My name is Evita Tezeno. 00:34 And don't we all love fries? 00:37 Yes, but fries do not love us, 00:39 they're high unsaturated fats and they're not good for us. 00:44 But today I'm gonna show you two variations of fries 00:48 that is very good for you. 00:50 First we're gonna use the jicama 00:53 and then second we're gonna use avocado. 00:56 So let's go to the jicama recipe first. 01:17 This is a real simple recipe. 01:21 Very, very, very easy and very quick. 01:24 So we have the jicama 01:26 cut into fries first in thin slices. 01:32 At first what I'm gonna show you 01:34 is how to cut a jicama. 01:36 It's real simple, it's a kind of hard fruit 01:42 but this is hard vegetable 01:44 but it is very easy to cut. 01:47 So you just cut it and just peel it back like this, 01:52 just real simple. 01:55 So after cutting the strips, you take the strips 01:59 and you just sprinkle on the olive oil first, 02:03 so the seasonings will stick to the jicama. 02:09 And just toss it around, 02:13 and I like to put the salt on first. 02:20 And we're using Himalayan salt, 02:23 'cause most of the white commercial salt 02:27 that's in the supermarkets are bleached. 02:32 Onion powder... 02:37 garlic, paprika 02:41 which gives it a wonderful red color, 02:47 little cayenne and chili powder. 03:03 I'm gonna save plating this to the end 03:05 so we could show each one of the recipes, 03:09 so now we're gonna go to the avocado fries. 03:37 Now this is a simple way to open up an avocado 03:43 and take the seed out, 03:44 you just twist it and it's simply easy. 03:49 And we're going to just, 03:51 slice the avocado in slices. 03:57 Avocado is my favorite fruit. 04:00 It's so creamy and delicious 04:03 and I eat it on almost everything. 04:09 So we're going to continue to cut the avocadoes in strips. 04:17 And this is a easy, this recipe is very easy 04:21 and you don't have to, 04:23 we're gonna use the dehydrator today, 04:24 but if you don't have a dehydrator, 04:27 we can serve it without dehydrating them. 04:33 So you want to put the flaxseed, 04:38 the onion powder, garlic powder, 04:42 chili powder, the salt, 04:48 the cumin, and the cayenne. 04:52 And mix it together. 04:54 And you want to just drop the avocadoes in 04:59 and coat them really, really well. 05:08 And after you've coated them, 05:11 you want to get to dehydrated sheet 05:15 and just place them on a dehydrated sheet, 05:18 place them on the sheet and dehydrate them overnight. 05:22 I will say it for about eight to ten hours. 05:28 And now we're gonna do some ketchup. 05:32 And the recipe for the ketchup: 06:01 So we want to put the softer 06:04 or the liquid ingredients in first. 06:07 So we're putting in the tomatoes, 06:09 and this is the water 06:10 from the soaked sun-dried tomatoes, 06:13 and I keep this because I use this in soups 06:17 and also in dressings and it's really good, 06:20 it adds a lot of flavor. 06:22 And the lemon juice... 06:27 the olive oil and the garlic. 06:51 We put the onions in, and then the dates. 07:20 And you want to do it in stages because you want to make sure 07:23 that all your ingredients are thoroughly blended. 07:28 And the last ingredient is the sun-dried tomatoes. 07:45 I'll give it a little stir. 08:00 So let's plate it. 08:05 These are the Avocado French fries. 08:12 The Jicama fries. 08:19 And put a little ketchup in here. 08:26 And I want to try one of them. 08:32 Very, very good. 08:35 Crunchy and you have a little spice. 08:39 These fries are so good 08:42 and you don't have to worry about fattening 08:46 or cholesterol because they are not fried. 08:52 They are vegetables and they are raw, 08:55 so remember to live life fresh. 09:07 Mama Mia Frutti Pizza. 09:10 I know you all are like, Nyse then, he had lost it now. 09:13 Yes, I did say frutti pizza, 09:15 and I'm not talking about the unpredictable fruit 09:17 that we done before, you know, the tomatoes 09:20 and avocado and a bell peppers and all of that stuff. 09:24 We're talking about frutti, frutti pizza. 09:27 Yes, you know that Italian runs in our blood, 09:29 so on every season you're gonna see something 09:31 that has to do with pizza, 09:34 or pasta, or something like that. 09:36 But this time we're gonna do a little twist to it. 09:39 Yes, we're gonna make a fruit pizza. 09:42 The one that tastes really, really good, 09:45 and I'm truly excited 09:47 because we're also gonna color it like a rainbow. 09:49 Many times you've noticed when you look at toppings, 09:51 it's just all dry and looking tired and stuff. 09:54 Well, this one is gonna be a fresh one. 09:56 Evita will be proud of us, she will be really so excited, 10:00 but there's only one thing 10:02 we did have to cook the crust a little bit, 10:03 but I know she'll forgive me 10:05 but everything else is living life fresh. 10:07 So you're gonna enjoy this one and a pizza is crucial. 10:11 Now a lot of people they... 10:13 When they're trying to live a healthy lifestyle, 10:14 they become a little sad sometimes 10:16 because they say, "Well, what do I do with my pizza?" 10:19 Because most times the pizza or a crust 10:21 or whatever it's made from white flour, 10:23 then you got all that is cheese on top of it 10:25 which is causing problems there with a cholesterol 10:27 and a blood pressure and stuff. 10:29 And they always say, "Man, I have to give up pizza." 10:31 Well, watch this, don't worry, 10:33 you don't have to give up anything anymore. 10:35 We already did the other type of pizza, 10:37 we call it a Pitha Pizza 10:39 but this one is gonna be a Frutti Pizza. 10:41 But one of the key ingredients now to the pizza is the crust. 10:45 I know you're about to say the sauce, 10:47 we're gonna get to that or a toppings, 10:49 but you need a very good crust. 10:52 And so in order to make this Frutti Pizza from Mama Mia, 10:56 we're gonna have to make a good crust. 10:58 So let's look at a simple recipe 11:00 that you can knock out 11:01 Mama Mia's Frutti Pizza, Pizza Crust. 11:03 All you need is: 11:19 Oil as simple as that. 11:21 Yes, that's all you need to make this crust. 11:23 This thing is simple, of course you know what it is, 11:26 it's the thin crust. 11:27 We're gonna do the thin crust today, 11:28 but this crust taste so good, 11:30 it's almost like communion bread. 11:31 All right, don't get in me trouble, 11:33 don't tell my pastor I said that. 11:34 But this is good stuff, so what we're gonna do 11:36 is we're gonna take the flour, 11:37 we're just gonna pour those in here. 11:39 All right, so we have the unbleached 11:41 and we have the whole wheat flour, 11:42 then we're gonna go ahead, 11:44 we're gonna put that salt in there, the sea salt as well. 11:47 And we're gonna mix those items up nicely there. 11:50 Just make sure you do it properly, 11:52 so we get no salty spots in our crust there. 11:54 And then we're gonna a make a little, you know me, 11:58 I always like to make some little hole here. 12:00 We're gonna take the water, 12:01 we're gonna put the water in there, 12:02 and also we're gonna take the oil, all right, olive oil. 12:07 Use what you want there but preferably, you know, 12:10 they say the king of all oils is the olive oil. 12:13 All right, so we're gonna mix those up, 12:15 we're gonna get like a nice little dough. 12:17 You can't have pizza without the crust, 12:19 because it has a good dough. 12:21 So you not know, frozen one 12:23 prepared for you already in the store, 12:25 this one we'll make it from scratch, 12:27 and I encourage you to get the kids involve. 12:30 Unfortunately you ask the kids, "Where does pizza come from?" 12:33 "From that pizza shop, 12:34 from this company, that company." 12:35 I'm not gonna do any promotion here today, 12:37 they already did enough. 12:38 And they don't realize 12:40 that they can make the pizza themselves. 12:41 Matter of fact this crust is so good, 12:43 let's say you didn't want to put fruit topping on it, 12:45 you could put the other toppings as well, 12:47 so please get, 12:49 you may write this down and apply it. 12:51 You see right here it's gonna get nice and thick, 12:53 this is your dough, 12:54 and you know what's gonna happen today. 12:56 I'm gonna have to get my hands dirty 12:59 because we have to knead it properly 13:00 so it comes out really nice 13:02 but you see I'm trying to do as much as I can without, 13:05 so I'm gonna put this down. 13:07 It's time to get dirty in a kitchen. 13:09 And if you come out of the kitchen not dirty, 13:11 you wasn't cooking, all right, 13:12 so I'm gonna take that, remove this bowl, 13:15 I'm gonna get that going right there. 13:16 We're just gonna get it to nice consistency there 13:18 which I want to mix it properly. 13:21 Oh, man, look at that. The kids will love this. 13:24 And I guarantee you this. 13:25 If you teach them now how to do it, 13:28 man, they will make this for the rest of their life. 13:29 They'll make it for generations, 13:31 to the third and fourth generations. 13:33 The curses are not the only thing 13:35 that run in a family, 13:36 but the blessings do too, 13:37 and you can do that by teaching your kids. 13:40 Please take some time out. 13:42 They say the family that prays together, 13:44 stay together. 13:45 I want to take it to the next step. 13:47 Well, what did they do 13:48 when they're about to eat, they pray. 13:49 So they pray then they eat, 13:51 so the family that eats and cooks together 13:53 will definitely by God's grace only stay together. 13:56 So what we have there is the nice pizza dough, 14:00 and we're gonna get all in it. 14:03 Forgive me it's not going to be the prettiest thing right now. 14:06 Well, work with me. 14:07 And then you know how we do it up, 14:09 I'm making a mess here. 14:10 You know, how we do, we're trying to... 14:12 try to get that going 14:14 and you just make it round and round and round. 14:16 Oh, man, long time ago my mom had me making this stuff, 14:20 hundreds of them for the community. 14:22 And I'm like, "Mom, these guys could cook for themselves. 14:25 Why are we cooking so much food for the community?" 14:28 She said, "Just do it son." 14:29 And you know back then, it was miracle 14:32 that I was able to even ask a question, 14:34 normally you don't ask question. 14:35 You just do it as mama said. 14:36 And so we always made food for the community. 14:39 We used to make what is known as roti, okay. 14:42 You know, my mom is from Trinidad, 14:43 so we make roti, 14:45 hundreds of roti and bread and all the stuff. 14:47 And I'm like, "Mom, you're spoiling these people. 14:50 They can make their own." 14:51 And she said, "Son, just do as I say." 14:54 And real quick before I finish my story. 14:55 We're gonna take this item, the dough 14:58 we're gonna put that on there. 14:59 We're gonna make it even more now. 15:01 And she said, "Just do as I say." 15:02 And so after a while I notice she would feed a community, 15:05 literally there will be lines at our door. 15:08 Lines of people at our door 15:10 going ahead and eating all of our food. 15:13 But you know what happened when the crusade time came. 15:16 Well, they had an evangelistic series 15:17 in the area. 15:19 All my mom had to do is like, hello, everybody. 15:21 They say, yes Mrs. Jodes. 15:23 She says, I'm going to church, you want to come with me? 15:25 They say, sure let's go. 15:27 And literally, you remember the lines 15:28 that was at our door for food, 15:30 there was literally a line of people 15:32 following mom to church. 15:34 And I said, oh, she thinks she is smart. 15:37 But when you look at the life of Jesus, 15:38 he fed the people. 15:39 He fed them, he met their needs 15:41 and as a result, what did he say? 15:43 Come and follow, he begged them to follow. 15:45 So I think you all should do it. 15:47 Now I truly understand what it means by what? 15:50 There is more religion in a loaf of bread, 15:53 but I'm gonna change it up. 15:54 There's more religion in our frutti pizza 15:57 than anywhere that you can say, so when you make this, 16:00 make enough for everybody, your neighbors, your friend, 16:03 invite them over and man, you're gonna have a good time. 16:07 So here we go, there is our pizza dough, 16:10 it looks a little suspect you know, we'll work with it. 16:13 You're not gonna be looking at the dough 16:14 when it's all done, 16:16 you're gonna look at the frutti pizza. 16:17 So what you're gonna do, you're gonna take this, 16:19 put this in an oven at about 300-350 degrees 16:21 until it becomes, don't cook too much 16:24 but it has to be nice and ready there. 16:26 And I'll show you a little example 16:28 how can you tell that is not too doughy 16:30 because you don't want 16:32 to come out to early with doughy. 16:34 You wanted to come with Nyse, 16:36 so you take your fork and you stick it in there 16:38 so make sure it's ready to roll, 16:39 and this is it, this is it. 16:41 This is ready, your dough was done and finished. 16:44 Now this dough is so good or this crust is so good, 16:48 literally you can eat it by yourself. 16:50 I'm telling I think this may be the same recipe for community, 16:53 I don't know somebody tell me, let me know. 16:55 But this thing is so good. 16:57 You take a piece of that, put it in your mouth, 16:59 it melts in your mouth. 17:01 And this is the key also 17:02 for using whole grain items or whatever 17:06 because digestion begins in a mouth. 17:07 Let me explain real quick what I mean. 17:11 With whole grain items they need to be cook properly 17:13 like a lot of people these days, 17:15 they're into this like raw oats, 17:17 and raw this and raw that 17:18 and that's good like the fresh fruits 17:20 that Evita has been cooking. 17:22 But let's look at oats per se real quick with the oats. 17:25 When we look at oats, oats need proper cooking, why? 17:29 Because digestion, 17:31 when you don't cook it properly, 17:33 this is oats now, all right. 17:35 When you don't cook it properly 17:36 as a result it doesn't digest properly, all right. 17:39 So now what we want to do, 17:41 they say sometimes like about one to two, 17:43 maybe two hours is a good time to bake down those oats. 17:46 One person says, I don't believe you, 17:48 you're making a stuff up. 17:50 I said, look in the Spirit of prophecy 17:52 there's a book called Ministry of Healing 17:53 or Counsels on Diet and Foods. 17:55 It said, grains used for porridge 17:57 or mush should have several hours of cooking. 17:58 All right, and thus those items the stuff that Evita is making, 18:02 for normal that don't need any cooking, 18:03 just eat it. 18:04 But the grains need cooking and as a result 18:06 it starts to breakdown those that whole grain 18:10 there in your mouth. 18:12 Let me just tell you a little story. 18:13 Anybody ever went to communion and when you went to communion 18:16 like you were so hungry that as a result you know, 18:20 when they pass the communion tray, 18:22 you ever noticed how some people 18:24 now don't look to anybody. 18:25 They'll be looking into tray, they'll be like. 18:27 What are they looking for? 18:28 They want the biggest piece of communion 18:30 and when I was young as small before you were around, 18:32 I used to be like man, 18:34 she looked for the biggest piece. 18:35 She must have sinned really bad. 18:37 Well, I didn't know there was some people forgive me, 18:40 I was a kid, that's all I was thinking. 18:42 I was like man, she is greedy. 18:43 And I realize she'll be greedy but she wasn't of course. 18:46 You know, may be she just want to make things right. 18:48 But do you ever notice when the pastor said, 18:50 hey, now you may partake. 18:52 Now when you ate that bread, did you just chew it down 18:55 and swallow it real quick, you were like no, 18:57 because you were little hungry and you know, 18:58 it was a special sacred moment there, 19:00 but you let it sit in a mouth and start chewing it, 19:03 you do it like literally chew that thing 19:05 so you couldn't chew it anymore. 19:06 And it started to taste what, sweet. 19:09 It wasn't that the sister added sugar to it, 19:12 but when you start breaking down the grains 19:14 or the starches, they turn into what? 19:17 Yes, you got it right. 19:19 It turns into the glucose 19:20 because digestion begins where everybody? 19:22 In the mouth. 19:24 So this is why at least with the whole grains 19:26 such as oats, those need proper cooking, all right. 19:30 So I hope, people are like, what? 19:32 No more raw oats. Here's how you can do it. 19:34 If you like to eat the oats like it is, 19:36 then take it when you buy it, put it on a flat tray, 19:39 put it in the oven, toast it on low heat 19:42 for about 200 or 250. 19:44 Don't cook it to death now, 19:45 just toast it so then when it's time to eat, 19:48 you'll notice that it starts to taste sweet. 19:51 Who could tell me why it tasted sweet 19:52 from our class that we just had? 19:54 Because you are now digesting the oats, or the whole grain. 20:00 Enough of digestion one-on-one. 20:01 Let's get back to the Frutti Mama Mia pizza, all right. 20:04 So now we have our crust here 20:06 and what we need to do, you ready? 20:09 I'm over here, I'm looking because I need my blender. 20:11 What we need to do 20:13 is we need to make a sauce for it. 20:15 All right, and a sauce is crucial. 20:17 You remember the key to pizza is in the what? 20:20 In the sauce. 20:22 So here it is a simple, simple frutti pizza sauce 20:26 for you from Mama Mia. 20:28 All you need is: 20:50 Yes, that's all you need for the whipped cream 20:53 and as a result you want to have your toppings, 20:56 the key is your toppings, 20:57 color your plate like a rainbow. 20:58 We're gonna get into that here in a second. 21:00 But let's go ahead and make this 21:01 so you take the oil. 21:02 Now, we've been using a little oil here this season, 21:06 and the reason why sometimes 21:08 is because we notice that some people, 21:10 they may only eat items 21:12 that doesn't have a little bit of fat in it 21:14 and as a result they get hungry quite rapidly. 21:17 So as a result fats take a little bit longer to digest, 21:21 they don't digest in a stomach they digest in intestine there. 21:24 So we want to make sure we have a little bit of fat, 21:26 and so if you do use the fat, make sure it's the good one, 21:29 like that one the olive oil, okay. 21:31 But if you don't want to use that, 21:33 then you can go ahead and just do some nuts, 21:34 may be cashews or something like that. 21:37 I ran out, so I'm sorry, I couldn't make it. 21:39 All right, then I have some evaporated cane juice crystals. 21:44 Watch this, the little secret ingredient is peaches, 21:47 about three to four peaches that's in there. 21:50 I already dumped that in 21:51 and then we have our pineapple juice 21:52 and our salt. 21:54 Hey, man, we're just having a good time. 21:55 This is like the easiest dressing you could make. 21:59 You could probably make it with your eyes close. 22:01 I just can't see what's going on here so don't do it. 22:02 All right, here we go. 22:04 We're gonna put the top on 22:05 and we got to get this rolling just for a couple of seconds. 22:21 All right, so it whipped a little bit. 22:23 Now I'm going to put this in it 22:24 'cause I got to mix it up a little bit more, all right. 22:27 I just want to let you all know, 22:28 so if you don't have one of these blenders, 22:30 you just have to mix it up properly, shake it up, 22:32 as you see there 22:33 and then we're gonna blend it one more time. 22:59 Voila, done. 23:00 Literally you have now your whipped cream, 23:02 this is something that you can do, 23:04 however do not use it unnecessarily 23:07 because you may turn it on 23:08 and add on some extra blessings, 23:10 literal blessings, 23:11 so this one you want to use sparingly. 23:13 You remember on your pie chart, your food pie, 23:15 your pie chart, your food pyramid. 23:17 It has what? 23:18 Oils and stuff at the top the least, 23:20 so this one here you want to use it 23:22 but once in a blue, 23:23 don't go overboard with it, all right. 23:25 So here we go. 23:27 We have that, I'm gonna push this to the side, 23:28 and I want to see if you all can see that here, 23:32 this is really simple, really easy this is your... 23:36 Look at that, look at that whipped cream, delicious, 23:40 tasty, there it is. 23:41 So what I'm going to do now, this is my topping, 23:43 you remember. 23:44 So here we go. I'm just gonna pour this out. 23:50 Man, I got to just use the spoon. 23:53 All right, so this is a nice, 23:55 a nice topping that could go on that, 23:58 let me just get some more there. 24:00 Now this is for special occasions like I said, 24:02 you have too much of this, 24:04 you're gonna be calling us back like, man, I though this was, 24:08 I'm starting to add on extra blessings. 24:09 Well, that's why we try to balance our blessings. 24:12 If we're under blessed so we don't have, you know, 24:14 we're not like that, 24:16 then this will help us to balance that out. 24:17 If you're over blessed, then you only want a slice. 24:19 Okay, no more of this. 24:23 This is the one that you don't order two slices. 24:25 So you put that over there nicely. 24:28 Matter of fact you can even stop right here, 24:30 and just eat it. 24:32 Sometimes people do 24:33 when they get that all around the edges there. 24:35 I like to go ahead and show a little bit of the crust 24:39 so you can still have that pizza, 24:41 that pizza look, 24:42 so you all see that crust there. 24:43 If you cover up the crust too much, 24:45 then it just look like another cake 24:46 or something like that, all right. 24:48 So here we go. 24:49 Now, my favorite part, 24:51 color your plate like a rainbow. 24:53 All right, what color your frutti pizza 24:55 like a frutti pizza, all right. 24:57 So now we have so many different colors, 24:59 where should I start, 25:01 I'm not into this interior decorating 25:02 and the design stuff, 25:04 me, I just eat the fruit and whatever. 25:05 But let's see if I could try to do something, 25:07 I have some oranges there. 25:09 You all know orange is good for the immune system, 25:13 fantastic, so we're gonna put some oranges there. 25:17 Now I left the little space because you remember the key, 25:20 the key to digestion is that it should be, 25:22 it should look good, look at stuff flying out of my hand. 25:25 So I have some strawberries. 25:26 Anybody who is dealing with the little, you know, 25:29 they haven't used the restroom, 25:30 I won't be discrete you know 25:32 number two for quite sometime. 25:34 Do you know a nice box of carton of strawberry, 25:38 strawberries has fiber, so that's very good for that. 25:43 All right, so I have my strawberries there. 25:45 What else am I gonna add? I need something blue here. 25:48 All right, so I'm gonna put some of these blueberries, 25:50 look at me just making a mess, this is a pizza. 25:52 Matter of fact what am I doing. 25:53 Go ahead put some peaches on there, 25:56 just sprinkle it over, 25:57 I'm trying to be pretty put some mango, some mango, 26:02 put some raspberries, blueberries, you name it. 26:05 The key is that it needs to look like a rainbow. 26:08 I'm here trying to be pretty and cute, Lord, forgive me. 26:11 All right, so you just put all of these items on there. 26:15 Let me get some of strawberries as well. 26:17 Hey, man, who knew that you can have 26:21 phenomenal topping of fruits and stuff. 26:24 Let me get some more of these oranges in here 26:27 squeeze it in. 26:28 Is there any other favorites, 26:30 don't worry we're not gonna put now no olives on this one. 26:33 I know that's a fruit our whole dough 26:35 on the avocado as well 26:37 because I want this to be fruity 26:39 and tasty and voila, 26:41 you have something that's good for you. 26:44 We have the strawberries 26:45 which is good for immune system, 26:46 good for people dealing with cholesterol. 26:48 We have blueberries 26:50 which is gonna give you that one, two punch, 26:51 I mean, say no more, this is good. 26:54 And you know what? Here's the best part about it. 26:58 No more baking necessary.
