00:02 exactly how to prepare healthy food 00:04 that actually tastes good? 00:06 Well, stay tuned while Evita Tezeno 00:08 and yours truly Nyse Collins show you just how to do it 00:11 and give you something better, A Taste of Paradise. 00:30 Welcome to A Taste of Paradise. 00:32 My name is Evita Tezeno. 00:35 And can you believe it, it's season four, 00:39 and it has been great being on the set of Dare to Dream 00:44 and sharing my recipes with you guys, 00:46 and I have gotten so many compliments 00:49 on phone calls from you guys 00:51 and telling me how wonderful you like the recipes 00:54 and how you want me to have a cookbook, 00:56 it's coming. 00:59 Praise the Lord, it's coming, so just keep me in prayer. 01:03 This season is going to be wonderful delicious recipes. 01:06 And today, I'm going to share with you a snack food recipe 01:11 and we all love snacks, 01:13 but a lot of the commercial stacks 01:15 that are on the market... 01:16 that are in the market now 01:18 are loaded with so many different chemicals. 01:21 It is really junk food 01:24 and it's not good for our body. 01:26 But today, we are going to do a popcorn. 01:30 Now you saying, "Evita, we're doing, 01:33 this is a raw food segment, 01:35 we're doing popcorn?" 01:36 Yes, we are doing cauliflower popcorn 01:40 and let's look at the recipe. 02:19 This cauliflower this is cauliflower 02:22 and it is wonderful. 02:23 Before I started eating more raw in my diet, 02:26 I could not even stand raw cauliflower, 02:30 I had to have it cooked, 02:32 smothered with butter and cheese and all that stuff. 02:37 But I started implementing more raw in my diet 02:41 and my taste buds changed. 02:44 So, if you don't like a certain vegetable 02:47 or you like tons of things, 02:50 I would suggest for you 02:52 to just start eating a little more raw 02:54 and your taste buds will change. 02:56 It's a blessing. It is definitely a blessing. 03:00 And, so I'm going to show you how to cut up a cauliflower 03:04 and it's simply easy, 03:06 you just start removing the leaves 03:12 from the base of the cauliflower. 03:18 And one thing in having a raw kitchen 03:24 or eating more raw foods 03:26 you need to have good utensils. 03:29 A sharp knife, 03:31 a really good chopping board, 03:38 a good blender would be really good, 03:41 and I suggest you should have a Vitamix, 03:45 that's a real good blender, 03:48 it has a lot of power. 03:53 And today we're using a dehydrator. 03:58 The dehydrator that I'm using is Excalibur dehydrator, 04:02 and that's the one I really, really like. 04:05 I like it because it's a workhorse. 04:09 So what I'm going to do with a cauliflower 04:11 is I am going to just cut them up 04:15 in large pieces. 04:18 Now, it depends on 04:21 if you're going to either dehydrate these 04:27 or you going to keep them fresh. 04:30 Now, if you're going to keep them fresh 04:32 and eat the cauliflower popcorn just like this 04:35 without dehydrating, 04:37 I say you can cut them 04:38 in smaller bite size pieces like this, 04:41 but if you're going to dehydrate them, 04:43 it shrinks almost half the size 04:46 so keep them about this size. 04:49 So what we're doing 04:51 is cutting up the cauliflower like so. 04:56 And cauliflower is loaded 05:01 with so many different nutrients 05:03 and I call it the... 05:10 one of the best secrets that we can eat. 05:14 It is said to have some good 05:18 cancer fighting elements in it as well, 05:22 so, you know, when I talk about eating the rainbow, 05:26 this is how you can get the white color in your diet 05:30 because, you know, we have red, we have purple, we have green, 05:35 and this we don't have a lot of white food 05:38 in the vegetable kingdom 05:39 and this is one way we can get a white vegetable 05:43 which is loaded and is good on digestion, 05:46 it's just an amazing vegetable 05:48 that we need to implement in our diet. 05:51 So in a bowl 05:56 what we're going to do 05:57 is we're going to place the wet ingredients first. 06:02 So I have some water... 06:08 and I have some olive oil 06:10 and usually what I do is I use, 06:14 I like to use cold press olive oil 06:17 because it's pressed, 06:19 it's not chemically extracted, 06:21 so that's a little better 06:23 because co-press is just pressed, 06:26 they press the olives and get the olive oil out. 06:31 And I'm using tahini. 06:32 Tahini is sesame seed butter. 06:36 So it's sesame seeds ground into a paste 06:39 and it's not like peanut butter it's not, you know, 06:43 you don't want to spread it on toast 06:45 and some people do like it, 06:46 it has a kind of grassy taste, 06:49 but it has, is loaded with B vitamins 06:52 and very good for you. 06:54 And when I'm making food, 06:56 I kind of look at all the ingredients and say, 06:59 "So what does this have in it that's good for my body? 07:03 And what does this have? 07:04 And what can this do for this and what can this do for that." 07:10 So that's how I analyze it 07:12 and, you know, we've heard the saying that it says, 07:15 "Let thy food be thy medicine 07:17 and let thy medicine be thy food." 07:19 The Lord has given us 07:21 so many great properties in vegetable, 07:24 fruit and vegetable kingdom 07:26 that we have a bounty of wonderful deliciousness 07:31 that we can pick from. 07:33 So this is the wet ingredients 07:35 and what I'm going to do is take a whisk 07:37 and just whisk it all up, 07:41 so it's all mixed together. 07:49 Put the maple syrup in. 07:54 Now, for the dry ingredients. 07:56 We have yeast flakes, 07:58 which give it that kind of cheesy flavor, 08:02 onion powder, and I'm using onion powder this time 08:04 because if we would blend it up and use fresh onion, 08:10 it's kind of overpowering. 08:12 So we want to just a hint taste of the onion 08:15 so we're using the onion powder this time. 08:19 And I'm using garlic powder as well. 08:24 A little cayenne 08:25 and you don't have to use cayenne, 08:27 you can, it's optional, 08:30 but because I am from Louisiana, 08:35 I love the little kick of spice, 08:37 so I am including that in this recipe. 08:41 And this is the Himalayan salt 08:44 which is loaded with minerals 08:45 because the regular table salt that we have 08:49 which is the white salt is bleached 08:52 and they take a lot of the minerals in it 08:55 and each part, all of the part of our foods 08:57 should have different properties in it 09:00 and, and have nutrients in it, 09:03 it shouldn't be stripped, 09:05 so that's why I use the mineral salt 09:08 because it's loaded with minerals as well. 09:11 And it's just not a seasoning, 09:13 but it also has healing properties in it. 09:16 And the last but not least, I'm using turmeric. 09:20 Okay, I did forget one ingredient, cumin, 09:24 which is another spice that I really, really like. 09:28 So here we have the paste. 09:30 And we're going to add the cauliflower. 09:34 Now don't be afraid to get your hands messy. 09:38 It is okay, and my hands are clean, 09:41 I washed them, 09:42 so we're going to take this 09:44 and we're going to just coat it all up 09:49 and look at that, 09:51 it is wonderful. 09:54 I'm smelling it and, oh, my goodness, 09:56 I just cannot wait. 09:59 Now, we can eat this like this 10:04 or we can dehydrate it. 10:09 Now let me clean my hands here. 10:15 So if you don't, if you want to dehydrate it, 10:18 you put it in the trusty Excalibur 10:23 for overnight 10:26 and 12 hours to be exact 10:29 and, you know, you just take it 10:31 and put it on one of the sheets. 10:36 And lay it out and dehydrate it. 10:40 Or you can just serve it like this. 10:47 Look at this cauliflower, 10:51 so this is the dish that we served, 10:54 we're serving fresh 10:56 and this is the one that we dehydrated. 10:59 And if you notice that, 11:00 it has shrink into little small pieces like this, 11:04 but this is good for travel 11:06 and good for taking on the road with you, 11:10 if you want to have a snack food. 11:12 And this is good to eat at a fellowship dinner 11:16 or have some friends over. 11:18 So this has been a great recipe again 11:23 with Evita Tezeno, 11:25 and remember to live life fresh. 11:35 Oh my, oh me, it may be cocoa tea. 11:39 This is something 11:40 that we're going to look at here today, 11:42 some call it cocoa, some call it hot chocolate, 11:44 whatever you want to call it, you know what it is. 11:46 And this is like a key item that everybody uses in general, 11:51 every home when it's time for bed, 11:54 when it's time to wake up, we all need some hot chocolate. 11:57 And I've been getting calls 11:59 and people ask me what do you do about this, 12:02 is there any substitutes or whatever like that. 12:04 Well, I said, "Well, maybe you can answer that question. 12:06 Why would you want to substitute something?" 12:08 They said, "Well, we know 12:10 we heard some good things about it. 12:11 We heard some bad things about it. 12:13 And so I just said, 12:14 "Let us not live by the he says, she says, 12:16 because there's a lot of things that people say, 12:18 one person says this, one person says that. 12:20 New study shows 12:21 that dark chocolate is good for this, 12:23 and then another study comes 12:24 and says something totally different. 12:26 So I'm like you know what? 12:28 If there is so much questionable information, 12:30 just give me something 12:31 that is simple and easy 12:33 and tastes just as good without the drawbacks, 12:36 and what are we talking about? 12:37 We are talking about carob, 12:39 one of the nicest, tastiest items out there, 12:43 and many people use it as a substitute 12:45 for, for chocolate in general. 12:46 Now why would somebody want 12:48 to substitute chocolate to begin with? 12:49 Well, let's look at the pros and cons. 12:51 Is there some pros about chocolate? 12:53 Of course there is, the whole world knows the pros, 12:55 it tastes good whether you like it or not. 12:58 I mean everybody, I always ask this question, 13:00 "Are you addicted 13:02 and what are we talking about chocolate? 13:03 Because a lot of times if you ever noticed, 13:05 you can tell people hold off on meat, 13:07 hold off on this, hold off on that, 13:09 but when you say hold off on chocolate, 13:11 people are literally ready to fight you. 13:13 So, why? 13:15 Well, let's look at the good things. 13:16 Number one, yes, it tastes good. 13:18 Why does it taste good? 13:19 Well, when you look at cocoa or cacao, 13:22 as you know people have million different names 13:24 in its original form. 13:25 It doesn't actually taste as good, it's very bitter. 13:27 I was just actually at St. Lucia 13:29 where they grow them quite a bit, 13:32 but what they do to it when they process it, 13:34 they add a lot of what? 13:35 Fat or sugar or different ingredients 13:38 to bring out the flavor in it, and everybody knows 13:40 chocolate in its original form is very bitter 13:43 What else are some pros for the chocolate? 13:45 Well of course, it makes you feel good. 13:48 Hello, yeah, I know what I'm talking about. 13:50 You eve noticed when somebody breaks up 13:52 and there's a little issue in the relationship, 13:54 what do the ladies or maybe even guys do? 13:57 They run to the supermarket 13:58 and they get themselves some what? 14:00 Ice cream, not any ice cream 14:02 but chocolate ice cream and it just helps them. 14:05 And so one person said, 14:06 "Well, it is a good thing about chocolate 14:08 because it helps keep you from depression, 14:10 well, temporary depression. 14:11 You're still going to be upset that he or she left you. 14:14 So it gives you a sense of wellbeing. 14:16 It tastes good, also it gives you energy, 14:19 so hey, that's a good thing, 14:21 but now let's take a quick look, 14:22 let's back up a little bit of why it does that? 14:25 Well, it gives you so much energy 14:26 because it has so much calories and it gives you that boost, 14:29 also it's loaded with the sugar, 14:30 but one of the key ingredients is theobromine, 14:33 or some different forms of it has caffeine in it. 14:36 So obviously caffeine is going to make you feel good. 14:39 So yes, that's a positive thing, 14:41 but let's look at like I said the other end of it. 14:43 Now because it has so much fat, now as a result 14:47 you're gonna start to add on extra, 14:49 extra blessings you said it, 14:51 because it has quite a bit of fact. 14:53 Everybody knows this. 14:54 If you ever, if you're from the islands or something 14:57 and you make the, in its natural form cocoa tea, 14:59 if you don't drink it all right away, 15:02 what's going to happen? 15:03 By morning time you will see a big glob of fat 15:07 that is what we are drinking. 15:09 No wonder why people are sometimes over bless, 15:12 and this is why they also relate 15:14 sometimes chocolate to extra blessings. 15:16 But before I even go into more of that, 15:18 ya'll like so what are we going to do? 15:19 Are you taking away? 15:21 No, it's your choice, you can use it 15:22 or some people say loose it, 15:24 but we want to give you something better, 15:25 something better to try, 15:27 so I'm gonna tell you a little bit more 15:28 about that chocolate, 15:29 but we're going to make the best tastiest oh, man, 15:33 better than cocoa tea drink for you. 15:36 And I hope you get your pens and papers ready, 15:37 here it is a simple ingredients 15:39 Oh, My! Cocoa Me!! 15:42 It May Be Cocoa Tea! 15:43 And it's simple all you need is: 15:55 That's it, that's how simple it is. 15:57 Everybody now can have some nice 16:00 hot, warm, 16:02 creamy delicious drink in a morning. 16:03 And all you need is a pot. You have your five cups here. 16:06 You can even make this on scratch. 16:07 You remember, we've done these recipes a million times. 16:09 You could use cashews, you could use almonds. 16:12 Now, they have rice milk out there, 16:13 milk of your choice. 16:15 But what are you going to do, you gonna take a pot, 16:16 we're going to get this one cranked up here. 16:19 All right, so we have, 16:21 we gonna get this nice and warm 16:22 and we gonna take our five cups of... 16:24 I just, I use soy milk. 16:27 Soy milk is my favorite. 16:29 Some people like different options. 16:31 To me almonds, this is really thick. 16:33 Soy milk for me was just a nice consistency. 16:37 Rice milk, I think it's too watery, 16:38 but some people love it too, all of these are beneficial. 16:41 Some people say, "Hey, be careful with the soy, 16:43 it may cause you to grow, you know, 16:44 extra things for the gentleman. 16:46 Now, we don't want that of course. 16:48 And the reason why they get this idea 16:51 is because soy has 16:52 what is known as phytoestrogens, 16:55 and they kind of get it twisted just a tad. 16:58 And if you watch our previous shows, 17:00 when we explain about phytoestrogens, 17:02 they actually do not work like estrogen, 17:05 but they replace the estrogen 17:07 and stops you actually from getting extra blessings, 17:09 so just make sure you double check those studies. 17:12 What we're going to do now, 17:13 we're going to boil this a little bit, 17:15 and what are we going to use instead of chocolate? 17:17 We're going to use carob chip, a beautiful, beautiful island, 17:22 I was just thinking about, 17:23 I found this when I was in the islands in Spain, in Spain. 17:27 I went to one of these trees and I found it, 17:30 and also when I was in Turkey, 17:32 I was like, man, 17:33 this is what John the Baptist was probably eating. 17:36 Ya'll ready for that yet, 17:37 but he was eating the things that was hopping around. 17:39 So you gonna let this boil a little bit. 17:41 You going to take the carob chip, 17:42 you're going to put it in there. 17:45 And I'm just going to get the process going, 17:47 and it's going to melt nicely here. 17:49 You know, let that go, keep stirring it though, 17:52 because a lot of times if you don't, 17:54 it may get a little clumpy and jumpy on you. 17:58 And as you see, look at that already. 18:00 So you got to do it really fast and keep that going, 18:03 it's going to turn nice, nice and that, that, that, 18:07 that chocolate look that we always want 18:11 and you remember, we're going to add a sweetener 18:13 of choice, of course, 18:14 probably sugar in a raw 18:16 or evaporated cane juice crystals. 18:18 Some people say, I don't have it, 18:20 I'm going to use honey, you can use honey, 18:21 but you know honey has that aggressive flavor to it, 18:24 but you can use that. 18:26 Hey, you work with what you have. 18:27 Actually that's like the biggest, the biggest, 18:30 if I could say down for 18:32 people who are trying to live a healthy lifestyle, 18:34 they may not have all of the ingredients 18:37 but work with what you have, 18:39 choose a sweetener of choice 18:41 and, and keep it moving, keep it moving, 18:43 especially if you want something nice and warmth 18:45 to drink in the morning. 18:47 Now preferably when you drink this, 18:48 you don't want to be eating. 18:50 You know, how we do it, we take that bread 18:51 and then we wash it down a little bit. 18:53 You don't want to be eating or drinking, 18:55 so if you want to celebrate, you know, 18:57 maybe the holidays is here, the family came by, 19:00 you can have this, but preferably before you eat, 19:04 because if you have it while you're eating or after, 19:06 you remember what that's going to do? 19:07 That's going to cause a little issue there 19:09 in the tummy 19:10 is going to slow down the digestion. 19:12 And that's one of the things with chocolate 19:13 because it has so much fat, 19:15 so many other active ingredients there, 19:19 it actually slows down a digestion, 19:21 so if you're wondering why you have 19:22 extra little things on your face, 19:25 as we work with one young lady, she says, 19:28 "What can I do, 19:29 I will love to clear up my skin and my face." 19:31 And when we sat down 19:32 and we started talking with her, 19:34 come to find out what was she using a lot of, 19:36 a lot of chocolate, 19:37 and because of the fat 19:39 and extra ingredients that it has, 19:40 it may come out of the body one way or another. 19:43 And so sometimes it comes out of your face, 19:45 that's why we always, always trying to pick these things 19:47 that you notice that fat or that... 19:49 All right, we're in a kitchen, sorry. 19:51 We're not supposed to be talking about this stuff. 19:53 But anyway, so she held off on using chocolate as a result 19:57 and exercising 19:58 but it was even deeper than that. 20:00 She was having a little problem with one of her friends 20:03 and as we saw she was... 20:04 as a result she's fallen into little depression, 20:06 so she started staying at home, eating more ice cream, 20:08 eating more chocolate, 20:10 and then her face started to break up, 20:12 but she made it right with God, and she said, 20:14 if I get above him, 20:15 and now her face is as so fresh... 20:18 We do a special program called "So Fresh and So Clean, 20:21 Beauty on the inside and Beauty on the outside." 20:24 So here it is, my hot, not cocoa tea, 20:28 but carob tea is basically, look at this, 20:31 this looks delicious. 20:32 I don't know if you'll see this here. 20:34 Oh, man, 20:35 this is something that you can enjoy once in a while, 20:38 you don't want to have this every, every day, 20:40 because this is supposed to be for special occasions. 20:43 Do you know in the Bible 20:44 what they drank most of the time? 20:45 You see a lot of people are into juicing 20:47 and drinking all kind of special things. 20:49 In the Bible what did they drink all the time 20:51 or most of the time? 20:53 They drank what? 20:54 Water, you hit on the head. 20:55 So can we have 20:57 something special once in a while? 20:58 What did they do 21:00 in a Bible special once in a while? 21:01 They had some juice, 21:02 but every other day of the year they drank water. 21:04 So this will be for special occasions, 21:06 and I want to make sure that we, that we remember that. 21:09 So that is getting ready, 21:11 that is pretty much almost done. 21:13 I'm going to turn this on low here. 21:17 Okay. Man, look at that. 21:18 Matter of fact what I encourage you to do, 21:20 I don't even have any, 21:21 you can even take cardamom or coriander, 21:25 you can sprinkle a little bit on that as well 21:28 that will add the extra flavor. 21:29 Some people take it to the next level, 21:31 they put a little vanilla and I'm like, whoo, slow down, 21:33 let's just stick with the carob, 21:34 and you can enjoy that. 21:36 But let's take a quick idea 21:38 or a look at what we were talking about chocolate. 21:40 Now you remember I said, it may cause other problems 21:42 such as breaking out on the skin. 21:44 It may cause a little extra blessings, 21:46 but one of the main things that is related to is, 21:50 is it has a stimulant called theobromine, theobromine, 21:54 so a lot of people as a result of using chocolate, 21:57 they're wondering why they are like 21:58 forcing themselves to sleep at night 22:00 because it stimulates them, 22:02 and some people may even cause tachycardia, 22:04 you know, your heart rate starts 22:06 speeding up a little bit. 22:08 It may cause even migraines and headache. 22:11 And a matter fact that's a big thing 22:12 because a lot of times people are, 22:14 are wondering what can I do for my migraine? 22:16 What can I do for my headache? 22:18 Is not that you should take something else 22:20 and put it into the diet. 22:21 What we should try our best to look at 22:23 is what is in the diet that we need to what? 22:26 That we need to take out. 22:27 And because of those psycho active substances 22:30 that they call, it may lead to also migraines. 22:33 People ask what about allergies? 22:35 Does chocolate cause allergies? 22:36 And very few people have an allergy to actual chocolate. 22:41 What they may be allergic to one of the number one, 22:44 one of the number one causes and there's many causes is that 22:47 what goes into the chocolate, which is what? 22:49 Milk, a lot of times people may have an allergy to milk 22:53 and don't even realize that 22:54 because sometimes it goes undiagnosed 22:56 and cause allergic reactions to other foods. 22:58 What else do they put in chocolate? 22:59 When they're making a candy bar, 23:01 what else do they put in it? 23:02 They put nuts in it, 23:04 so sometimes people may have an allergy to different nuts 23:06 but very rare, or I don't, 23:09 I haven't seen it as much that many people have allergy 23:12 to the chocolate, 23:13 but carob is a definitely good substitute. 23:16 So this is ready. 23:18 Look at that deep dark color that we are so used to. 23:21 Y'all know what I'm talking about, 23:23 those nice drinks that we have in the morning, 23:25 and if anybody's from the islands, you know, we... 23:28 I won't event, I won't even call the name here. 23:30 So I'm going to turn this one off, 23:32 but now we have to seal this. 23:34 We've got to put a nice little cream 23:36 to make it even creamy here. 23:38 We're going to take this thing to next level. 23:39 And this is one of my favorite, one of delightful creams 23:42 that we will go ahead and make for your nice carob drink, 23:47 and it's Oh My! Cocoa Me!! 23:48 let's put some whipped cream. 23:51 All you need is: 24:11 Literally this thing is that simple and easy 24:14 to make a nice little whipped cream 24:16 or cream or something of that nature, 24:18 and make sure that you get it all together 24:21 because this is going to be, 24:22 this is going to happen so quick. 24:23 All we need to do is take those ingredients, 24:25 we're going to put that in the blender there, 24:26 all right. 24:28 Now you all know that whipped cream 24:31 is basically oil, all right. 24:34 And so what we're doing 24:36 is we're going to balance it out with the soy milk, 24:38 and we're going to have some 24:39 evaporated crane juice crystals, 24:41 that's why make sure 24:42 you all don't get it twisted, a lot of people like, 24:43 "What? Sugar. Yeah." 24:45 And this is, this is different, 24:46 now sugar is refined as you know and processed, 24:50 but this one here still contains 24:52 those vitamins and minerals which is necessary, all right. 24:54 So we're going to put that in there as well. 24:57 We're going to go ahead and add that soy milk, almond milk, 25:00 you decide which one you like, 25:02 and we're going to put those items there, 25:04 and don't forget your lemon juice 25:07 and your half a teaspoon of sea salt like. 25:12 This is no joke, ya'll.
