Well stay tuned while Evita Tezeno 00:07 and yours truly Nyse Collins shows you just how to do it 00:10 and give you something better a Taste of Paradise 00:29 Welcome to a Taste of Paradise My name is Evita Tezeno 00:33 and today we're going to make a vegan raw Manicotti 00:40 with an herb tomato sauce. 00:43 This is delicious 00:46 and here's the recipe 01:01 So what we're going to do is take a zucchini 01:06 and take the ends off of it 01:09 and this is another one of my favorite tools 01:13 it's called a Mandolin 01:16 and no, you can't play it. You use it as a kitchen tool. 01:22 What you do is you use the Mandolin as a cutting tool 01:30 and it makes these beautiful zucchini noodles 01:35 and this is what you're going to use as a shell 01:40 for the manicotti 01:44 So in a dish you take the zucchini. Place it in here 01:51 the night before and sprinkle salt and oil on it 01:56 and it becomes very, very pliable. 02:00 So we set this aside and now we're going to begin with 02:07 the cream sauce that goes inside of the manicotti 02:16 The recipe for the filling 02:49 So we start with the sunflower seeds 02:57 We process these 03:12 Water 03:15 Italian spices 03:18 Nutritional Yeast 03:22 Olive oil 03:24 Salt 03:27 And we're going to garlic press 03:30 use the garlic press to press out garlic 03:38 Garlic is a wonderful cure. You can use it when you have a cold 03:46 It makes food very, very delicious 03:49 and I love lots of garlic in my food 03:53 So we want to process this again 04:05 And now we want to start adding spinach a little bit at a time 04:30 This is another way to get your pounds of greens in a day 04:33 Spinach is high in iron. It has lots of calcium 04:51 And I need to get a spoon 04:57 to encourage it along 05:29 That's the last of the spinach 05:51 Oh this smells divine. Look at it. Isn't this beautiful? 05:57 It's so nice and creamy 06:00 Wow, I can't wait. 06:02 So for the next recipe the herb sauce 07:00 So we're going to begin our sauce 07:06 These are red bell peppers 07:09 Chopped tomatoes 07:13 Sun dried tomatoes 07:16 Fresh oregano, Mmm love it 07:20 Italian parsley 07:24 Basil 07:27 And that's what amazing about Italian food, it's loaded 07:30 with so many different herbs 07:32 This is cayenne 07:35 Thyme and olive oil completes the recipe 07:43 And garlic and sea salt 07:47 And then we process 08:18 Now we add the water from the soaked dried tomatoes 08:34 So now let's put it all together 08:50 So we have the zucchini that's been soaking overnight 08:57 And let's get our plate ready 09:03 And we're going to use these as the noodles 09:09 We line them up 09:13 Get a little of the filling. Oh this is going to be so delicious 09:19 And we roll it like this 09:23 See how easy that is 09:25 That's pretty and you want to put the uh uh 09:29 the inside down and continue 09:35 And what's so regular Italian food is you usually use 09:42 processed flour for the noodles and this is all vegetable 09:50 you don't have to worry about getting fat from it 09:58 cause with all those carbo hydrates, this is straight plant 10:04 This is just wonderful 10:10 So we continue rolling it 10:23 We add our wonderful herb sauce 10:34 Doesn't that look wonderful? Look at the colors 10:37 And it smells amazing. And then we take a little hemp seed 10:44 and we garnish it 10:49 I'm ready to eat this right now. This is so, doesn't it look good 10:55 This is a fabulous dish. It's fresh, it's Italian 11:01 Even your kids would love it. Remember, live life fresh! 11:14 Are you stressed out? 11:16 Is life actin like, or feelin like it's just all crumblin 11:20 down on you? And you're like how do I get myself out of this 11:24 stress? This is going wrong, that is going wrong 11:26 it almost seems like nothing is going right 11:28 Well I've felt that way sometimes too 11:31 and sometimes, let's say it's stress or people dealing with 11:35 different situations, what is normally the thing that we go 11:38 to? What gives us that comfort besides God we hope will 11:42 be the number one, a person that we go to 11:44 but many times when we go to something, we end up going to 11:48 something alright and it ends up being dessert. 11:51 Have you ever realized stressed spelled backwards is dessert? 11:55 That's what I just realized myself. And it kinda makes 12:00 sense. You ever notice like if a girl, her heart is broken or 12:03 something like that? Who does call? She don't call Mom or 12:05 Dad or a pastor or anything she calls on a supermarket 12:09 and she picks up a big pint or quart of what? Ice-cream 12:13 One in particular, chocolate ice-cream 12:15 It shows that some of the chemicals in the ice-cream 12:21 gives you the spirit of like you know what, everything's ok 12:26 Lemme have some more. And as a result we get through the stress 12:30 tentatively, the problem is never really solved, but we 12:33 get through it and we start to become dependent. 12:35 Oh I don't feel good today this life is going crazy 12:38 give me another one. And if you notice sometimes we walk 12:40 in our clients house and they're dealing with a lot of stress 12:43 and stuff. The reason I can share these testimonies with you 12:45 is cause they said, tell every body and we go to the fridge 12:47 and like the fridge is empty but you know what's stacked to brim? 12:51 The freezer. Ice cream this, dessert that and pastry this 12:55 and so what we're gonna do now we're gonna de-stress ourselves 12:59 by the grace of God but we're going to do it using desserts 13:02 So today we're gonna have some de-stressert cookies which is 13:07 fantastic and a lot of people enjoy them. But the key is even 13:10 before we get to the cookies cause these cookies are 13:12 amazing without the chemicals that may give us the sense of 13:15 false sense of good feeling and stuff of that nature 13:20 but we're gonna use other ones that are really good for us 13:24 So not only are we first gonna tackle stress head on 13:27 we're also gonna fill in the little blanks, the little empty 13:31 spots in there also. And you know what I was lookin at 13:34 one person reminded me of this the other day when I was talkin 13:38 to them they said, there's probably a reason why they 13:41 enjoy the food and the drug administration, you know what 13:44 I mean cause food sometimes works like a drug and you may 13:47 have seen it on other programs that people when they're goin 13:50 through different situations they go to those comfort foods 13:53 they go to this, they go to that and as a result 13:55 they start addin on those blessings. And you say man 13:57 what happened along the way? You know, should we change 14:00 the diet? You know people say I want to balance my blessings 14:03 aka, lose weight or something and you know I wanna do it but 14:06 we always try to ask them, where did this start? And they say, oh 14:09 I went through a rough time and unfortunately sometimes I may 14:12 have been bored, sometimes it may have been a break up 14:14 maybe the loss of a job, maybe the loss of a loved one 14:17 or something of that nature. I went through a hard time 14:20 a stressful time and I ended up that's when it all started. 14:24 So what we're gonna do, we're gonna look at some tips here 14:27 for how to combat, how to combat stress because stress 14:32 is like really knocking people out. A lot of people don't 14:35 talk about stress discouragement not only that, depression 14:39 as well. Matter of fact they were showin a couple of surveys 14:42 they were showin in one church something of that nature, 14:44 like almost 60% of women were depressed at one point 14:48 or another. Thank the Lord they didn't study the men because 14:51 the men would've probably been 99%. We just don't admit it. 14:54 So women don't worry about it. Men do deal with this situation 14:58 but they try to hide it and stuff of that nature. Depression 15:01 is a huge thing but nobody talks about it. Yeah I have 15:04 high blood pressure, I have high cholesterol, but you never 15:07 hear anybody saying, yeah I'm depressed. Yeah I'm stressed out 15:10 because it's kind of taboo you know. Nobody really wants to 15:14 talk about it but everybody is dealing with it in one way or 15:17 another. It just almost seems like it's a part of life. 15:20 So I wanna share with you just 4 little points. We have 2 15:22 recipes today that we're gonna give you all. One is gonna be 15:25 for our de-stresser cookies but this one I think is even more 15:30 important. How to tackle stress So get your pen, your paper 15:33 and let's write it down and we're gonna put it up here 15:35 for you. Simple way to tackle stress. 15:41 What is the cause of the problem? 15:50 What are we gonna do, we're gonna face it head on. 15:52 None of this goin around the corner and takin the long route 16:00 A lot of times when it's not handled, when we don't face it 16:03 head on, we take the scenic route around our problems 16:06 what happens? We start to worry and we really don't recognize 16:10 that we're in the situation and it's called aka denial 16:13 And one last tip and the most important. 16:16 We saved the best for last. 16:21 So I'm gonna go through it one more time. 16:34 If you actually look at those simple principles 16:37 it's almost like the path to salvation if I can say so. 16:41 We have to realize where we are in our state, 16:44 in our sinful state probably, and slowly but surely 16:48 we have to face it head on, we can't be in denial and say 16:50 I got this under control, because we don't. We can't do it 16:54 on our own and we have to recognize that you know what 16:57 sometimes it's really causin a problem. We look at a lot of 17:02 ailments and different diseases and stuff of that nature 17:05 the key, the key where all, not all, but where a lot of it 17:09 starts is right here, stress how we handle situations 17:13 we try to handle it on our own. There's a little writin 17:16 that says disease basically is nature's way of tellin us that 17:21 we have violated the law of health and the simple principle 17:23 to help us trust in God. So when we don't trust in God 17:26 try to take everything on our shoulder and try to handle it 17:29 and it doesn't work. Doesn't work. So what we gonna do? 17:32 We gonna start trusting in God and you know what the Lord does 17:36 He forgives us of our sins and we let it go. 17:39 But I'll tell you this and I have to share this with you 17:41 There's this little situation that always comes to remind you 17:46 of what you've done. That's it y'all. You did your part 17:50 realized where we went wrong, we made it right. 17:52 You know in stressful situations it could be our jobs. A lot of 17:55 times people are saying I have to work so hard, it's stressin 17:58 me out. But when we get to the root of the problem 18:01 when we look at the real trigger well, I sat down with a client 18:05 they were stressed out. What do we do Nyse? 18:07 I said, well let's look at some principles. What is the trigger? 18:10 Well we have to work so hard. Why do we work so hard? 18:13 Well we have to pay bills. What's the next question? 18:16 Trying to ascertain what the true cause is. 18:18 They said, well we have this house to pay, this car to pay 18:21 So why do we have so much debt? When we looked at it and started 18:26 diggin, we're tryin to find the true cause to know their trigger 18:29 you know what, I said why did you buy this 7 bedroom home 18:32 and you're only using two. 18:35 Why do we have to drive the newest car on the market 18:38 matter of fact we're in 2000 some odd years and they drivin 18:42 2000 and the next decade car. Cars two years in advance 18:47 Why do we need this? And you know what they said? 18:49 My sister lives in this neighborhood. 18:52 My friend drives this kind of car. 18:56 These are the newest shoes or the newest bag, or 19:01 for us guys the newest machine. And what we realize is we're 19:07 trying to keep up with the Jones'. 19:09 The James', the Bobs' you name it, Regies, who knows? 19:12 You know we're always tryin to keep up with these people 19:15 But let's let it go cause we're gonna trust in God 19:17 and He's gonna help us. Now that was good. 19:19 But y'all are like, come on, Alright, alright I understand 19:22 But I would like some des, you're ready for this? 19:26 De-stresserts cookies! 19:29 Are you ready for the destressert cookies, the healthy 19:32 ones? We're not gonna go for the chocolate chip 19:33 We're gonna go for the de-stresser cookies 19:35 Get your pen and write this down it's really simple to help us 20:11 That's the recipe here. I want y'all to get this because this 20:15 one is dangerously good for you. 20:17 Now that means it's so good that you may eat too much 20:20 and we want you to be temperate in all things. 20:22 Notice as well we put vanilla as optional and we really don't 20:26 use it here. Now vanilla is phenomenal but it works as a 20:29 little stimulant. So for a person who has high cholesterol 20:31 as it stimulates, it stimulates the gall bladder 20:34 the gall bladder empties the bile and that means your liver 20:38 should reproduce more bile and a person who has high cholesterol 20:41 you don't want that to happen but vanilla is fantastic 20:43 if you want to use it, great. What I like to do 20:46 is I like to add a little extra honey, maple syrup or something 20:49 something of that nature. So let's get to this dessert cause 20:52 I want some de-stresser cookies All we have to do is take the 20:57 walnuts ok. So we take the ground walnuts. You buy regular 21:02 walnuts. These are reasonably priced in the store and I'll 21:04 tell you about these walnuts here in a second 21:06 They're amazingly good for you and as a matter of fact 21:09 I'll tell you right now as I stir this. 21:12 Which organ of the body does the walnut look like? 21:18 You got it, it looks like the brain. 21:19 So which organ of the body is it good for? 21:22 It's good for the brain. Simple easy now don't start grabbin 21:25 different fruits, hey this looks like my kidney so maybe 21:28 it's good for the kidney and start adding stuff up. 21:30 Please let your doctor know if you have a problem 21:32 don't try to look at a certain fruit or veggie and compare them 21:35 and start eatin it. But that's one little neat thing to share 21:39 So here's the walnut and one other brain food good for us 21:45 linseed or flax seed as many call it as well 21:50 This has been ground. I want to encourage you we're not gonna 21:54 buy the already ground, we're gonna buy the whole seed 21:58 actually and grind it ourselves. Many times you may see flaxseed 22:02 oil. We're not sayin it real bad or anything, it's good but not 22:07 as good as fresh. You see what happens is if you leave the oil 22:11 there too long it will go rancid quite easily. That's why if you 22:15 notice when you go to the health food store 22:17 and they have the flaxseed oil it's usually in the refrigerator 22:22 cause it has to keep cool. Why? Cause it spoils, it goes rancid 22:25 and will cause another problem as a result. 22:28 So I encourage people because those are kind of expensive 22:31 you know what I'm talkin about. They're a little pricey 22:33 I encourage you to just buy the flaxseed itself, just the whole 22:37 flaxseed and bring it home and grind it in a coffee grinder 22:40 or if you have a blender put a good amount in the blender 22:42 and blend it dry ok, blend it dry and you should be fine 22:47 and it's the cheapest thing around. You make enough 22:49 put it in a glass jar stick it in the fridge, use it for the 22:52 week and next week just make a new batch. Alright, So save 22:55 yourself some money and enjoy it that way, ok? 22:57 Then we're gonna take some whole wheat pastry flour 23:02 As you see here I'm tryin to do this first, I'm gonna mix 23:05 all my dry ingredients. Then I have a little salt, sea salt 23:11 which is necessary for flavor as well. A lot of people do this 23:16 no salt diets and they give us a call, I don't do any salt 23:20 at all and they wonder why their neck is swollen and stuff 23:23 You know what that is? That's goiter. Okay? 23:26 In general. But ask your physician first and that's 23:30 cause when you pull all salt out as a result you're missin 23:33 on a very necessary element called Iodine. So a little salt 23:38 is not gonna hurt anybody. Now we're gonna add some carob chips 23:41 These are very nice and take the place of chocolate chips 23:46 If you wanna use it, great. If you don't have it doesn't mean 23:50 you cannot do the recipe. You continue still. This is just a 23:56 how could I put it? 24:00 It's just for appearance purpose and yes, carobs do taste nice 24:03 Let me call a time out real quick 24:05 A lot of people are tryin to replace chocolate with carob 24:07 It's not the same. I'm just being honest with y'all 24:09 A lot of times people replace stuff hey it tastes just as good 24:13 Nothing can taste like chocolate I remember I was working 24:15 with a client who said if chocolate is no good for you 24:18 I'm not going to use it at all. Somebody's like try carob 24:20 He said if it looks like the real thing and kinda smells like 24:24 the real thing, it better be the real thing. Don't give me no 24:27 perpetrators. I said, ouch! You know what I mean? 24:29 And so I left him alone there and he doesn't use any of it 24:33 but it's good, enjoy it. We're gonna put some honey in there 24:36 Ok? So we're gonna add the honey to this and we're gonna 24:41 go ahead and finish it up with a nice little serving there 24:46 of the maple syrup. I'm gonna pour this in 24:50 You can use Agave Nectar, you can use any of these items 24:54 these are just sweeteners. If you don't like it too sweet 24:57 not a problem, not a problem if you don't like it too sweet 25:01 you just put less. So just mix that up nicely 25:05 get your hands in it, get the kids cooking with you 25:09 get the kids cookin along. I'm having a blast over here 25:12 movin this thing all over the place and these are gonna be 25:16 delicious, delicious cookies. As you see I'm makin a mess 25:20 but hey we're in the kitchen. Who's keepin track of this here 25:22 Let's look at the linseed or the flaxseed and the walnuts 25:29 I wanna tell you something really important about those 25:31 The reason why they're so good for de-stressin and good for 25:34 the mind, depression, anxiety disorders and other items 25:39 is because they provide, those together provide your omega 3 25:43 6, 9. I mean they're amazing items. A lot of people say 25:48 Well, do I have to buy fish oil or this oil or that oil 25:51 you already have it right here in this cookie. Who knew 25:54 this cookie would be so good it could provide all of those 25:58 benefits for you. So you mix it up nicely 26:02 there, and oh let me tell you about the fish oil s well. Hey 26:05 if it comes from an animal that has a liver so you gonna 26:08 notice that it may have some cholesterol in it 26:12 So there you go. See a nice little batter there? 26:16 And then you just make cookies. Easiest thing to do even if you 26:20 don't want to get your hands dirty but it's almost possible 26:23 You could get your little cookie cutter, you could lay it out 26:26 there, I like little biscuits. Not biscuits but you know what 26:31 I'm talkin about. If you wanna make a candy bar you can do so 26:35 I'll show you how to do a candy bar. 26:37 Just make it long and you have a candy bar! 26:40 Don't expect these to rise or anything of that nature 26:43 Here's my little candy bar 26:47 because we didn't put other items in it. But these don't 26:50 need to rise, they're fantastic. So I have a little drop there 26:53 Here's another one. If you wanna make it round you just 26:58 take a top of something and you make it round 27:03 And so, all of this is so good. In fact one lady says, I can't 27:07 wait for these to bake because.. We're gonna go ahead and we're 27:10 gonna stick this in the oven at about 350 or something like that 27:16 She said, I couldn't wait till they were finished 27:18 I said, what do you mean? She said before they even got 27:22 got into the oven I ate half of the mix already! 27:25 I said no problem. Most of these items you eat normally that way 27:29 So enjoy yourself. And at the same time what's she doing 27:33 She has a de-stressert. Some thing that we all can enjoy 27:37 Well let me show you a finished product. As you see when I 27:40 was behind the scenes I did one nice little round and simple 27:46 type of cookie there that we all can have and I think 27:50 everybody would enjoy it. Matter of fact if you're 27:52 stressed out, you need something to eat, you want something to 27:54 feel good about, go ahead and have a de-stresser cookie. 27:58 And you will definitely enjoy it |
