00:04 that actually taste good? 00:05 Well, stay tune while Evita Tezeno 00:07 and yours truly Nyse Collins show you 00:09 just how to do it 00:10 and give you something better, A Taste of Paradise. 00:30 Welcome to A Taste of Paradise. 00:33 My name is Evita Tezeno and I'm from Texas, 00:37 and I love Tex-Mex food. 00:40 I just love quesadillas. 00:43 And so when I became vegan, 00:45 I was trying to figure out how am I going to still 00:50 celebrate the taste of Tex-Mex food, 00:53 and have it vegan and raw. 00:57 Well, believe it or not, I did it. 01:00 I came up with a scrumptious recipe 01:03 that is flavorful, have that Latino flair 01:09 and still it's nutritious and great for you. 01:13 I call them Garden of Eden quesadillas. 01:16 So let's go the recipe. 01:19 For the marinated veggies you will need: 01:54 So let's begin. 01:56 These are the veggies, they're so beautiful. 02:02 And you wanna just place them in a bowl. 02:09 And one of my very favorite veggies 02:14 is spinach next to kale. 02:16 So I tried to incorporate spinach and kale 02:20 in all of my dishes, if I can. 02:24 So we're adding the spring onions, the garlic, 02:30 and garlic makes things so flavorful. 02:33 They're just, just add so much wonderful spice to it. 02:39 Lemon juice, the cayenne, 02:43 and the cayenne can be omitted 02:45 if you don't want that extra kick. 02:49 The lemon juice and the sea salt 02:50 combine kind of mix the veggies 02:55 look like they're cooked 02:56 and have the appearance of cooked. 02:59 The cumin and the smoked paprika... 03:07 And you wanna combine these and set these aside. 03:10 Make sure that they are thoroughly mixed. 03:14 And sometimes what you can do 03:16 is you can prepare this overnight 03:21 and they would sit in the fridge, 03:24 so it really gets a real good marinate on it. 03:30 For the next recipe 03:32 we're going to do the tortillas. 03:34 And that recipe is: 04:03 So let's begin. 04:06 This is a very easy recipe 04:09 and you can use it not only for tortillas 04:13 but you can also use them 04:15 for a wrap like a sandwich wrap, 04:19 also you could use this also for your bread, 04:25 like a flat bread. 04:27 And you wanna put the flaxseed in last 04:29 because the flaxseed tends to get gelatinous 04:33 and this is the chopped onions, 04:36 Italian seasoning, sea salt, garlic, 04:42 and we want to put the flaxseed, 04:45 golden flaxseed in last. 04:49 Seems like a lot of ingredients to put in a blender, 04:53 but this blender is a workhorse. 05:20 So after all the ingredients are mixed thoroughly, 05:25 you wanna pour this mixture on a dehydrated sheet. 05:31 I would say about two cups each and you wanna spread it out, 05:36 pretty thin. 05:38 And because of the miracle of television, 05:44 this is what it looks like 05:45 when it's dehydrated after a 12 hours 05:48 and it comes out pretty dry. 05:51 And you have to make sure 05:52 that you don't dehydrate it too long 05:55 or it will get a little cracked on the ends like this one, 05:58 but you could put a little sprinkle or little water on it 06:01 and it will be okay. 06:03 And for the next recipe, we're gonna do the cheese. 06:07 The ingredients for the cheese are: 06:46 So let's make the cheese. 06:49 Cashews, cashews are my favorite nut 06:54 because they make things so creamy and macadamias. 06:58 Yes, they are little pricy but, you know, aren't you worth it? 07:03 You are definitely worth it. And they're so good for you. 07:06 Red bell pepper, 07:09 we have some cayenne, cumin, 07:15 onions chopped. 07:18 Okay. 07:20 And then we put the yeast flakes 07:22 which makes it very cheesy and tahini. 07:28 Tahini is sesame seed butter. 07:32 Sesame seeds that have been grounded down into a paste 07:36 and this gives the cheese the sharp taste. 07:43 Of course, our salt, the minerals, 07:47 Himalayan sea salt, 07:49 and last but not least our water. 07:54 And we give it a thorough blend. 08:30 And now since we have the veggies, the tortillas, 08:35 and the cheese, now we have to assemble them. 08:39 And what we need for them are: 08:49 So what I've done is I've cut the tortillas in strips 08:55 and then I cut them in squares and then I cut them in half. 08:59 So they look just like tortillas. 09:03 So this is amazing. 09:04 So this is what we do, we take the cheese 09:08 and we spread it on the tortilla 09:12 and this smells so good. 09:17 We take some veggies 09:20 and we place them on the tortilla. 09:26 And be careful not to get the liquid 09:28 because the salt and the lemon juice 09:31 has made a great liquid. 09:34 And then you take some more cheese... 09:46 Look at this, this is awesome. 09:51 And what's so cool about these veggies 09:53 that you can use these veggies if you want cooked food, 09:58 if you want some brown rice, 10:00 you could serve these over brown rice. 10:02 You can also wrap them up in a tortilla if you do, 10:07 you know, tortillas. 10:08 So they have a lot of different things 10:10 that you can do with these marinated veggies as well. 10:14 But here you have it, these are Garden of Eden quesadillas. 10:18 You know what? I think that I'm going to sample it. 10:28 Let me tell you, I can't begin to tell you 10:32 how amazing these are, they're so good, delicious. 10:37 Now don't let this recipe intimidate you, 10:39 have a raw quesadilla party, invite some friends over. 10:44 They are so good and remember, 10:49 live life fresh. 11:00 The dynamic duo. 11:02 People are saying, 11:04 "What is this brother talking about now." 11:05 I believe that we have two of the most 11:08 special, special veggies around town. 11:10 You all know, I'm a fruit guy, 11:13 I love fruits and stuff like that 11:14 but also I love my special veggies. 11:17 And there is one in particular that we all know 11:19 and it's talking about the artichoke. 11:21 But people say, "Well, that's just one. 11:22 What are you talking about a dynamic duo?" 11:25 Well it's a second one, 11:27 we consider artichoke to be veggies 11:29 a best kept secret, but we have one 11:32 that is actually artichoke's best friend. 11:34 And I'm gonna share with you here shortly 11:36 because a lot of times 11:38 people are majorly concerned with diabetes. 11:41 And so we're gonna share with you something 11:42 that actually disarms it. 11:44 You know the importance of the artichoke 11:46 and how it destroys any possibility of diabetes. 11:49 But we have his friend that's the backup plan 11:52 that goes ahead and helps out. 11:53 And it's one that like most people are not, you know, 11:57 they don't know or they're not familiar with, 11:59 and so I'll show you that here shortly. 12:02 But as we look at the artichoke 12:04 in terms of its benefits and its properties, 12:07 as you see it looks like the crown, 12:09 I consider it is the crown jewel of veggies, 12:11 the king of veggies. 12:12 Look at those little spikes and stuff like that. 12:15 You can't mess around with this thing. 12:17 This one is a little tired but hey, it is still good. 12:20 You know, what I mean, a lot of people enjoy that one, 12:22 I will share with you, 12:24 we share with you many times over and over again 12:26 how to prepare, you just remove the leaves 12:28 and you can do it fresh, you can cook it, 12:31 and if you stay tuned, now this season, 12:32 I may even show you even simpler way do it. 12:35 You can do it raw, you can roast it, 12:38 you can, you name it, 12:39 you can make a soup out of it as well. 12:42 And this one is good. Why is it good? 12:43 Because it goes ahead and it starts to work 12:45 as a natural diuretic to get out excess fluids, 12:48 so person who has high blood pressure, 12:50 what will that do? 12:51 It now will start to slowly, 12:53 but surely, gently decrease that. 12:54 A person who has increased level of sugar as well, 12:57 you will have a gentle decrease 12:59 because it has a carbohydrate in it called inulin. 13:03 Not insulin, but the what? The inulin. 13:05 So this is very good, very good and a lot of people enjoy that. 13:08 So that is the artichoke. 13:10 But you said, "I wanna know 13:11 what is the artichoke's best friend?" 13:13 We know veggies best kept secret is artichoke. 13:16 But who is the best friend of the artichoke? 13:18 Are you ready? Where's the drum roll? 13:20 All right, here it is and it is called nopal. 13:25 Yes, I'm talking about nopal. Have you ever seen this? 13:28 Many people just call it a cactus 13:30 and that's basically what it is. 13:31 Look at that thing. It is, look at... 13:33 this thing is dangerous right over here. 13:35 Be careful. 13:37 A lot of times we may see in specialty markets, 13:41 in particular international markets 13:42 such as like the Mexican supermarket or something. 13:47 And people say, "Man, these people, 13:49 I don't know what they're doing? 13:50 Eating cactus? 13:51 There's so many other things that they can eat." 13:53 But actually, they're on to something. 13:55 I know we're talking about Taste of Paradise 13:57 and we want things that is good for, 13:59 or good from the Caribbean or tropical areas. 14:03 Well, I'm sorry to let you all know, 14:04 Mexico is part of the Caribbean. 14:06 It's right there, you have Cancun, 14:08 and all these other places. 14:10 And so that's why this is in our program and this nopal, 14:14 a lot of people don't mess with it but if you notice, 14:18 people of Mexican origin they eat this, 14:20 this thing is in a lot of their meals. 14:22 This thing is dangerously good for you. 14:25 Yes, I did say, dangerously good for you, 14:28 because it is very good to fight against diabetes, 14:32 it is also good for helping with the digestive track, 14:34 and I'm gonna share a little bit 14:36 of those items with you, 14:38 why is it good for the digestion? 14:39 Because it's so high in fiber. 14:40 I know it looks just like a cactus 14:42 and you probably drove by, 14:44 something that looks like it in Nevada or Arizona 14:47 or California. 14:48 But, man, next time you needed to pull over, say, 14:50 "Let me go ahead." 14:52 But be careful 'cause you may get hurt in the process. 14:54 And you know, what's really funny? 14:55 I notice like the things 14:56 that are like really good for you 14:58 are sometimes like the things 14:59 that are the most challenging to get, 15:01 the most challenging to cook or something of that nature. 15:04 But today we're gonna show you a simple recipe 15:06 that is phenomenal 15:08 'cause you saw what Evita did, that stuff looks good. 15:10 We just need now a little salad that goes along with that. 15:14 And don't tell Evita, and I'm not gonna do it raw 15:16 but I'm gonna cook this up a little bit. 15:17 So now we're gonna complement both of these items 15:20 and this is the nopal. 15:21 Let me just show you now real quick, 15:23 how it can be simply prepared? 15:26 Now because it has those spikes, 15:28 what you want to do is you wanna go ahead, 15:31 I'm gonna bring that over to this cutting board 15:35 and I'm gonna share a little recipe with you. 15:36 But I first wanna show you at least how to cut it 15:40 or how to clean it off a little bit. 15:42 In most supermarkets this is already done for you. 15:45 They usually have, in specialty supermarkets 15:48 they usually have a person that will clean it for you. 15:50 You just hold it from one end and if you can follow there, 15:53 this one I already did for you. 15:54 You just cut off those items, it's just real simple. 15:57 And if you notice, if you look closely, 16:00 it has like a little sliminess to it. 16:02 That is actually a good thing, that's the mucilage there. 16:06 And that's what's gonna help with digestion 16:09 and balance things out. 16:10 So you just remove those cactus, please. 16:12 When you do this, do it properly 16:15 because we don't want anybody 16:17 to end up with a little thorn or something 16:21 and they throw a name like, "Nyse told me to eat this. 16:23 He said it was good for this." 16:25 So that. No, no, none of that stuff. 16:27 We're gonna do it properly 16:28 so you get that there nicely just like that and basically... 16:32 Oh, I just made a mess. 16:33 You have a nice clean nopal, as you see there, 16:37 I'm gonna show you right there 16:40 as you can see that this is very good. 16:42 Now we're gonna make a delicious recipe 16:45 from this here. 16:46 I'm sorry, in a second 16:48 but I'll show you real quick how to cut it now. 16:50 So after you remove 16:52 a lot of those spines and thorns, 16:54 you just go ahead and you slice it there long way 16:57 as you see, again really simple and easy to make. 17:02 And so people say, "Okay, cool." 17:04 All right, we learned how to cut the cactus, 17:06 we know that it's high in fiber 17:09 but why is it per se good for me? 17:12 Why is this good for me? 17:13 Now because of its high quantity of fibers, 17:16 it's like literally booming with fiber, 17:19 this helps to decrease the, 17:21 or slowdown the absorption of sugar 17:24 and carbohydrates and items. 17:26 You know, 'cause a lot of times when people who have diabetes, 17:29 if they use white or refined products, 17:31 when they digest and it breaks down, 17:33 it causes a sugar to do what? 17:35 Shoot up really high and then when they check their, 17:38 you know, postprandial, they check their blood sugar 17:40 and they go "Oh, my goodness, my sugar is so high." 17:42 Then what did they do? 17:44 They do the insulin or they take the pills 17:45 and what happens to the sugar then? 17:47 It comes crashing again. 17:48 Then they eat another meal, what happens next? 17:50 It goes right back up again 17:51 and they have this rollercoaster effect. 17:53 The reason why we are diabetic, 17:56 in particular it needs a high fiber diet 17:58 'cause what fiber does, 17:59 fiber holds on to those sugars or like the white products, 18:04 and it causes it to do what? 18:06 Gently, gently go ahead and absorb. 18:09 So then after two, three, four hours 18:12 then it comes down slowly but surely. 18:14 So you don't have these what? 18:15 These peaks and these troughs. 18:17 So it's really simple and very good for a diabetic. 18:21 Also this thing is like literally 18:25 booming with vitamin C. 18:27 Now people are like, "Vitamin C? 18:29 This thing is just a cactus." 18:30 They did a little study actually 18:32 and they gave a couple of individuals, 18:34 vitamin C pills or supplements or stuff like that 18:38 and then they gave them what? 18:39 A nopal and say it with me. 18:41 Nopal, like no pal, but nopal. 18:44 You just bring it back together, 18:46 so basically nopal tells diabetes, 18:48 "No, pal, I don't want none of your problem." 18:50 And so they gave other individuals this to eat 18:54 and you will be happy to know that watch this, 18:57 after they finish the study, 18:58 they found that the beneficial properties of vitamin C 19:02 was more pronounce or well documented, 19:05 and they could actually observe and see the difference there 19:10 with the individuals who ate nopal 19:12 in comparison to the people who actually took the pills. 19:15 Or not the pills per se, the supplement. 19:18 And that's like a little note here for us. 19:20 It says, the simple things of God confounds the wise. 19:23 God will want us to eat the simple food, 19:25 simple things that we can access, 19:27 you know, anywhere. 19:28 You know, we're not saying supplements 19:29 or anything are bad, 19:31 but what we want to do is choose the food 19:34 that best supply the elements needed for what? 19:37 Building up the body. 19:38 And so if you use certain foods, 19:40 that's why we need to be studying 19:42 and just show ourselves a proof. 19:43 Which food is actually good for us? 19:45 Man, we can save ourselves a lot of money. 19:47 And one person said, "Yeah, that's true." 19:49 I notice, I was taking a whole bunch of extra stuff 19:52 that I didn't per se need. 19:54 And they said, 19:55 "When I went to the restroom...", 19:56 you know, a person who is like over supplementing, of course, 20:00 you follow doctor's instructions 20:02 but they will over supplement and they say, 20:03 "When I went to the rest room, I noticed, 20:05 wow, the urine was really bright and yellow." 20:07 And we say, "Hey, that's a sign 20:09 that your body doesn't per se need as much." 20:12 But if you eat four or five oranges 20:14 and you go to the restroom, what happens? 20:16 When you go to the restroom, 20:17 you notice the water comes out nice and clear. 20:19 So that's your body saying, "Hey, I needed this way, 20:21 this is the way I absorb it." 20:23 So hey, keep that in mind and let's go ahead 20:25 and let's cook some nopales. 20:27 So we're gonna have a simple recipe for you, 20:29 this is the nopal delicious salad 20:33 as we cactus salad, and it's real simple. 20:35 All you need is: 21:19 What did we say? "Sea salt to taste." 21:21 So this is real quick. How we're gonna do it? 21:23 We take the same ones that we cut up 21:25 and we just go ahead, 21:26 you could cut that into quarter or even in half. 21:30 You can take that, 21:31 I'll make this one a little bit shorter there. 21:33 And what we're gonna do, 21:34 we're just gonna take these items, 21:36 we're gonna get this on the stove now. 21:38 I'm gonna light that up. 21:40 All right, we're gonna take these items 21:43 and we're just gonna put them 21:44 as you see here in the pots go ahead. 21:48 We're gonna make it till it's tender. 21:49 Don't boil it to death, please. 21:51 A lot of times people, they just boil 21:53 till they can't boil anymore. 21:55 And so just boil just enough. 21:57 I'm gonna go ahead and cut one more nopal, 22:00 very simple, very easy. 22:01 Oh, you know, what's cool as well, 22:03 some specialty markets... 22:05 So you go right here on the side there. 22:07 Make sure 'cause this is where the thorns hang out. 22:10 Some specialty markets actually have people 22:13 that will go ahead and prepare this for you. 22:16 So and go ahead and let me cut off this last part there. 22:20 And they'll have it prepared 22:22 and they'll just give it to you in a big bag. 22:25 And so you could just bring it home, 22:26 wash it, and cook it. 22:29 So I'm just gonna go ahead and dice or just cut these up 22:33 and I add a little bit more, 22:34 you see that slimy, sticky stuff. 22:36 This is also good for the respiratory system. 22:38 All right, just like okra, everybody knows okra. 22:41 That's a simple thing that we can use. 22:43 And look at me, this thing is so slippery, 22:45 I can't even pick it up. 22:47 So we take that, we're gonna put that there, 22:49 we're gonna add a little bit of salt, 22:51 and you're gonna let that boil for a little while 22:54 until it's nice and tender, nice and tender. 22:57 But we're gonna go ahead 22:59 and speed up things just a little bit for you 23:02 because his buddy, artichoke is gonna little jealous 23:05 that we're giving all the attention to the nopal. 23:07 But we had some that is already been prepared 23:10 and the coolest thing is you could also get this 23:12 from the supermarket, already prepared. 23:15 Just if you buy in the jar or in a container there, 23:21 make sure it hasn't been stored in vinegar. 23:23 Okay. 23:24 Or they probably storing in like citric acid 23:26 or something of that nature. 23:27 That's usually a better option. 23:28 But not in vinegar, if it's stored in vinegar, 23:30 then you wanna hold off on that. 23:31 So this is how it should look, how it should come up there. 23:35 This is nice and tender, they're nice and soft, 23:38 and you can use that there. 23:39 So we have, this is prepared nopal. 23:43 We're gonna take these nopales, so you just say nopales. 23:47 And we're gonna pour that into the big bowl 23:49 and you notice it's real sign there. 23:51 Then we're gonna add a couple of the other ingredients. 23:54 What do we have? 23:55 We have the green onions, we have the cilantro, 23:58 we're gonna pour all of these in here. 24:01 We're gonna add some flavor, 24:02 we add some red or orange bell peppers there, 24:07 we have the tomatoes. 24:09 All right, you, guys know how to speak Spanish now. 24:12 And then we have the cebolla or onions, 24:15 as you see there and radishes. 24:17 Let me tell you something about these radishes. 24:19 Radishes are amazing. 24:20 This is like very good for people 24:22 who are dealing with allergies. 24:23 A lot of times people are dealing with respiratory, 24:27 you know, they always sinusitis 24:28 and they're congested all the time and radishes, 24:31 fresh radishes eating those up 24:33 are really good like sometimes, I get sick, 24:36 I get a cold or flu or something. 24:37 And what gets me really bad is the sinuses, 24:39 so I eat a lot of carrots and what else? 24:42 Radishes, radishes are very good. 24:43 So we're gonna pour all of those items in here. 24:46 We're gonna mix that up just a little bit. 24:48 Then we're gonna add the lemon juice, all right. 24:52 Oh, man, this thing is so easy, so simple. 24:54 I need to hurry up 24:56 and we get that our oregano there 24:58 just enough there. 24:59 We got the salt as well because this would go perfect, 25:03 perfect right along those enchiladas. 25:07 And make sure, of course, anytime we add the salt, 25:09 the sea salt, it's sea salt. 25:11 Try to see if you can get them one with iodine, okay. 25:14 And a lot of times people are on this no salt diet stuff. 25:18 No salt. No, no, no. 25:19 And then they give us a call, 25:21 two or three months later and their neck is swollen, 25:23 "Help me, I have a goiter." 25:24 And sometimes it's because they're not using salt. 25:27 So we're not saying, go ahead and use a lot of salt 25:31 but just make sure you have salt 25:32 with the iodine in it, and a lot of people enjoy that. 25:36 And you can use, if you want just a little bit, 25:40 we don't wanna put too much 25:41 but just a little bit of olive oil there. 25:46 You can use anyone extra virgin, 25:47 cold pressed if you wanted to use the light version, 25:50 you can do that as well. 25:51 And so this is it. 25:54 It's so simple, so easy, so tasty, 25:58 a lot of people enjoy that. 25:59 And I'm telling you this thing, it works so well. 26:02 One person says, "Man, I started eating nopales. 26:05 Man, my blood sugar came down." 26:07 They said, everyday, you know, "I had a good moment." 26:10 And so I was like, "Are you excising?" 26:11 They said, "No, not that kind of moment." 26:13 You all know, what I'm talking about, 26:14 high fiber moment. 26:16 So you'll never have to buy another supplements to go ahead 26:18 and get things moving. 26:19 Just eat some what? Some nopales. 26:21 This is very good for that as well. 26:23 We also... A lot of people... 26:26 It's not something that we promote 26:28 but if you ever like get involve, 26:30 you meet somebody 26:31 and they're like really out of it, 26:33 you know, they've been involved in extracurricular activities. 26:37 This as well helps to nicely purify and detoxify the system. 26:42 You remember, it's the dynamic duo 26:44 so it works right along there with artichoke as well. 26:47 So what I'm gonna do, I'm gonna let that finish up. 26:50 I already have a finished product 26:51 'cause this thing is so good. 26:53 If you know me, I always like to cleanup at the same time, 26:56 I hate ending with a big mess. 26:58 And I have one that is already finished and very good. 27:03 And my buddies, they put it together. 27:06 Look, how delicious that looks. 27:08 This is... Where is my fork here? 27:11 This is the nopal cactus salad. 27:15 Very nice, very tasty, delicious. 27:17 You can like literally serve this out to everyone. 27:20 But watch this, when you put it out, 27:22 people say, "What is that?" 27:23 Don't say anything. 27:25 And matter of fact, some people may not even question 27:26 'cause they think it's like green beans 27:28 or something of that nature. 27:29 Don't say, "No. This is a cactus." 27:31 They'll be like, "Look, leave that cactus stuff, 27:32 you go on a desert and eat it by yourself." 27:35 But just put it out there and let them try it. 27:38 A lot of times if you put it out there, 27:40 and then most people say, 27:41 "Oh, this is some new thing, 27:43 I don't know how it's gonna taste, 27:45 you know, maybe you should give it try." 27:46 I'm like, "Look at your face. 27:48 If you don't even like it, why should I?" 27:50 So when you put it out there just like, "Hey, guys, 27:52 how is everybody doing?" 27:53 Go ahead and enjoy some nopal. 27:55 It's good for you, outside, and inside. 27:58 And you won't regret it, enjoy it. |
