00:34 And today we're going to be making an Eggplant Bacon
00:40 And I have a special guest today. I have my friend
00:44 Yvonne Lewis. Hey Evita, Hi, how you doing?
00:50 I'm so glad to be here. I'm not the queen of the kitchen ok
00:53 Ok. So to observe how you do the raw food thing, I'm excited.
00:58 And I bought some eggplant recently. Really?
01:01 And I don't know what to do with it. So show me.
01:03 Well a lot of people don't know what to do with eggplant
01:06 So this is a quick and easy way to get eggplant in your diet.
01:11 Because you know I teach "Eat the Rainbow"
01:15 So here you get a chance to eat a purple item
01:19 Purple food item. What does that do?
01:23 It has Vitamin E, Vitamin K
01:27 And also it has the white flesh as well
01:32 It has Vitamin C in it. Oh good!
01:35 We're going to start off by peeling our eggplant
01:41 And do you always peel it or...
01:44 do you sometimes leave the peel in on it?
01:46 When you're doing raw you have to peel it because it gets
01:49 like leather. Oh ok. Because we're gonna dehydrate the recipe
01:53 So you have to peel it in order to use the flesh inside
01:58 It's kind of a stubborn thing to peel. So we gonna just
02:05 peel it like so.
02:08 Is there anything you do with the peel or discard it?
02:12 Just throw it away. Oh ok.
02:13 Yeah, there's nothing you can do with the peel.
02:17 So we gonna, we're almost done peeling it and we gonna take
02:21 the top of it off. We're gonna discard that.
02:25 And we're using the tool, this is called the Mandolin
02:30 Ah. Oh I've seen you use it. Yes.
02:33 And it gives you even slices.
02:44 And you just do it like that and you see the slices there?
02:47 Yeah. This is pretty amazing.
02:51 This eggplant is a little stubborn. Uh huh.
02:55 You've got to coax it along.
03:01 I don't know recently I've been kinda craving eggplant. Really?
03:05 Yeah I love it, and cook some with onions, garlic
03:11 Oh yeah. I love that.
03:16 And of course you can make a vegan cheese
03:18 and eggplant parmesan. Of course we're talking raw now
03:21 Yes, let me go back to raw
03:24 Let's come back to raw please.
03:27 Well we have our eggplant. Uh huh
03:29 And it's real thin. It's very thin.
03:33 And you know I forgot my cutting board
03:38 So I'm gonna use this. Sure, sure.
03:42 So we have to improvise. We're gonna improvise
03:46 We're going to use the container we're going to marinate it in
03:52 Okay. So we just take the eggplant and we stack it
03:57 and we cut it in halves.
03:59 Because we want it to resemble bacon.
04:02 Oh ok. Yeah. We want it to resemble it.
04:05 So we put the eggplant in here
04:09 And you said bacon, you have a recipe for this?
04:12 Oh yes. The ingredients for the eggplant bacon
04:45 Now we're gonna use my favorite tool the Vitamix
04:48 If you don't have a Vitamix you can use a blender
04:53 but you have to blend it a little longer
05:00 Now the chipotle pepper, what does that do?
05:02 Does it make it hot, or It makes it hot and smoky
05:06 Oh. This is uh...because I use some ingredients
05:10 that are not raw, this is one of the ingredients that is not
05:14 This is a smoked, red jalapeno pepper.
05:19 And it has been smoked and dried
05:21 I'm going to salivate (laughter)
05:25 We should get a tissue or something...
05:28 And we have maple syrup and this gives it a kinda sweet taste
05:34 Right. So you have the sweet smoky thing going on?
05:37 Sweet and salty, just like bacon
05:40 Ok, ok. But an animal didn't have to die.
05:46 And we use this chipotle pepper
05:49 Can you get that from just a regular store?
05:52 Yes you could get dried chipotle peppers from a regular store
05:57 We have olive oil
06:01 This is cumin, mmm
06:09 smoked paprika
06:11 And garlic
06:14 Can't forget the garlic, uh huh
06:16 It's a great, great ingredient
06:33 Now this is a real quick recipe. You see we just blend it
06:36 You just pour the marinade over
06:43 And I always like to get my fingers in the food
06:47 So you want to make sure it's all distributed
06:55 Just in case the viewers don't know, you always wash your hands
06:59 Yes, you always wash your hands
07:04 I keep soap and water and always wash my hands.
07:09 Because you know some viewers are kind of...yeah, yeah
07:13 I guess you can use some tongs if you don't wanna put your hand
07:18 But you know I love to put my hands in the food.
07:22 So you want to make sure that you marinate, you cover every
07:28 slice with the chipotle mixture
07:34 and you want to cover this and put it in the fridge overnight
07:37 So good right now. Yes, okay
07:39 You stick this in the fridge overnight
07:49 The next day you get a dehydrator sheet
07:54 and then you lay, one strip at a time. Okay
07:58 on the dehydrator sheet. You want to dehydrate it overnight
08:04 So let me get it straight in my head. So you put it in the
08:07 refrigerator one night. And then the next night
08:10 And the next day you dehydrate it. So you could do it in the
08:15 evening before you go to bed and make sure that
08:19 you put it in the refrigerator and when you wake up in the
08:23 morning, right before you go to work you can stick this
08:26 in the dehydrator. Ok. And it can dehydrate all day while
08:30 you're at work. Ok, good. If you can you do that
08:33 Because the energy with the dehydrator is very low
08:36 Very very low. The energy usage is very low.
08:41 And it doesn't pull a lot of energy. Okay
08:44 So after it has been dehydrating overnight
08:47 Look at that! Does that look like it or what?
08:52 Okay. Can you taste this?
08:54 Now, come on you know me You know I do want to taste
08:58 Here you go, taste it, taste it
09:04 Mmmm, and its chewy. You're gonna like that.
09:12 Now guess what I made? What did you make?
09:15 Come on, made a sandwich
09:19 Oh this is good. I can see me snacking on this
09:24 When you want a little spicy snack
09:26 If you're traveling, because it's dehydrated
09:31 it doesn't have to be refrigerated. So you could put
09:34 it in a zip lock bag and it could be like jerky.
09:36 Like jerky, like jerky
09:38 This is, you know what? The viewers need to know
09:41 that the crew, after we do all these segments the crew comes in
09:46 alright so I'm getting first dibs at this.
09:48 Laughter. I just want the crew to know.

09:52 Oh this is so good. I want another piece.
09:57 I've made a sandwich. In one of our previous episodes

10:03 and so I made it ELT instead of BLT

10:10 Oh that is so neat. You can put a cashew mayo
10:15 on here, or you could put some raw cheese that I made in the
10:18 previous episode and you have a sandwich.
10:21 That's awesome. This is all plant based
10:24 Gluten free and it's delicious

10:55 Breakfast, never leave home without it.
10:59 You know there's a lot of credit cards out there
11:01 they say you shouldn't leave without them
11:02 That's maybe because they want you to eat breakfast out there
11:05 and use your money. But you should eat at home
11:07 Breakfast is the most important meal of the day.
11:10 We already know that. It's nothing new but many times
11:12 what do we do? We skip breakfast and as a result we suffer
11:16 throughout the day. So none of that anymore. Today we gonna do
11:19 something special. You've already seen a fantastic
11:22 recipe. No more of this you need to go and buy bacon
11:26 some use Turkey Bacon I know what you talkin about
11:28 But today we gonna do something special to add on to that
11:32 Evita did the ELT or the bacon the eggplant bacon. Now we
11:40 gonna go ahead. You just can't have the bacon alone, you need
11:42 some eggs to go along with that
11:43 So we have a special recipe. But let me get back to this
11:46 breakfast thing. Because this is crucial, crucial, crucial
11:49 A lot of times we wonder why we can't balance our blessing
11:53 Y'all know what that means. We don't say nobody is fat
11:56 or skinny. Some are over blessed and some are under blessed
11:59 And we try this diet and we're good for two weeks and we
12:03 crash and we're in the same situation probably if not worse
12:06 Then we try this, we buy this new machine and we do this
12:10 and we do that and nothing seems to work.
12:12 Well you know what the information is free
12:14 Like I said you already know it.
12:16 If you just start having breakfast
12:19 Everything will be added or taken away from you
12:23 You know what I'm talkin about, right?
12:24 So what we wanna do is focus on that and why is breakfast
12:27 so crucial. It's almost like when you're about to drive
12:30 your car to work. Let's say the car is on empty
12:35 When do you put gas in the car? Do you put it when you
12:37 get to work or do you put it on your way to work?
12:41 Now everybody's like come on Nyse are you kidding me
12:43 what kinda question is that? It's like the worst question
12:45 around town. Because if we don't put it in on our way there, we
12:49 may never make it there. Hello. That means we're actually
12:53 taking better care of our cars then we're taking care of
12:56 this body. At least if I go, if I don't put gas in the car
13:01 y'know some of y'all. You live kinda on that E line whatever
13:05 and I'm talkin about myself to be honest with you
13:07 I just keep drivin. For some reason I think like I'm just
13:10 gonna, I guess it's a challenge for me. How long can I drive
13:13 on E, you know what I mean?
13:14 And a lot of us are driving on E all the time.
13:17 Well let's say we did run out of gas in our car
13:19 We'll call up Roadside Service or something of that nature
13:22 or your friend, your buddy. Hey come and get me.
13:24 Yes they will be inconvenienced a little bit but you'll get
13:27 right back and rollin. Now let me tell you something here
13:30 When this runs out of gas there's no call roadside service
13:35 call a friend anymore. It's call 911.
13:39 And unfortunately that body doesn't work like the car
13:43 Let's say the car was messed up
13:45 You can always buy another one and replace it.
13:47 But this here, you can't buy another one.
13:49 It's already been paid for you. But what we need to do is take
13:52 care of it. And how do we do that? Let's focus
13:56 You know how we're like supposed to spend time with God
13:58 every morning? Spiritual food is the most important thing
14:00 If you don't do that what's gonna happen? You find yourself
14:03 angry at people, no patience, no love or anything of that
14:05 nature. It's the same thing with breakfast. You miss out on
14:08 on breakfast and all of a sudden donuts seem like the best thing
14:11 around town. You miss breakfast you're livin by the vending
14:14 machine. You miss breakfast, you're stopping by every
14:15 fast food spot on the road. And so as a result we need to
14:20 we need to focus on this. Also what happens because you
14:24 miss that energy in the morning you're gonna start doin this
14:27 all throughout the day. You know eatin all the time a lot
14:30 of snacks and stuff of that nature.
14:31 One of my friends shared this with me. He says, there's only
14:34 one or two animals that eat and snack all day and they
14:37 hang out on the farm. He says if you snack all day you end up
14:40 looking like a what? Did I hear somebody say cow? No I didn't
14:44 say it, you all said that. But what happens is, as a result
14:48 if you look to balance your blessings what you need to do
14:51 is have set meal times, especially breakfast
14:54 put the gas in properly, you know what I'm talkin about
14:56 the fuel for the day, and then space out your meals
15:00 5-6 hours, some say 4 but just follow the principles
15:04 there and do not eat in between the meals. Drink what? Water
15:08 But the key is breakfast again We need to do this.
15:11 So what're we gonna do? We gonna add a little extra
15:14 we're gonna add some protein to that there. We already got
15:17 the eggplant bacon and so we're gonna do a fantastic recipe
15:20 And it's called Scrambled T'eggs.
15:24 Y'all know what I'm talkin about? Scrambled T'eggs
15:26 Yes, not eggs but scrambled T'eggs. Tofu
16:07 And it's real simple. Everybody can do this. You can knock it
16:10 out in several minutes but I know some people like, what?
16:13 Tofu? I'm just tired of this Tofu stuff. As a matter of fact
16:17 I just read this thing and some body said, it's no good for you
16:20 it's causing this problem and it's causing that problem
16:22 Well I'm going to call a time out.
16:24 I'm done with this 'he said, she said' stuff
16:27 Everybody's sayin somethin these days
16:29 Why don't we start studying for ourselves because as a matter
16:31 of fact you'll find out that soy is one of the best beans
16:36 we call it a super legume. That means it is like fantastic
16:40 like nothing could mess with it. This thing is amazin
16:43 And so tofu is actually pretty good for you. But there's an old
16:47 sayin, when in doubt leave it out and I'm gonna explain
16:50 and as we start cookin here I'm gonna tell you a little
16:52 bit about tofu to get rid of these myths and different items
16:57 then don't even take my word for it go and study for yourself
17:00 But let's at least get the recipe going
17:02 I know we'll talk a little bit more. All you wanna do
17:05 is get your nice, good tofu here and you wanna kinda dry
17:09 it out a little bit and you all know how to do this. You can do
17:12 with this, you can do it with a nice clean cloth. You wanna get
17:15 as much of the moisture out as you see.
17:19 And this will actually cut down your cooking time cause a lot
17:22 of the time that it takes to make the scrambled t'eggs
17:25 Yes scrambled t'eggs not scrambled eggs
17:27 A lot of times we've been using the regular names and
17:31 I fool people. People don't like to be fooled
17:33 Tell 'em it's different alright?
17:34 And what you do is you take this and you see this is extra firm
17:39 one. Extra firm tofu, look at that. I could even do a little
17:42 exercise with it here. I know y'all don't want my hands
17:45 all over your food but that's alright, this is mine today.
17:47 you make your own at home. What you do is you take that and
17:51 you crumble it ok? We gonna crumble it over and eventually
17:56 I'll go ahead and turn on the fire here
17:59 So you get what you crumbled that over so it's nice and
18:04 look at me havin a blast, have the kids in here
18:06 They're gonna love this. You're gonna have tofu all over
18:08 the place but that's alright, as long as they're having fun
18:12 So you go ahead, you get that nice and, ah here's my item
18:17 then we gonna get this fire going because this is crucial
18:21 what you wanna do, get the heat a little high.
18:24 If you can have a non stick pan. If you don't have one no problem
18:27 What you do if you don't have that non stick pan, you just
18:29 go ahead and take that nice little oil, this is olive oil
18:33 you put that right there
18:35 uh you get that rolling. What you want is to get the excess
18:40 moisture out. Now because I've squeezed, as you see, most of
18:43 that liquid out you don't have to worry about it, this is gonna
18:46 actually cook pretty fast. Who knows maybe even before we're
18:49 done. But I already did one in advance for you all, so you
18:52 gonna get that goin. Then a quick little tip that we can
18:56 start usin, as you know, people will say, well tofu don't have
19:00 no taste. Well obviously it's just tofu. But that's actually
19:04 a good thing. Why is that a good thing?
19:05 Because you could give it whatever flavor you want.
19:08 If you know a lot of foods that we use
19:10 they have their own flavor and now you don't have to worry
19:14 about this because if you want something sweet, if you want
19:16 something savory, if you like it this way or that way
19:19 Tofu is fantastic because it takes on whatever flavor
19:22 you give it. And so what we gonna do, because it takes
19:27 a little time to, how can I put it? Because it takes a
19:31 little time to take that flavor what you gonna do is just add
19:36 a little pinch of salt ok, so I'm gonna put a pinch of salt
19:38 just to get that going so it can soak and saturate into it.
19:43 I know I could give you, say 1 teaspoon or whatever, we already
19:46 said how much it needs but just get that going early
19:50 ok? You wanna get that goin early so it can start to soak in
19:55 Another thing that we wanna do gettin it rolling early
19:58 is the other seasonings, ok? What we've done is
20:02 I've just taken all the seasonings and just mixed it all
20:04 up in advance. You could separate seasonings
20:08 But what happens is, how can I put it, if you don't add it
20:13 properly you're gonna get like a bunch of nutritional yeast
20:16 in one spot. So I like to mix all of my dry ingredients up
20:20 first, these are dry ingredients so I mix that up, if you notice
20:24 I went ahead and left out the turmeric cause I wanna put that
20:28 in early so I can get that color
20:30 Here's a quick little item if you noticed. Sometimes
20:33 you know you're rushin and you're cookin and
20:36 it's like the, the, the air is like comin up and the
20:41 moisture is comin up, so here's a little quick thing I do
20:43 when I add it I just go around and spin a little bit
20:46 now why am I doin that? Because when the humidity gets in
20:51 so your bottle you know next time you go back for the
20:54 turmeric or you go back for the salt it's all stuck and you're
20:57 like bangin it and doing all these crazy stuff. It's because
21:00 that air went in. So as I moved around now don't do this at home
21:03 but it's just a little thing that I do.
21:05 Quick fun, a little item that you can try as well
21:08 Just make sure the kids are not around. You don't wanna
21:10 knock anybody and burn them neither.
21:13 So get that going.
21:17 As you see there this is gonna be delicious.
21:20 And then you take the rest of the dry ingredients
21:24 and we're gonna add that. As a matter of fact these ingredients
21:28 are so good. I'm gonna put some in right now
21:31 Cause I'm gonna add, I want the onion and bell peppers
21:35 to get in there nicely. As you see it's quite a bit, I'm not
21:38 actually gonna put all of it
21:40 You don't have to. You can eve save that. What that basically
21:43 that nice little seasoning that we just did there
21:45 that's basically almost chicken style seasoning.
21:50 So you can keep some of that. Then I'm gonna add onion
21:54 and enjoy it. As a matter of fact add garlic if you want
21:57 red bell peppers, really simple, really easy.
22:03 and you get that goin there. Now the key is you have to let
22:06 this dry out quite a bit ok? So I'm gonna mix it there nicely
22:10 And you have to keep an eye on it of course
22:12 Then I'm gonna add a little extra seasoning there
22:18 Now this is my scrambled t'eggs. Let's get back to this whole
22:21 subject of the tofu and stuff
22:25 Lot of people crying and complaining, ah the tofu has
22:28 this related to female problems it's worsening menopause
22:34 it's causing this or causing that.
22:37 Watch this. Lots of times I have to watch out for different
22:39 studies because the people that they're studying yeah they gave
22:42 them tofu but they're also eatin other animal products
22:44 which have hormones in it as well, the estrogen and different
22:48 items of that nature. But also let's look at what its actually
22:52 good for. It's good for female situations such as menopause
22:59 and the mensies, you know the little monthly situation there
23:03 it's good for the males as well for the prostate, good for heart
23:07 helps a person with arterio sclerosis, high cholesterol
23:13 So this is good for all of those also good for the little ones
23:18 as well but however, you don't want to use soy milk or somethin
23:21 of that nature in place of formula. Lot of people are doin
23:25 that. The best formula is one from the Lord, you know
23:28 you know what I'm talkin about, cover up of course
23:30 that's the best formula a child can have. But it's good for all
23:35 these items. But what we don't wanna do is to say, Oh it's good
23:38 for everything. Let's look at some of the drawbacks it may
23:40 have. Because of its protein content different items of that
23:44 nature, a person who has gout they may not want to use excess
23:48 amount of soy or tofu because of uric acid that can be built up.
23:53 What else maybe a drawback? Sometimes people may have a
23:58 little intestinal situation, you have a little flammable
24:02 situation happening, you know I'm talkin about flatulence
24:05 So some people may find that if they use soy or tofu it may
24:08 cause that problem. So this is true. What else could be, it
24:12 doesn't have Vitamin B12, let's see that usually comes from
24:15 animal products, we're a kind of animal family. So we have micro
24:18 organisms that produce it in our oral cavity, in our mouth
24:21 and our digestive tract. So that's pretty neat. You can get
24:25 that from somewhere else. Vitamin C. Hello I just put
24:28 some red bell peppers in here. Red bell peppers have up to four
24:31 times the amount of Vitamin C than an orange. So that's
24:35 covered as well. But many people say, soy causes allergies
24:39 Let me explain this whole allergy situation real quick
24:43 Now what happens is I'm gonna lower down the flame just a bit
24:48 cause it's cooking nicely here for me. What happens with that
24:53 this is how allergies in general develop. You bring in a foreign
24:57 item and the body develops what is known as immuno globulin
25:03 ok, and so it attaches to that and the next time it sees it
25:06 you have an inflammatory response, you get congested
25:09 you break out in hives and items of that nature. Which nut most
25:13 people have an allergy to? Peanuts, right? Ok.
25:16 Peanuts are like, some people the allergy is so bad all they
25:20 have to do is smell it and they're like breakin out
25:23 sometimes they have a really bad they have anaphylaxic shock
25:26 and they have to get the epi-pen matter of fact one time I was
25:28 flyin from Johannesburg back to Atlanta, Georgia and we got
25:32 on the plane, everybody was sittin down in the big jumbo jet
25:36 and the flight attendant said, hey everybody on the plane
25:40 somebody seated in 32C, obviously we don't know who,
25:44 that is so everybody looked back, has allergy to peanuts
25:49 so what we gonna do, every body 5-10 rows around them
25:53 5-10 rows around them, we're not gonna allow you to use
25:55 peanuts ok? Look at that. Just take a quick look, turnin nice
25:59 and brown there and it's startin to cook properly ok
26:05 So they said, the flight attendant got on, so that person
26:09 in 32C has peanut allergy so everybody 5-10 rows around them
26:13 don't use it. Now why did they say 5-10 rows because that
26:16 person probably has peanut allergies so bad that if they
26:18 just smell it they're in trouble.
26:20 So then everybody's click. Ok poor person. Now we can't eat
26:24 peanuts in that area, right? Here's the funniest thing
26:26 The flight attendant got back on the mic, check this out
26:30 for 10-12 hours we're gonna be over the water, so you know what
26:35 we can't do emergency landing peanuts are banned on the plane
26:39 Everybody's like, oh man, no peanuts cause we're on the plane
26:42 for 15 hours right? So here's the thing that came to my mind
26:45 The reason why a lot of people have peanut allergy is because
26:48 they have been overexposed to peanuts back in the day when
26:52 they were doin candy bars they either buy peanuts for
26:54 a dollar a pound or they can use almonds for $7.99 a pound
26:58 which did they use? Peanuts. Same thing with olive oil
27:01 They could use olive oil for $10 an ounce or peanut oil
27:05 for 50 cents an ounce. Watch closely. This is what happened
27:08 with tofu or soy. They find out soy is so good that they use it
27:13 in everything. And now people are startin to develop allergy
27:15 to it. Let me explain. You wake up in the morning you have bread
27:18 with what kind of butter do you put on it? Soy butter
27:21 You have some scrambled t'eggs made from tofu, then you take
27:24 a smoothie made from soy, then you go to work and have a what
27:28 a soy burger, what kinda cheese do you put on that, soy cheese
27:30 what kinda mayonnaise, soy mayonnaise
27:32 You come home and you have rice with what?
27:35 soy chunks. And then you finish off with a scoop of what?
27:38 Scoop of soy ice cream. So your body says, too much what?
27:42 Soy, I don't want anymore
27:44 So what we need to do is find a balance and moderation
27:47 in everything. And I have a nice finished product for you all
27:50 And this is done and I know you all will enjoy
27:53 some nice scrambled t'eggs. Enjoy, give it a try
27:57 and make sure you eat your breakfast every day.
