheese a little more creamier. 06:05 We have nutritional yeast, lemon juice, 06:11 some sea salt and some onions chopped, 06:21 and 2 cloves of garlic, now let's process this. 06:28 Oh, I forgot the water, here you go. 06:35 Evita, what was the purpose of the yeast flakes again? 06:38 Yeast flakes makes the cheese cheesier, cheesy flavor, 06:44 and also it's really high in B vitamins as well. 06:47 And this is going to be really hard to blend, 06:52 so we're going to have to use the damper. 07:27 Now this is our cheese. 07:31 Smells cheesy! Yes, it's wonderful. 07:37 And this won't give you any mucus. 07:41 You know, it also won't give you any migraines, 07:44 and it's yummy - it's really, really yummy. 07:48 Now let's get ready for the next step. 07:52 Now we have all the ingredients done, 07:55 we're going to stuff the burrito now. 07:59 Stuff the collard green wrap. 08:00 So let's clear off everything. 08:14 Okay, so what we need for the stuffing is the macadamia nuts. 08:21 Could you get me the walnut meat? 08:27 And we need the collard greens. 08:35 And the lettuce and tomatoes. 08:49 Okay, I'll need a chopping board. 08:51 Could you chop this while I 08:53 put everything else together. I'll be happy to. 08:55 Okay Brenda, I'll need the spatula. 08:58 Okay, what I'm going to do is, I'm going to combine 09:08 the avocado, the onions and the tomatoes. 09:16 Let me just ask you, Evita, do I need to keep the 09:18 seeds from the jalapeno pepper? 09:20 Well you can if people don't like it really hot, 09:23 you could take the seeds out, but I like it a little spicy. 09:26 So I keep the seeds in. 09:30 So we have a collard green wrap that has a collard green that 09:34 has been marinated overnight and we start off with 09:37 the macadamia nut cheese. 09:39 And we spread it on the collard green. 09:45 And does it matter which side you spread the cheese on? 09:47 Well I do it on the back side. 09:49 It makes it easier to wrap. 09:55 Then you take a little bit of the taco meat, 09:59 and put it in there. 10:01 And are you finished with that collard green? Just about! 10:05 Let me grab a little bit of that. 10:08 We don't want too many big pieces, 10:10 but we want to have it pretty fine. 10:16 And then we take some of the lettuce and the avocado mixture, 10:22 and this is a little tricky. 10:25 So we fold the wrap, 10:33 and then we fold it this way and then we roll it. 10:41 And this is our burrito! 10:47 So, I have a finished product. 10:55 This is the collard green wraps which I love! 10:59 I bring this to church, and Brenda, 11:02 everybody goes crazy over them. 11:05 And, you don't have no guilt, no cheese in it, 11:08 no meat in it - it's just wonderful! 11:12 It's lite and it's refreshing. 11:14 I can't wait to taste them. 11:16 Yes, why don't you have one. 11:22 Ummm - that's delicious! 11:25 So today's recipe was collard green wrap. 11:37 So fresh and so clean! 11:40 Let us start the detoxification process. 11:43 What are we talking about? 11:44 There is this big craze going on right now; 11:47 everybody is trying to detoxify. 11:49 They're trying to clean here and clean there, 11:51 and I'm not talking about their houses which would be nice, 11:54 but I'm talking about their bodies. 11:56 They're putting stuff in, stuff is coming out. 11:59 They're scrubbing here, stuff is going there. 12:01 And it's just a mess, and everybody wants to feel 12:04 fresh and clean. 12:05 So how can we do that? 12:07 Today, we're going to share with you a couple of little 12:09 tips that you will find a blessing. 12:11 A lot of people, actually this program is back 12:13 by popular demand because everybody wants to know 12:16 how to clean the system! 12:18 Everybody is taking this pill and that pill; 12:21 we're using this machine and that machine, 12:23 and scrubbing here... and nothing seems to work. 12:26 All they want to do is clean out, 12:28 so the question is today... 12:29 What are we trying to clean out? 12:31 Not the house, not the car, but they're trying to 12:33 clean out their body. 12:34 Many people always shared with me that, "Hey, I've been 12:37 eating this way for so long and I want to live a 12:40 new lifestyle, I want to appreciate the 12:43 simple food; I want to receive 12:45 something better, but I need to clean the 12:47 body out first." 12:49 And, I mean, they may be on to something, 12:51 and it's true because when you make a new start on life, 12:53 you want to kind of wash away the things from the past. 12:55 That's the same message we all know; 12:57 clean the things away from the past and then move forward. 13:00 But, however, do we really need to do some of these 13:03 extreme things to clean out the body? 13:05 Or, can we do it naturally? 13:06 Naturally and almost at no cost. 13:09 That's what we're going to learn today 13:10 in "So Fresh and So Clean" 13:13 But the issue is: "What are we doing?" 13:17 A lot of times, we're using many strong pills 13:20 or maybe machines or maybe procedures. 13:23 Actually one of our clients, some time ago, 13:26 shared with me she used to do this cleanse. 13:28 As-a-matter-of-fact, she used to do it once a month. 13:29 She got so addicted to it, she started doing it 13:31 twice a month and she said, "One day I started to feel 13:34 very faint and very weak and tired and I didn't know 13:37 what to do," and she said, "my head was even spinning." 13:40 And what we found out when they ran her to the 13:42 emergency room was that she cleansed so much 13:46 she was actually causing another problem. 13:47 It was her electrolytes... they became unbalanced 13:50 or she had an electrolyte imbalance and as a result, 13:54 she was causing other problems. 13:56 How could this happen? 13:57 A lot of the cleanses that we do are actually removing 14:00 a lot of the things that are actually necessary for us. 14:04 So, what do we need to do to avoid the removal 14:08 of the items that are necessary for us? 14:10 We just have to do things the 14:11 way the Lord instructed us to do it. 14:13 And I have a very new, simple tip... 14:17 As-a-matter-of-fact, I'm thinking twice about sharing it 14:20 with you all because it's going to be 14:21 in one of my upcoming books. 14:23 So if I tell you this secret remedy on how to 14:26 detoxify the body, I know some of you all are going 14:28 to probably take it and make your own book out of it. 14:30 But no problem, it didn't come from me, it came from the Lord, 14:33 so you can use it as much as you want. 14:34 Get your pens, get your papers, you're going to write this down. 14:37 This is one-step in cleaning out the body - are you ready? 14:41 Here it is - write it down... 14:43 The first step and the only step that you need 14:47 in cleansing the body is don't put in what you 14:52 want to wash out, all right? Did we get that? 14:56 Let me repeat that one more time. 14:58 Don't put in what you want to clean out. 15:02 This is the first and only step to detoxifying the body. 15:05 A lot of times, you don't need all of these other things 15:07 to clean yourself out if you just don't put in 15:10 what your body doesn't need. 15:11 Is that simple enough? 15:13 I know, I'm sorry I didn't come with a new secret herb 15:16 that will clean the body or do this medicine or do this or that 15:21 and this will clean out the body, it's that simple. 15:23 If we don't put in the things we want to clean out, 15:26 many people say, "Well what could it be?" 15:28 They could say, "Maybe it's cheese or sometimes, 15:30 I need to get the chicken out." 15:32 Or they tell me, "The beef stays in the system too long, 15:34 and I need to wash those out." 15:35 Well here's the rule, "Just don't eat it anymore." 15:38 And then the problem sooner or later will go away 15:41 when we use the natural things that God has given us. 15:43 It's as simple as that. 15:45 I know water is good and exercise is good. 15:47 You all are already doing that, 15:48 you don't need to hear that anymore. 15:50 You see, the thing is, if I give a quick shortcut, 15:52 and take this pill or this herb, then a lot of times, 15:54 even myself - I was guilty of it because I used to 15:57 do all these cleanses and stuff like that... 15:59 I would go and eat all the things that I knew 16:01 was not good for me, but because I knew I had 16:03 that special herb or that special pill back at home, 16:06 I would eat all the stuff, eat it all up, 16:09 and then I would come home and I would go... 16:10 and then you know what happened... 16:12 You have to run to the restroom, and #2 time, 16:14 I don't think I need to explain that anymore. 16:15 You all understand what I'm talking about, 16:17 and so as a result, I found a shortcut and I didn't 16:21 solve the problem because I kept going back 16:23 and eating the same things that wasn't good for me. 16:25 So let's solve the problem and just don't eat it to begin with. 16:28 And, what we can do... if there are some things 16:30 that need to be cleaned out, let's do it naturally 16:33 the way the Lord wants us to. 16:34 There are certain foods and veggies that the Lord 16:37 has given us that will start to go in the system 16:41 remove the things that shouldn't be there, 16:43 but what it will do, it will bypass the good things 16:46 that God has put in there. 16:48 I had a chance to work with one client, 16:49 she says, "Oh, I did this super cleanse and in the first week, 16:53 you know, I lost 5 pounds." 16:55 And I said, "Well, that's probably true... why? 16:57 Because when we do these heavy cleanses, 17:00 we also remove some of the normal flora bacteria 17:03 that God put in there to protect us, 17:05 and He puts almost 5 to 6 to 7 pounds of it." 17:08 So I said, "Oh man, I'm so sorry." 17:10 And I said "What did you have to do after you did the cleanse?" 17:13 She said, "I had to take some bacteria." 17:15 Well the reason why she had to eat those bacteria, 17:17 the acidophilus, and all of these other items, 17:21 is because she took it out to begin with. 17:24 Man can't improve upon God, 17:25 so whatever he makes will never be the same. 17:27 So let's leave what God has put in there and let's go 17:30 ahead and let's use some of the 17:32 bias cleanses that God has given us. 17:34 So today, by popular demand, we are going to do 17:37 my favorite recipe and it's called the 17:39 "tropical detoxifying fruit salad." 17:43 And it's really simple, all you need is: 17:51 I think everybody has that in their home already... 17:54 If not, just run to the local store. 17:56 In our other recipes that we used to do, 17:57 we used to use papaya because papaya is also good 18:00 for the digestive system. 18:01 We used to use other items, not only that, 18:05 we used to use apples - you remember that old saying... 18:07 "An apple a day will keep the doctor away," 18:09 well, check this out... "An apple a day will keep you 18:13 going and getting that stuff away," if you know what I mean. 18:16 So go ahead and enjoy the apple and enjoy all those items, 18:18 but we're just going to use some special fruits 18:21 that God has given us that will 18:22 take care of these items naturally. 18:24 And so all you need is one nice pineapple, 18:28 and this time I did a better job of picking it. 18:30 It's nice and ready to go. 18:31 I already went ahead and demoed one, 18:34 but I'm going to show you how to do it because, 18:36 me, I don't like dishes, all right? 18:38 So I like to go ahead and cook in a certain way. 18:41 I use like one plate for everything, 18:42 and I know some of you all know what I'm talking about 18:44 because you probably do it too. 18:46 So I'm going to actually use my pineapple today 18:48 as my bowl for my tropical detoxifying fruit salad. 18:51 So all you need to do is take a knife, good sharp knife 18:54 or something of that nature, you go ahead and you grab it, 18:58 you put it right in the middle 18:59 because we still want to use it as a bowl, 19:02 and the first step in digestion, it has to be appealing, okay, 19:06 it has to look good. 19:07 So make sure you get it straight down the core. 19:10 I know it going to be a little challenge to cut it, 19:12 but if you have a good knife, that shouldn't be a problem. 19:14 Straight down the core so you have even sides 19:17 to your pineapple because those 19:20 will turn out to be bold, and there you go. 19:22 Oh man, that pineapple is ready, it's more than ready. 19:26 And, it's real simple on how you do it, 19:28 you just go ahead and you cut your way through it, 19:31 make a nice little bowl out of it, 19:33 and I'm not going to get into all of that, 19:35 but I just want to share with you how you can 19:38 go ahead and do that. 19:39 You cut it down the middle, you cut it into pieces just like 19:43 pineapple chunks and this pineapple is amazing for you. 19:47 It has bromelain, I mean this is good for people with 19:50 digestive tract problems. 19:51 This is actually one of the stomach's best friends 19:54 alongside of that like potatoes and papaya. 19:57 Anybody ever heard of persimmons? 19:59 Persimmons are fantastic, and if you ever get a chance, 20:01 cashew fruit - they don't have it here. 20:03 I'm trying to buy all the cashew fruit farms 20:05 so I can go ahead and bless the whole world with it. 20:09 All of those are good friends of the stomach. 20:13 So what you will do is you'll gut that out, 20:15 you take these pieces out. 20:16 I already took some out for you and I cut it into pieces. 20:20 If anybody is still buying pineapple chunks, 20:22 I don't know what's going on. 20:23 Maybe there's no pineapple, but you can have 20:26 your own pineapple chunks, 20:27 and it's real simple from the other ones that we did. 20:30 When you cut it out, as you see there, 20:33 you just cut up your own little chunks there. 20:35 Sometimes people throw away the core. 20:37 You can throw away the core if you want, 20:38 but I remember this old thing that we used to do, 20:41 if it went in rough, then more than likely it came out smooth. 20:44 If you don't know what that means, 20:45 then we'll talk about that on another program. 20:47 But actually that's fiber, it's actually 20:49 good fiber, but we just don't want nobody 20:50 choking, so that's my little disclaimer. 20:52 Please don't use - if you're going to choke, 20:54 anything of that nature. 20:56 And then when you're done with it, when cleaning it out, 20:59 I'll just move this over... you should have 21:02 2 pineapple halves just as you see here. 21:05 Those are nice and gutted, nice and clean, 21:07 in a nice little bowl there or a plate for you to do it, 21:10 and this is fantastic when you have friends coming over... 21:13 they could see a little creative way. 21:16 So even if you're not a chef, because I'm not a chef, 21:18 I just know how to eat and I know how to cook to eat. 21:22 You can do that and they'll think you're a chef, 21:24 so go ahead and use that. 21:26 What we're going to do, we're going to take 21:28 a banana here and okay, we have our banana 21:29 because this is the other fruit. 21:31 Bananas are fantastic, everybody knows it's high 21:34 in the potassium and good for both #1 and #2. 21:39 What I mean by that, for those that have diarrhea 21:41 or constipation, bananas help because it works as a balance. 21:44 It's like a buffer in the system, so you'll enjoy that. 21:47 So you have your banana there, you cut that into nice 21:50 little pieces, put that in a bowl, 21:53 whatever works best for you. 21:56 But also, a lot of people know bananas for potassium, right? 22:00 So start eating your potassium now. 22:02 I remember, actually, when we were doing a rotation 22:06 in the emergency room, one lady came in and 22:11 her blood pressure was running high and the doctors were 22:14 doing stuff to her and they put her on like an IV 22:17 potassium something and the funny things was 22:20 she was like, "No I don't want no medication, 22:22 don't give me no potassium." 22:23 She was like, "Go ahead and give me a banana." 22:26 You know, what the doctor said, it was the funniest thing 22:27 I ever heard... He said, "Ma'am, too late 22:29 for bananas, you had a chance to eat bananas when you 22:31 were out there - now you're in here, 22:33 you're going to take what we give you." 22:34 So watch this, I know a lot of people don't like medicine, 22:37 no problem - please #1, however, 22:39 follow your doctor's instructions. 22:40 The doctor told you to take your medicine, take your medicine! 22:43 But while you are alive and well and still kicking, 22:46 eat your potassium... 22:47 So, God forbid, we won't have to deal with the 22:49 same situation as that young lady who ended up in a 22:52 hospital and then wanted bananas all of a sudden 22:54 when her blood pressure was too high, so it was too late then. 22:57 But let's go ahead, so we have the bananas; 22:59 another item that we have is the mangos. 23:02 Mangos are very good. 23:04 Remember, we talked about being fresh and clean, 23:06 not only will a pineapple start to clean you out, 23:08 the bananas will help balance things, 23:10 but the mango as well, is very, very good 23:15 also for the skin - a lot of people don't realize that. 23:18 They just think, "Aww, it's just sweet and stuff like that." 23:20 But, no, it's good for your skin, 23:22 it's also good for the cholesterol. 23:24 This thing is amazing! 23:26 I know they talk about Adam and Eve ate off of the tree, 23:28 and they probably ate an apple and stuff like that... 23:30 I think they probably had a mango 23:32 because this thing is so sweet anybody would do it. 23:34 But we know they weren't searching for the sweet fruit, 23:36 they were searching for knowledge and wisdom, 23:38 but God has given it to us. 23:39 If we just listen, we don't have to suffer. 23:42 So let's go ahead and choose the good food. 23:44 So what you do is you cut your mango 23:46 and you end up with pieces like this... 23:49 I already did that for you. 23:50 You add that to the rest of the salad here. 23:55 This is very nice, very nice. 23:57 As-a-matter-of fact, I'll say this quietly, 23:59 a lot of times, real quick, a lot of times, 24:03 in diabetics, they recommend that they not eat fruits, 24:05 and this is true because the fruits will increase 24:08 that sugar a little bit, but did you know 24:10 that as a result, a lot of good things get the blame. 24:15 I don't know why, but anything goes wrong... 24:18 "Oh, it must have been the apple, 24:19 it must have been the banana." 24:21 I don't really think that's a major problem. 24:23 The problem is the cake that we probably had; 24:26 maybe the white bread that we ate earlier or the white rice 24:28 and peas or beans or however you had it. 24:31 That also increases the sugar. 24:33 So then when we eat those foods and then we add the mango, 24:37 and the bananas, and all of these other fruits, 24:38 the sugar will go high. 24:40 But who gets the blame when there's trouble? 24:42 The good guys and everybody says, "Oh, I can't 24:44 eat fruits, you know, because it's going to 24:46 make my sugar go high." 24:47 But that's not the problem, the problem is 24:49 all of the other things that we are eating. 24:51 But if your doctor says so, please... 24:53 follow his instructions, his or hers. 24:55 But what we're going to do, as-a-matter-of-fact, 24:57 two of the best fruits for diabetics, alright, 25:00 now don't tell nobody... are actually mangos and bananas. 25:05 These are two of the best items and you can look it up 25:08 and study it for yourself. 25:09 But the problem is how we use the mangos and bananas. 25:12 A lot of times, we eat the banana when it starts 25:15 looking like a zebra, you know what I mean? 25:17 It starts getting all these stripes and stuff like that. 25:20 That time is too late, the sugar is high, 25:22 it's gone to ferment and that's not the time. 25:25 We should buy the banana just when it's right there 25:28 a yellowish-green and as soon as it goes from green to yellow, 25:30 eat it - that's the best time to eat it. 25:33 Don't wait until it starts looking like 25:34 a cheetah or something like that. 25:36 You know the mangos - okay, mangos are also good for 25:39 individuals who are dealing with different ailments, 25:43 but the problem is... we wait until that mango 25:45 sits in the corner of the kitchen and it starts 25:48 smelling like the Caribbean, you know what I mean. 25:50 It gets really soft and you just smell... 25:53 and then here's the next problem... 25:55 Not only do we go and eat it 25:56 at that time because what you're supposed to do, 25:59 you're supposed to buy it when it's nice and tender, 26:01 as soon as it starts getting just a little soft, 26:03 EAT IT AT THAT TIME! 26:05 Don't wait until it gets juicy, and a lot of times 26:07 we don't just eat one... 26:09 We buy like 3 or 4 of them and we wait until they're 26:12 just right and the whole corner 26:13 of the kitchen smells like Jamaica or Trinidad 26:16 or something like that, and then what do we do? 26:18 We go and we grab the 3 or 4 and we just eat and eat 26:20 and there's just stuff dropping all over our body, 26:23 and stuff is we are eating too much, 26:25 and we're waiting too late for it. 26:27 So go ahead and get it as soon as it goes from hard 26:30 to nice and tender, then that's a good time to eat it. 26:33 So enjoy the mangos, but please 26:35 follow your doctor's instructions. 26:37 And, there's only two other items that we have here 26:40 that we're going to add to the detoxifying salad and it's kiwi. 26:43 We all know kiwi, kiwi is fantastic, 26:46 excellent for the immune system... 26:48 Also, it has what is know as soluble fiber. 26:51 Let me repeat that, a lot of times we all remember 26:54 fiber, you know, like the wheat and stuff like that; 26:56 it's indigestible, right? 26:58 Because it swells up - that's where you get full 27:00 when you eat like a whole bunch of brown rice, 27:02 but when you eat white rice, you don't really get full, 27:04 and we'll talk about that another time. 27:05 But it has what is known as soluble fiber. 27:08 So this goes ahead and breaks down, 27:10 and it helps to clean the body, 27:12 and stimulates the immune system. 27:13 So we're going to put some kiwi in here, 27:16 oh man, this is looking good! 27:18 I'm starting to enjoy this, and then we'll take 27:20 the pineapple and put that in here as well. 27:24 Also good for people dealing with, as I said before, 27:28 digestive tract disorders. 27:30 Now I'm going to get a nice little spoon; 27:32 we're going to mix these items up and just mix it there. 27:36 Don't worry about the mess or anything. 27:37 The only thing is that those bananas 27:39 will turn brown sometimes. 27:41 So you take a little bit of that pineapple juice that you have 27:43 from your fresh cut pineapple and you rub that 27:47 or you put that right over there - no worries. 27:49 And then you have this ready for the family, 27:52 and everybody can truly be fresh and clean inside and out. 27:56 God bless you all. |
