00:02 how to prepare healthy tasty meals, 00:04 raw and cook that actually tastes good? 00:07 Well, stay tuned while Evita Tezeno 00:09 and yours truly Nyse Collins 00:10 show you how to do so and give you 00:13 A Taste of Paradise. 00:31 Cheers to season for healthy eating. 00:33 This is Evita Tezeno 00:35 and welcome to A Taste of Paradise. 00:37 I have finger food 00:39 to keep your guests busy while you're in the kitchen. 00:42 I am making some zucchini rolls and basil spinach pesto. 00:48 So let's go straight to the recipe. 00:52 For Zucchini Rolls you need... 01:08 For the Mock Chicken Salad you need... 01:42 So we're gonna do the zucchini first. 01:47 And using the mandolin, 01:50 you just make little strips 01:53 with this, like so. 01:58 And then you sprinkle it with sea salt 02:01 and you place it aside. 02:09 Now we're gonna start the mock chicken salad. 02:15 So we have our cashews... 02:20 And then our sunflower seeds... 02:30 Our yeast flakes... 02:35 Our dill weed... 02:40 Lemon juice... 02:45 Our garlic clove. 02:47 Love fresh garlic. 02:49 Now we want to wait and reserve these 02:51 because I like to mix it in. 02:56 So within our sea salt 02:59 and I'm using Himalayan salt today. 03:02 And we're gonna process this. 03:14 You want to make sure that you scrape down the sides. 03:17 You want everything incorporated. 03:31 And then what I like to do 03:34 is put a little more of the cashews in there. 03:42 And then after it's all incorporated, 03:46 let's put it in a bowl. 03:59 And then put in our celery 04:01 because we want it not to be all mixed in, 04:04 we want a little crunch. 04:06 And if we blend it in, it will turn it green. 04:10 So I like to make it look just like the chicken salad. 04:19 So we're going to mix this all in 04:21 and then we're gonna put it aside 04:24 and get ready to roll up the zucchini rolls. 04:33 So we have our zucchinis 04:34 that been marinating a little bit. 04:39 And we take one of the zucchinis. 04:43 So now we put a piece of the red tip lettuce on, 04:49 the zucchini strip, 04:51 and then a little of the chicken salad. 04:57 And then we grab some, our julienned vegetables, 05:02 the cucumbers, the red bell peppers, 05:07 the carrots, and then we roll them. 05:15 Look how pretty that looks. 05:18 Let's do a couple of more. 05:21 So we get our zucchini, 05:27 our red tip lettuce. 05:36 We get a little of our chicken salad. 05:44 This is easy, right? You can do this. 05:48 And we get our cucumbers, lay them down, 05:54 our carrots... 06:02 And then we roll them. 06:05 And since the zucchini has been sitting a little bit, 06:08 they are real limp, 06:10 so you can roll them quite easy. 06:15 So we're through with that one. So let's go to the next recipe. 06:20 For the Spinach 06:21 and Pesto Basil Spread you need... 06:46 Two English cumbers cut on a diagonal 06:50 and two tablespoons of multicolored peppers 06:54 chopped for garnish and this is optional. 06:58 So we're going to start off with our walnuts. 07:04 We want to do all of our dry ingredients first. 07:08 So we have our walnuts... 07:13 And then our salt. 07:17 And we want to process this. 07:28 And then we put in our sun-dried tomatoes 07:32 that have been soaked and drained. 07:46 And just pulses slightly. 07:49 Then put on our basil, 07:56 let's put in our olive oil, 08:02 lemon juice, and our garlic. 08:24 And then last but not least, our spinach. 08:32 And if you need, 08:36 you might need to... 08:39 You stagger the ingredients, so they can incorporate better. 08:42 So that's why I'm putting one in at a time. 08:50 This is being a little stubborn, 08:52 so I have to store it some more. 09:17 Finally, it's all incorporated. 09:20 So let's get some of this wonderful pesto 09:23 and put it in a container. 09:30 And let's start our little odors, 09:37 so take a teaspoon measurement, 09:41 this is a two teaspoon measurement, 09:44 and put a little of the pesto on top 09:51 and garnish it. 09:55 And the garnishing is optional. 09:57 You can use peppers, you can use chopped tomatoes, 10:02 you just want it to be pretty and festive. 10:06 Stew one more. 10:17 Put our little garnish on top. 10:24 How beautiful is that? 10:29 Again, it is Evita Tezeno with your holiday recipes 10:35 and remember to Live Life Fresh. 10:45 Hey, hey, hey, welcome back and we are truly excited 10:48 because it's the holiday season. 10:51 And when you think of holidays, 10:52 we all think of pies and cakes and all of that. 10:55 And you've seen what Evita has been making there. 10:57 But, man, today is one of my favorites 11:00 of all time why 11:02 because we're going to be talking about, yes, 11:04 the pumpkin, the pumpkin all my 11:07 love me some pumpkin pie. 11:09 This is one of my best friends here, 11:11 not only because it's cool to make decorations 11:14 and you're thinking of what, Thanksgiving and, you know, 11:17 those are the holidays in October and Christmas. 11:20 But you're thinking about the favorite pumpkin pie. 11:24 And not only is it just tasty and really good, 11:27 but it's actually good for you. 11:30 This thing is amazing. 11:31 You just see them hanging around and you think, 11:33 "They're just good for pumpkin pie 11:35 or a couple of treats." 11:36 But this here is loaded, yes, with vitamin A. 11:40 And when you think of vitamin A, 11:42 you also think of the what, the eye. 11:44 So, did you know that pumpkins is very good for your eyes 11:47 for people who have cataracts or different items 11:49 or if you wanna avoid those problems, 11:51 you need eat yourself some what? 11:52 Some pumpkin. 11:53 But a lot of people didn't know also... 11:55 When you think of vitamin C, 11:56 you're thinking of oranges and berries 11:58 and all of that stuff. 12:00 Pumpkin also has antioxidants. Yes, antioxidants. 12:04 So, you know, I'm going to be grabbing another slice 12:06 of that pumpkin pie. 12:07 So it has antioxidants and it's very good 12:10 because as you see 12:11 the color of it, the pigmentation, 12:13 it is also good for the skin. 12:14 So those who are looking to keep young and strong 12:17 and you don't have to get old after the holidays, 12:20 you know, sometimes you feel like it 12:21 because it's just like overwhelmed 12:22 with all of the food. 12:24 But the good news is you will be eating this 12:26 and it will help fight against the wrinkles, 12:29 and many of the different items. 12:30 But a lot of people also like them, 12:32 you know, for the kids to make decorations 12:35 and we don't put no scary faces on here. 12:37 We want to put a smiling face and a happy face 12:40 and all of those items. 12:42 But also when you cut that thing open, 12:44 you ready for this, everybody? 12:46 When you cut it open, you get those pumpkin seeds. 12:50 Yes, pumpkin seeds. 12:51 So not only is it good for the eyes 12:53 or good for the skin 12:55 or the antioxidants to fight against heart problems 12:58 and stuff like that, 12:59 but also you get those seeds, yes, 13:02 which actually helps fight against parasites. 13:05 There are so many diseases coming out these days 13:08 that you can just go ahead 13:09 and have a handful of those pumpkin seeds 13:11 and actually that's one of the treatments 13:13 that you can do. 13:14 You can use about a handful or two of pumpkin seeds. 13:16 And if a person is considering 13:18 that maybe they have parasites now, 13:19 don't get it twisted, 13:21 everybody think that 13:22 they have a worm or something like that, 13:24 trust me, if you had a worm, you will know. 13:25 But just in case, let's say someone did. 13:27 They can use about a handful or two of pumpkin seeds, 13:30 it's a special treatment every day 13:32 and then also they will use a little bit of that olive oil. 13:35 What the pumpkin seed does, 13:37 the pumpkin seeds actually paralyze the parasite, 13:41 and we call that PP action. 13:43 It paralyzes the parasite. 13:44 And when the person uses the olive oil 13:47 or something after, 13:48 it goes ahead and washes it out. 13:50 I'm not... 13:51 I'll tell you a little story. 13:52 A long time ago when I used to be young, 13:55 you know, my mom thought 13:57 that one of my brothers had a little parasite. 13:59 And so they... 14:00 she gave them, yes, 14:02 the pumpkin seeds and stuff like that, 14:03 but these parasites were holding on tight. 14:05 I don't know if I should talk about this in a kitchen. 14:07 But anyway, she used this little washout thing 14:09 with the pumpkin seed. 14:11 And all I heard one day was just screaming 14:13 and chaos in the bathroom... 14:16 And I was like, "What's going on?" 14:18 So I went to the bathroom. 14:21 And my brother was over the toilet. 14:24 Yeah, and he wasn't cleaning the toilet, 14:25 he was over the toilet. 14:27 And I've seen my other brothers, 14:29 they were there looking under 14:31 and he didn't quite have his pants on. 14:34 They were looking under, he was like, "It's there. 14:36 I can feel it." 14:37 And he had a little worm hanging out. 14:39 Now this is crazy. 14:41 Good thing I don't have one here. 14:43 My brothers had a little salad. 14:45 you know, what do you call, the salad clams 14:49 or whatever like that, that thing 14:50 to hold the salad. 14:52 These guys are so nasty. 14:53 They took one of the salad items 14:55 and was trying to pull behind my brother. 14:58 Have mercy. 15:00 Now you know, guys, 15:01 when I go to people's house to eat, 15:03 I see an extra prayer over the food 15:05 because I don't know what they've been doing 15:07 with those utensils in the kitchen. 15:08 And now that utensil of course, we threw it away. 15:10 But anyway, 15:11 that was a long story to tell you. 15:12 Be careful, when you eat at people's house. 15:15 Amen. Just say an extra prayer. 15:16 But pumpkin seeds are very, what? 15:18 Very good for you. 15:19 Matter of fact, I have some here, 15:21 some simple pumpkin seeds. 15:22 It is also good for high blood pressure, yes. 15:26 It's also good for high blood pressure, 15:28 a handful of these. 15:29 It has what is known as L-argenine, all right? 15:32 And maybe if you can see that there, 15:33 that's the green pumpkin seeds, preferably the raw, unsalted, 15:38 so it's very good. 15:39 It has L-argenine, right? 15:41 And when you eat that, it breaks it down. 15:43 And, you know, when a person is having 15:45 like a heart attack or stroke or something, 15:47 they put a nitrous patch on them. 15:50 Well, pumpkin seeds work similar to that, all right? 15:52 Now let's call our time out. 15:54 I'm not telling you, 15:55 anytime you see somebody having a stroke 15:57 or heart attack or something, 15:58 just run and try to stuff down some pumpkin seeds, 15:59 a little too late at that point, 16:01 get them to the hospital. 16:02 But it's very good 16:04 for protecting the heart as well. 16:06 So enough of the stories with this pumpkin. 16:09 I want some all my, I love me some pumpkin pie. 16:13 So we're going to show you a nice delicious simple recipe 16:16 that you all can enjoy to make yourself 16:18 something that's delicious, what? 16:20 The delicious pumpkin pie. 16:22 Here's the simple recipe that you all can enjoy. 16:25 The ingredients are really simple. 16:27 All you need is... 16:51 There it is, really simple, really easy. 16:53 You all can do this. 16:54 Matter of fact, man, I am excited, 16:56 I'm going to move this out of the way. 16:57 I would normally go ahead and cut this up 16:59 and do that but because of time, 17:01 we're going to do a little shortcut. 17:02 I already have the cashews and the water 17:05 and a maple syrup here. 17:07 If you don't have maple syrup, you can use agave. 17:09 Try a little honey. 17:11 Honey has that little extra flavor to it. 17:12 So you can use that as well. 17:13 And basically, what we're gonna do, 17:15 we're gonna just take these items 17:16 and we're gonna blend it up, 17:18 you've probably seen it 17:19 before when you make cashew milk or cashew cream. 17:20 It's the same basic principle to get this one started. 17:22 So here we go. 17:46 Now real quick, you're going to get 17:47 a nice little consistency there. 17:49 It doesn't have to be super creamy. 17:51 As you see, we have the liquid, 17:52 because we have the pumpkin puree 17:54 that is going to be a little thicker. 17:57 Then we're going to add of course, 17:58 the arrowroot or cornstarch now. 18:00 So if you notice, I really don't use 18:02 too much cornstarch in our recipes, 18:05 because what does cornstarch do? 18:06 Cornstarch causes things to thicken, yeah. 18:09 And so if you cause things to thicken on the outside, 18:13 they're more than likely, 18:15 if you use it consistently too much all the time, 18:17 they're going to be thickening on the inside. 18:19 And you want to... 18:20 "Well, I'm eating all this healthy food 18:21 but I haven't been to the bathroom." 18:23 No, no, I'm talking about number two 18:24 in the past three days 18:25 because you probably using too much cornstarch 18:27 or arrowroot or something. 18:28 So you can use it once in a while 18:30 for special occasions, 18:31 we just say hold off using it all the time. 18:33 Then we're going to add our coriander. 18:36 But you can do the coriander cardamom mix 18:39 because what really makes that pumpkin pie pop 18:42 is that cinnamon and nutmeg. 18:45 But as you've heard a million times over, 18:47 we hold off on using excess cinnamon and nutmeg 18:51 because it does irritate a little bit 18:53 the digestive tract. 18:54 But man, it surely does taste good. 18:56 So what do we use instead? 18:58 We use what is known, 19:00 instead of cinnamon, we use coriander. 19:02 And instead of nutmeg, 19:04 we use cardamom which is gentle 19:07 and, you know, a little easier on the digestive tract. 19:11 Now the taste will be similar to be milder, 19:14 won't be that strong hard taste that you used to having. 19:16 But at least the digestive tract 19:18 is not bubbling, 19:19 you know, what I'm talking about bubbling 19:20 and being irritated. 19:22 So you can do that. 19:23 And it's a real simple way to make your mixes 19:27 there instead of nutmeg, 19:28 again we'll use cardamom and instead of cinnamon, 19:30 we use coriander. 19:32 So I just did a little mix, 19:33 a little bit of cardamom and coriander. 19:35 So I'm going to put that in there, 19:36 it's gonna give it that nice flavor. 19:38 And, man, that arrow root there is already thickening it. 19:42 You don't want to blend it too much 19:43 but with just a little whip there real quick. 19:51 All right, so there we go. So we have that. 19:53 Then we're gonna take our pumpkin 19:56 and we're going to use about... 19:58 How much we want to use? 19:59 We want to use about a cup or two. 20:02 So here we go. 20:03 I just went ahead and purchased the pumpkin 20:08 that you find in the stores, 20:09 it's simple, it's easy, sometimes. 20:12 I want to have pumpkin pie and it's not the holiday 20:15 and it's not pumpkin season. 20:16 So I use this and if you look at the ingredients, 20:19 it's basically, ingredient pumpkin, that's it. 20:23 They don't add much of anything to it. 20:25 So you can go ahead and enjoy that. 20:27 And so I have about a half a cup, 20:28 so I'm gonna put one there and I'm going to do... 20:32 So that's about one cup. 20:34 I'm going to be a little extra generous here. 20:36 And that's about two. 20:39 All right, two and a half, all right. 20:41 So here we go. So I have a little smaller pie. 20:44 So we're gonna do that 20:46 and then we're going to add 20:48 our cane juice crystals to this as well. 20:52 So we have our cane juice crystals. 20:55 put that in there 20:57 And, you know, I know I said Florida, 20:59 but I mean, any evaporated cane juice crystal 21:03 should do the job. 21:05 And look at that's going to come out nice 21:06 and thick there. 21:07 So we're going to move that. 21:09 And then we're going to mix it up. 21:10 This is so easy. 21:11 As a matter of fact, everybody can enjoy this. 21:13 The kids can enjoy this. 21:15 I know a lot of times, we like that sweet potato pie, 21:18 I think we made that some time ago. 21:20 But now you can enjoy the pumpkin. 21:22 I can't believe you're having dessert, 21:24 and you're lowering your blood pressure, 21:26 your fight against parasites, and all of that good stuff. 21:30 And a lot of people don't realize that. 21:32 Pumpkin also, especially those that pumpkin seed 21:36 is very good for the prostate. 21:38 So, gentlemen, get yourself checked out, 21:42 number one with that prostate, 21:44 get your annual screening there. 21:45 I know we don't like to go and get that stuff tested. 21:48 You don't like some you don't mind another man, 21:50 you know, put in on his gloves and tell you take a deep breath 21:54 and release it 21:55 and he stick in finger all up in areas 21:57 where it doesn't belong, but watch this. 22:00 I know nobody likes to talk about it. 22:01 But it's better that you get yourself checked out. 22:03 What they are checking for as they go in... 22:06 We're in the kitchen but we got to keep it real. 22:08 As they go in, they're trying to see 22:09 if that prostate gland has been enlarged 22:11 and so they can feel that there. 22:12 So watch this. 22:14 It's better to let the doctor go ahead and do it 22:15 instead of being under a knife 22:17 when a person has prostate cancer 22:19 and they're chopping things up 22:20 and things are not functioning ever 22:22 the way they should again. 22:23 So please get yourself checked out. 22:25 Or you know what, 22:27 get yourself checked out and have some pumpkin pie 22:29 and enjoy the pumpkin seeds, the raw ones as well. 22:31 So here we go, 22:32 oops I'm making a mess in the kitchen. 22:34 What you basically do... 22:37 Now, you know. 22:39 I enjoy cooking 22:40 but I don't like to unnecessarily cook. 22:42 So I found that 22:43 there were some really good pie crusts already made, 22:47 some of them could even be vegan. 22:49 You've seen us do many pie crust 22:51 before with the water, 22:52 with the flour, little bit of salt, 22:54 little bit of sugar, cane juice crystals, 22:56 and you can roll it out. 22:57 But here, I'm just needed something quick, 22:59 you have family coming over, you want that pumpkin pie. 23:01 So you can find a nice pre-made pie crust. 23:06 But you can do it yourself as well. 23:07 For a second of course, 23:09 we're going to go ahead 23:10 and we're just going to pour that in. 23:12 You all can follow along. Yummy for my tummy. 23:15 There it is. And just spread it out. 23:19 This recipe is literally so easy. 23:22 And people will have to wait for the holidays to have it. 23:25 You can literally do this almost every... 23:28 Not every day. Lord, forgive me. 23:30 Once a month or something like that to celebrate. 23:32 So here we go. We pour that in there. 23:35 And if you want to add a little extra flavor 23:38 or make it even more creamy, 23:39 you can do more cashews and make it even creamier. 23:44 So we're going to put that there 23:45 and then we just spread that out. 23:48 And voila, you have your simple pumpkin pie. 23:52 Oh, man, this is one of my favorites. 23:53 I know sweet potato was good, 23:55 but this is definitely my favorite. 23:58 Let me go ahead and shake it out a little bit. 24:01 And all you have to do 24:03 is basically have the oven on at about 350. 24:07 So I'm going to head over to the oven. 24:08 I'm going to put this in a oven here, 24:10 have the oven for about 350 24:13 and this should be able to bake within an hour's time. 24:16 And it will be ready literally, 24:17 you don't have to like overly plan 24:19 to make this recipe. 24:20 So hang out with me 24:21 and then I should have a finish one. 24:23 Here's my, oh, me, love me some pumpkin pie. 24:26 My oven is rolling there. 24:29 And voila, let's make sure we get that rolling. 24:33 Okay, there you go. 24:35 So that's going to get rolling there. 24:37 And then you have your simple pumpkin pie. 24:39 But also when I cook, 24:41 I always just like to clean real quick. 24:43 Because, you know, how crazy it is, 24:46 the most dreadful part of those holidays 24:49 is when everybody finishes eating 24:51 and you're left with tons and tons of dishes. 24:55 So one thing that I learned to do, 24:56 I just wash while I cook. 24:59 So, I can avoid myself the drama after. 25:05 Because after you finish cooking 25:07 and stuff like that, 25:08 you want to spend time with the family, 25:10 you want to talk, you want to mingle... 25:12 But wait, that's a good idea. 25:13 Get them to work, get your family to work. 25:16 After they eating all that other stuff, say, 25:19 "All you come with me, have a special activity. 25:22 It's found in the kitchen." 25:23 And bring them up 25:24 and give everybody assigned duty. 25:26 "You handle the dishes. You handle the dry." 25:27 Because when they all leave, 25:29 you'll be stuck with that stuff, 25:30 so save yourself the time. 25:31 So here we go. 25:33 I'm gonna show you 25:34 a finished product is already here. 25:35 We threw some pecans on here. 25:37 Here's my, oh, me, love me some pumpkin pie. 25:39 We threw some pecans. 25:41 You can make it however you want. 25:42 You could even put 25:43 some good healthy whipped cream 25:46 and let's see if I can get a knife here. 25:48 And you just line it up nicely. 25:50 And you don't have to tell the people, 25:52 "Oh, I didn't put butter. 25:54 I didn't do this." 25:55 Just make the pie, cut it, serve it. 25:57 And you know what, 25:58 they won't even know the difference, 26:00 especially we're gonna show some good recipes 26:02 that you can do. 26:03 So you just go ahead and cut that there. 26:06 I can feel... 26:07 I love the feeling of the crust when you cut it. 26:10 And that one there, so that's a nice one, 26:14 that one is for you. 26:15 I'm going to cut my piece of the pie now. 26:18 And make it a little bigger. Amen. 26:20 Little extra blessing over here. 26:22 And then you have that as well. 26:24 But let's take a quick look, 26:26 and see, and basically, 26:30 we worked that out there. 26:33 And let me get something else. 26:37 And then you can have your, 26:39 oh, me, love me some pumpkin pie. 26:42 Whoo! Nice and thick. 26:44 The thicker you want it, 26:46 the longer you let it bake there. 26:48 It's going to break up, but who cares. 26:49 It just goes in and comes out the same way. 26:53 So we go ahead. There you go. So we have that. 26:58 I have a little of extra blessing right there. 27:00 I'm going to put that on there. 27:01 It's going to be a mess, but who cares. 27:03 Just going eat all the same way. 27:05 Look at that, it fell all over me. 27:07 Then I'm going to run over to grab me some... 27:09 Let's see if I have some whipped cream. 27:14 All right, here's the whipped cream. 27:17 Whoops, so you put some of that whipped cream on. 27:20 Amen. 27:23 It's a mess, who cares, it's going taste good anyway. 27:26 And then basically, 27:28 you just take a piece of that there nicely. 27:31 And you can enjoy yourself some simple, simple, 27:35 lovely pumpkin pie. 27:37 Good for the body, good for the eyes, 27:39 good for the skin. 27:40 Who knew that you can enjoy a dessert on a holiday. 27:44 But not only enjoy it, but it's actually good for you. 27:47 So go ahead, enjoy the pumpkin pie, 27:50 because I will enjoy it myself. 27:52 Have a good one and happy holidays as well. |
