Wow! How did you first get here? 01:14 By van... 01:16 No, that's not what I'm talking about... 01:18 Believe it or not, Yvonne, there was some friends of ours 01:21 in Huntsville... they saw us doing different 01:23 programs for UAH and Oakwood College 01:26 and they kept saying, "You guys actually need to 01:28 just be somewhere real... on television or something 01:30 like that... " and someone mentioned to us 01:32 about the "Flagship Program" the Thursday Night Program 01:34 on 3ABN... where they were always looking 01:37 for individuals making a difference 01:39 in their Community... and although this had happened 01:42 3 to 4 years prior to that... every time I would see this 01:44 one woman... she would say, "Have you sent it in yet... 01:47 have you sent anything in yet?" and I would say, "No" 01:50 and so, finally, we sent in a DVD... 01:52 That we had... locally there... in Huntsville... 01:55 we sent in the tape there... didn't think too much of it, 01:57 and maybe about 6 months later we heard from... 02:00 from Dee Hilderbrand... Dee Hilderbrand our precious Dee 02:04 Yes... she called on the phone and when she called... 02:07 I thought it was someone playing around... 02:09 she said, "Hi, this is Dee Hilderbrand 02:11 from Three Angels Broadcasting Network... 02:13 and I said, "Is this my girlfriend playing with me?" 02:15 and she was so serious... she said, 02:18 "No, this is Dee Hilderbrand from 3ABN... " 02:20 so we talked for a few minutes, and then she said, 02:25 "I need for you to come on in and do the 'Flagship Program'" 02:27 and at that time... also... "Food for Thought" 02:30 Okay... And, it was late... 02:33 at the end of the year almost... when she started talking to us 02:36 and as she began asking about dates... this date, that date... 02:39 we already were booked until the end of the year... 02:41 and so finally the Holy Spirit said, 02:43 "Just tell her when you can come" 02:44 and I said, "Ms. Hilderbrand... we can come in 1997... 02:50 this is when we'd be coming up here... 1997... 02:52 and we were going to be able to come on March the 13th... 02:55 She said, "I don' even have a calendar for next year... " 02:57 I said, "Good, that means... it's open 02:59 and so we can come... " 03:00 and then what happened after we got here? 03:03 We came up here and did four other "Food for Thought" Series 03:06 okay... then we did a two-hour live 3ABN... "The Flagshow" 03:09 and we were supposed to be doing... 03:11 two hours of just talking... but one of the photographers 03:16 Videographer at that time... 03:18 camera crew said... what they need to do is... 03:21 one hour talking and the other hour... cooking... 03:23 Well, now, we just finished doing 64 recipes... 03:26 in two or three days... 03:28 Wow! are you serious? 03:30 For the "Food for Thought" series... earlier that week... 03:32 so my wife didn't want to look at another recipe... 03:35 another pot... or spoon... and he said, 03:39 "I'll go shopping for you... I'll do anything... 03:41 you got to go in the kitchen, you got to cook... " 03:43 "I'll do it all... I'll do it all for you... " 03:44 but it didn't have to happen, 03:46 after we really just kind of thought about it... 03:47 Curtis said, "What are the quickest recipes 03:49 that you actually have?" 03:50 something easy, something quick and believe it or not 03:53 that was the very first time that Danny had ever 03:56 gone into the kitchen... 03:57 we brought him in the kitchen with us... 03:59 You got him to come to the kitchen? 04:01 That kitchen was maybe... less than 10 years old I believe 04:06 Okay... wow... He was in there... 04:08 and we did it live... and he was in the kitchen... 04:11 Great... So, it was wonderful... 04:12 then after that show... the phone rang off the hook 04:15 we were told and then after that... 04:17 Dee Hilderbrand said, "We want to offer you 04:20 your own television series... " Wow... praise the Lord... 04:24 And in six months of shows, 04:26 26 titles... 04:28 I looked at my wife... and she said, 04:29 "Honey, do we know 26 titles and shows?" 04:32 I mean, we'd been doing things in the Community... 04:34 but to list all 26... Yes... 04:37 so, 26 shows meant 04:38 6 months of taping... 04:40 Yes... and that's how long it would go 04:42 and I thought to myself... "We need to check in with the 04:45 Father on this... I mean... that's a long time... 04:47 that's a lot to do... " 04:48 so, we wanted to go back and pray and ask the Lord, 04:51 "Is this what He wants for us" Hmmm... hmmm... 04:52 because we really believe in letting God do 04:54 what He does best... 04:55 Yes... for sure... So, we went back to our room 04:57 and we said, "We're going to pray about it 04:59 we'll go to sleep, we'll wake up in the morning... 05:00 and give you an answer... " 05:01 And so, we went back to our room... 05:03 we had prayer... we asked the Lord, 05:05 if this this what he wants... that He would open a door... 05:07 we said, "26 shows... I don't know if we know 05:10 the titles of 26 shows... " 05:11 And so the next morning... we sat up in the bed 05:14 and the Holy Spirit just... the shows just kept running off 05:18 our minds... up to about 32 shows... 05:20 I mean... just one by one... 05:22 So, we called back over... and told Dee, 05:24 "Okay, we're open... " and she said... 05:26 "I'll stage it in six months... way to go?" 05:28 That's great... 05:30 Fifteen years ago... so we just praise God for that 05:32 this is just a blessing and... I can't tell you how many 05:35 phone calls, e- mails, letters... 05:38 we get boxes of letters... and lives have been touched 05:41 and we just praise God for the opportunity... 05:43 Yes... yes... amen... now, what would get you 05:46 involved in this health path in the first place? 05:48 Okay, there are two separate stories... 05:50 Honey, let's go with your version first... 05:52 Well, actually, Yvonne... I mean... 05:56 I was not born and raised in the Adventist Church... 05:58 and so, I lived in Philadelphia, and was one of 10 children... 06:01 and so, basically... everything that wasn't 06:04 nailed down to the floor... we ate... that's what I say 06:07 I barbequed and steamed and baked, 06:08 whatever you had to do... and so I would never have 06:11 guessed that anything like vegetarianism 06:13 would be even in my mind... 06:14 we didn't even have vegetables when we were growing up... 06:16 Yeah... and so... as we began... 06:18 as I began... after marriage and taking care of the children 06:22 and stuff... and then... we were in a Church 06:24 where they kept talking about the Health Message... 06:26 and once I became a Seventh-day Adventist... 06:28 so, I went to this class... in our Church... 06:31 our Pastor's wife was teaching it 06:32 and when I got in the class... she was talking all about 06:35 the relationship in the family, 06:37 the Father is the priest of the home... 06:39 and he's the one who is supposed to raise the family... 06:40 in the fear and love of God... 06:42 that sounded really good, you know... 06:44 and I said, "Good, great, great, he's got that... " 06:46 Yeah... and then she said, 06:47 "But then the mother... the mother is the gatekeeper" 06:50 Oh come on now... 06:51 Oh, the Gatekeeper... which means 06:52 that she has the ability to either make or break her family 06:56 by the things she's actually feeding them... 06:58 Oh yes... and I said, 06:59 "As if I didn't have enough responsibilities... 07:01 now I got this whole thing about being a gatekeeper... " 07:04 Along with everything else, I'm being a gatekeeper!" 07:06 after all the other stuff I'm doing, you know... 07:07 and I started thinking about my children 07:10 and I wanted to make sure that they were going to be okay 07:14 and so... then I began... actually changing 07:16 recipes out... I remember... the first... 07:18 after I finished the first class... 07:19 we got in that room and I was making these burgers up 07:22 Yvonne, it was not good... Oh, what did you do... tell us 07:24 I got these burgers together they had, at that time, 07:26 these gran-burgers out... where you put this 07:27 gran-burger granules into a bowl and add hot water to it... 07:31 and we not supposed to add any eggs to it... 07:34 or anything like that, and so, I went and got those 07:36 burgers together... I got that stuff, 07:38 you have the water and everything... 07:39 and I scooped it up and I put it into a skillet... 07:42 and every single gran-burger ran to the side of the thing, 07:45 I got the spatula, I pushed it back together 07:47 and I ran back out of there and then I started crying... 07:50 I called my girlfriend up because we were going to class 07:52 together... and I said, "This is not working 07:54 I don't know why I'm doing this, this is so crazy," 07:56 she said, "Paula, let's just keep praying, 07:58 ask the Lord to help us out... " and over a period of time, 08:01 I began to just work on these recipes... 08:04 Hmmm... 08:05 and my pastor... was so open... 08:07 one day I walked up to him and I said, 08:08 "Pastor, I want to do some cooking classes... " 08:10 he said, "Okay... " 08:11 and I said, "I want to do it right here in Church... " 08:13 he said, "Okay" and I said, 08:15 "Well, and I need food and stuff... " 08:17 and he said, "fine... " Elder Mendinghall... 08:19 Elder Ezra Mendinghall... yes... yes... 08:21 he's just a very calm personality... 08:23 and so we started classes in the Church... 08:26 and I was Okay for a while... teaching... 08:29 but then people started asking me stuff about 08:31 anatomy and physiology... what happens inside the body, 08:34 I didn't have that knowledge base... 08:35 I only had that cooking thing going on... 08:37 Come on... come on now... 08:38 And I just kept saying... to myself... you know... 08:40 anatomy, physiology... how am I going to work that out... 08:43 I would go home and try to study it... 08:44 what's the difference between salt and sodium... 08:46 is it the same word? Hmmm... hmmm... 08:48 and I prayed... and I talked to the Lord about it 08:51 and decided to go to School... Amen... 08:53 so I had been in Church a while... 08:55 and then, I decided to take classes... 08:57 in this whole area... and I'm telling you... 08:59 I cannot tell you... I love nutrition and cooking 09:02 so much... I was on the front row... 09:04 before the teacher came to class... 09:06 I was up there in the front... 09:07 You're a woman after my own heart... 09:08 I never expected that, I was so excited, you know, 09:11 You know why... because if you don't know something... 09:17 you go and learn about it... duh... 09:20 if you don't know... there are all kinds of things 09:23 available now... classes and opportunities 09:25 we just have to find out where they are... 09:28 and take advantage of it... so you are... 09:30 just like one of our Dare to Dream poster girls... 09:34 "I'm a poster girl now... " Because, you know, 09:37 you didn't know know... so you went back to School 09:39 that's a wonderful thing, okay... so... go ahead... 09:42 well I was, of course, a little bit more mature 09:44 than most of the students at that particular time... 09:46 That's okay, it's never too old you're never to old to learn... 09:49 But then I had to do anatomy, physiology... bio-chemistry... 09:53 micro-biology... I'm like... 09:54 Okay... maybe I'm in the wrong field... 09:57 What have I gotten myself into? 09:59 But believe it or not... there was a woman in the class 10:01 that was much older... and she was there... 10:03 and she was kind of... like my encouragement... 10:05 I figured... if she can go to school... 10:07 and she was a lot older than I was... 10:08 then, I'm going to just hang on in here... 10:10 but God is awesome... because He helped me get through 10:13 each one... the Lord is good because the 10:15 entire time that I was in School and prayed the prayer... 10:20 the Lord had me... always I had a 3.8 to 4.0 averages 10:24 for the whole time I was in School... 10:26 Oh... So much so, I won all these 10:27 Scholarships and Awards... and I was going to do my 10:30 next... my first two years and my second two years... 10:32 and then finally... after graduating with my first 10:35 degree... well, really two... 10:37 with the... two-year... and then the four... 10:38 and then when I moved to Huntsville, Alabama... 10:40 I went into the Master's Program 10:42 and that Master's Program... along with working there... 10:45 I was also at Oakwood University teaching as a Professor 10:49 Wow! and also... working... 10:50 well I was working in the cafeteria first 10:52 as an In-Service Nutritionist, as I was finishing the 10:54 Master's Program... and then from the Master's Program 10:57 I went into the actual classroom and taught as a Professor 11:01 at Oakwood... Oh, this is so good... 11:02 you know... because our viewers see you guys 11:04 but they don't know really... they don't know what's behind 11:08 Hmmm... What's the story behind you... 11:10 so I'm glad that we can offer that... 11:12 what about you Curtis, now... 11:14 Well, I grew up as a Seventh-day Adventist Christian 11:16 my mom was a single parent, coming up in Cleveland, Ohio... 11:19 and so... we always recognized the health message... 11:23 as far as... we always had whole wheat bread, 11:26 Hmmm... we ate meat at that time... 11:28 but not a whole lot... Hmmm... hmmm... 11:29 as I grew older... I began to study more on my own... 11:32 when I moved away from home at Age 21... 11:34 I began to study more about the health message... 11:37 and what it does... to the body temple... 11:39 Hmmm... I began to read more and more 11:40 and realized that... there is a connection between 11:42 what goes into my body... and my spiritual well-being... 11:46 the connection... Ah... come on now... 11:49 come on now... say that again because our viewers need 11:51 to hear this... say that one more time... 11:52 What goes into my body... impacts my spirituality... 11:55 Hmmm... hmmm... how so? 11:56 Yeah... well, number one... I read a statement... 11:59 there's a book called, "Counsels on Diets and Foods" 12:01 Hmmm... hmmm... it's about... maybe I guess... 12:04 about 28 years ago... 12:05 on a Sunday night in Houston 12:07 in my one-bedroom apartment about 10:30 at night... 12:09 I remember it very well... I read a statement that says... 12:12 page 381 I believe... "A religious life... could be 12:18 more successfully gained... and maintained if meat is discarded 12:25 for this diet... weakens the moral and spiritual nature. " 12:31 Wow! wow... when I read that... because, 12:35 I was like maybe 23 or 24 12:37 so if you told me that flesh food increased my risk of 12:41 Prostate Cancer... Diabetes and Heart Disease... 12:43 that's fine... the worst thing there's McDonald's... 12:45 that would not have fazed me... Hmmm... 12:47 but when I realized that this article... food... 12:49 impacts my spirituality... you got my attention... 12:52 Hmmm... hmmm... and I began to read more about 12:54 what the Bible says about that too... 12:55 1 Peter 2 verse 8 and verse 10 impacts the spirituality... 13:00 so that moved me to more of a healthier lifestyle... 13:03 and my mother always said, of our family... 13:05 I was the first one who became a vegetarian... 13:07 then my mother said... "Well, I can't let my children 13:10 go ahead of me... " and so she became a vegetarian. 13:12 All right... hmmm... hmmm... But I really... 13:14 it had nothing to do with health 13:16 it was first the impact on my spirituality... 13:19 Very interesting... That's what drove me to the 13:21 health message... as far as that's concerned, yes... 13:24 And I would think that... it's because... 13:26 the mind is clearer... and can receive the impulses 13:31 from the Holy Spirit... Right... 13:32 and the "impress" of the Holy Spirit... 13:35 much more readily... Absolutely... 13:37 when the diet is better... 13:38 Yes, and I began to read... what God's original diet was 13:41 in the Word of God... the first book of the Bible, 13:43 the first chapter of the Bible, and it says in verse 29 13:47 then after sin... Genesis 3 verse 18... 13:50 both of those two verses, 13:52 is a plant-based diet... 13:53 That's right... and with that plant-based diet, 13:55 then people... in Biblical days lived... 900-years-old... 13:59 Hmmm... You know, Adam... lived like 930 14:02 Methuselah lived 969 years, and so... in the nine hundreds, 14:06 when meat was introduced... the life expectancy went down, 14:11 so... So, would you say then... 14:12 getting back to what I had said at the very beginning 14:16 at the outset of the Program, that one of the things to do 14:20 to get started... on that healthier path... 14:23 would be to eliminate or at least 14:25 reduce the consumption of meat, would you say that? 14:28 I would say, starting off... like you just said... 14:30 the word "reduce" some people can go cold turkey 14:33 and go completely off of it... 14:34 but... if you're reducing it... little by little... 14:37 but you're adding now... recipes that actually mimic 14:39 because one of the things that has made our 14:41 show successful is that... we have not changed out 14:44 the whole recipe to something 14:46 that people have never seen... Hmmm... 14:48 in other words... we make foods that look like 14:49 something that they've... we eat with our eyes... 14:51 Hmmm... hmmm... and so, if it looks good... 14:53 and something we've had before, we're more apt to try it... 14:56 it's just those strange foods that people kind of back off 14:59 away from... and so... we never talk about the word 15:02 "Veganism" we say... plant-based Hmmm... hmmm... 15:06 because when you say the word "Vegan" 15:07 that's even worse than saying "vegetarian" 15:10 Vegetarian is bad... but Vegan is like... 15:12 we're in a different planet... you know... 15:14 "the 'V' word" the V word... 15:16 so all we can say is... "Cholesterol-free" 15:19 Oh, there you go... That's Vegan but... 15:21 people don't connect the dots... Yeah, yeah... 15:23 Maybe the ones watching the Program 15:24 may now connect the dots... but I just threw it out there so... 15:27 When you're dealing with Community education... 15:29 you want to kind of start them where they are... 15:31 Hmmm... hmmm... but the object is to move them 15:32 on to a better thing... 15:34 and so, with that in mind... the same thing with me... 15:36 when I was raising the children up 15:38 and that was... that was a whole different 15:40 world for me to talk about... trying to talk about meat 15:42 I mean... not meat but, vegetarian... 15:43 when we were not even going that way... 15:46 had not eaten that kind of stuff 15:48 when we were growing up... and so, to actually move 15:51 into it... I cried a lot... and I tried a lot of things 15:54 I threw a lot of things in File 13 15:55 and that's the trash can 15:56 and as I began putting things together... 15:58 more and more... putting things together... 16:00 things began to just taste better... 16:02 and it looked good and people were like... 16:05 "Girl, your stuff is really good Girl... " 16:07 they kind of... pulled me on... 16:09 Yeah, yeah, that reinforces... right? 16:12 It really does... Because you start... you know... 16:14 you start getting some success here... 16:16 it's tasting good... your family is saying, 16:18 "Oh, this is good... " and what's really good... 16:20 is when people... who normally are heavy-duty meat eaters... 16:25 when they taste your food and they go... 16:27 "Oh, I can do this... " then... it's... 16:29 it really makes you feel good... 16:30 And they think they're eating meat... 16:32 That's it... Oh... 16:33 See, we don't tell them until they finish swallowing... 16:36 Okay... then we tell them... 16:38 they say, "Really... " yeah... 16:39 Okay... okay... and I have to taste all this... 16:42 I mean... it's a rough life... it really is... I mean... 16:44 I'm just up to... my ankles may be... okay... 16:47 but somebody will have to sample it 16:48 before it goes out into the public 16:49 so, it's me... Well, see now, in the 16:52 beginning days... I would have said, "Poor you" 16:54 but now... I don't think I'm saying that... 16:57 I can't tell you how many guys want to switch places with me 16:59 for tasting the food... that is... 17:01 We did a class one time, we did a class one time, 17:03 and we were giving out door prizes... 17:05 and we had people come on stage and we were giving 17:09 different samples out and everything... 17:10 and so when we got done, one guy raised his hand up... 17:12 and he said... "I just have one question... 17:13 one question... " and Curtis said "Okay, go ahead" 17:15 and he said, "Well, I noticed you're giving 17:17 a lot of stuff away... but I was just wondering... 17:18 can we take her home for about a week?" 17:20 Curtis said, "I don't play that, I don't play that... " 17:24 This is in Wisconsin... the guy... he was in his 70s 17:27 and I said... "I don't play that... " 17:30 I was not smiling... he got the message... 17:34 so let's move on... "No, I'll not share my wife... 17:39 forget about it... " 17:41 So, okay, so... let's look at this... so... 17:43 you would reduce or eliminate 17:46 meat... animal products... okay... 17:49 what else would you tell people to do... that don't know... 17:52 they want to get healthy, but where should they start? 17:55 I would switch... we start switching things out... 17:57 for instance... when you reduce the milk... okay... 18:00 then you're going to look for something that looks like milk 18:02 or acts like milk... and milk is actually just there 18:05 to help get things wet... so we'll move from whole milk 18:08 2 percent milk... 1 percent milk... 18:10 then we're going to move now into almond milks... 18:13 and we're going to move into soya milks... 18:14 then we're going to move into rice milks... 18:16 because they have the same coloring 18:18 and because you just need that there 18:19 just to keep things together... 18:21 then we start using that... so you got your milk substitute 18:23 then we're looking at the cheeses 18:25 now before... back in the day... 18:26 they had all those hard cheeses out there... and then... 18:29 even when you went to vegetarian-type cheeses... 18:31 they really didn't melt or anything 18:33 because after all... a regular cheese is actually 18:35 nothing more than a soya bean itself... 18:36 you can't really break that down 18:38 Hmmm... so, we say now... 18:40 there are so many substitutes on the market... 18:43 that are imitation cheeses, on top of which 18:45 we actually have made our own cheeses... 18:48 that you can make from scratch, 18:49 and put on your pizza, your Mac and cheese... 18:51 all that kind of stuff... so you want to look at... 18:53 instead of trying to take everything away... 18:55 let's see what we can do in it's place... 18:57 like he said, for the meat part... you can... 18:59 there are burgers out there 19:00 there's ground beef out there there's Mock Chicken out there 19:03 everything that people are used to... 19:04 so you want to switch them out... 19:06 There are ground beef substitutes... yes... yes... 19:08 The main thing is to give them something... better 19:11 because the number one killer disease is cardiovascular 19:14 heart disease and stroke... every 45 minutes... 19:16 every 45 seconds... every 32 seconds... 19:19 are stroke and heart disease... heart attack... 19:21 so, and a lot of that is due to a high cholesterol level... 19:24 Okay... cholesterol comes from? Animal Kingdom... 19:28 as an animal with a face or a mother... 19:30 so, if we take that away... really... 19:32 then you eliminate or reduce the risk of 19:35 cardiovascular disease, so it's just not the meat... 19:38 the products of flesh... which is the milk and cheese... 19:41 we'll switch that out... so it still mimics... 19:44 tastes like... looks like... has the same mouth-feel 19:47 and can't tell the difference... 19:49 And see... I think that... that's critical 19:52 because if you give people things that are 19:54 too foreign to the taste, 19:56 like... "You know what... this is not happening... 19:59 I don't like it... I can't get with this... 20:01 this is not happening... " 20:03 but if you have something that tastes like 20:06 the original deal... Right... and looks like... 20:10 and gives you that same consistency of... 20:13 then... it's not such a difficult transition... I think 20:16 Yeah... we have a statement saying... 20:18 "Never serve your Company... 20:21 strange foods... " 20:23 Because if it's strange... if it's strange... 20:26 I don't care how healthy it is, if it's strange... 20:28 I'm going to McDonald's, "Where's Popeyes?" 20:32 Well, you know... as a professor at Oakwood University... 20:34 I remember teaching my classes in Nutrition... 20:36 and my students would always say, 20:37 "Ms. Eakins... the kind of food that we're supposed to be 20:40 eating here... you know... if I ate that way... 20:42 there's not enough food there" and I said... 20:45 "That's because you eat to live, not live to eat... " 20:48 and now we start trying talking about 20:50 making those changes... and making changes inch by inch 20:52 we say, "Inch by inch... anything's a cinch... " 20:55 and so you just have to try to switch things out... 20:58 you know... if you switch out... switch out your milk... 21:00 and then you switch out your cheese... 21:01 and then you switch out... so you can still just move 21:04 gradually into it... we call our diet really... 21:06 "Alternative" "Another Alternative" 21:08 instead of trying to push it on you... 21:10 we can say, "Why don't you consider 21:13 doing a plant-based diet maybe one day a week... 21:17 and then, maybe, three days a week... 21:18 and so, that way they don't feel like you're trying to 21:20 really give them a hard time, 21:22 and they can still... in between time... 21:24 get some good recipes that can make some good food up. 21:27 You really did not really eliminate a lot of their 21:29 favorite foods... just changing their ingredients 21:32 That's right... and that's the key... 21:33 That is the key... that's what I found too 21:36 when I was practicing... that if you want people to 21:40 improve with their diet... you have to... 21:42 you can't take away... and not give them something 21:46 that is equal or better... 21:47 or not equal... but better 21:49 so that they are getting on a new path 21:52 without really sacrificing that much... 21:55 And let me add one more critical thing... 21:58 Hmmm... Also, as a bonus... 22:00 more economical... 22:02 Oh yes, when they're counting their money... 22:03 oh! absolutely... 22:05 Now, that's interesting because some people would say, 22:07 "Well, isn't it expensive... to buy all that stuff?" 22:09 That's one thing we always hear okay... not necessarily so... 22:10 Okay... tell us how? 22:12 Honey, let's go with the burgers... 22:14 just for instance... go ahead... 22:15 You know the thing that's so amazing is... 22:16 we have about 6 different kinds of burgers we make... 22:18 with a lot of beans... and you know, 22:20 beans are very inexpensive... Right... 22:22 and we buy the dry beans and then we cook the beans up 22:24 and then we start putting all the seasonings and spices 22:26 and breadcrumbs and stuff in them... 22:28 so you're actually going to spend less money... 22:30 there's no bone... there's no fat... 22:33 there's no grizzle... you got the real true burger there 22:36 so we make these burgers up 22:37 and put them on a whole-wheat bun 22:39 with lettuce, tomatoes, red onions... 22:40 Oh... come on... come on... 22:42 I know... with food... I get excited with food... 22:46 I can't help it... 22:47 I get excited with food... 22:49 So we serve them up with something like our 22:51 oven-baked fries... we do the fries in the oven 22:54 you know... and then we'll do a smoothie 22:56 which is like a milk shake with strawberries and bananas 22:59 and oranges and stuff in it... 23:00 so, it's really like the foods they're used to seeing... 23:03 but it's a healthier format... so we say, 23:06 "Don't snatch away the stuff you're used to... " 23:08 We like to find out what individuals like to eat... 23:10 Their super foods... 23:11 and then we turn around and make the foods 23:13 that match the foods they eat... That's great... 23:15 And we also have a saying that goes something like this... 23:18 "The cost of food... does not stop at the cash register. " 23:21 That's right... that's right... Oh, come on now... 23:23 Because what you buy, that cost of food... 23:26 also continues on to the doctor's office... 23:28 medication... drugs... clinics, hospitals, et cetera... 23:32 that's the total cost of food. 23:35 That's a great point... and you're going to pay 23:37 either before... or after... That's right... 23:40 You know... somehow you're going to pay for what you do... 23:42 that is so critical... Yeah... 23:45 What would you say... is the greatest challenge 23:48 that you guys face... in conveying 23:51 health principles to people, what do you think 23:53 is the biggest challenge to getting people 23:56 to actually make a change? 23:58 I think... 24:01 a lot of times... a lot of people... 24:03 now we are in the South... Huntsville, Alabama... 24:06 Okay... And... that South has 24:10 the most challenging area of any area in the United States 24:13 How so? 24:14 we're the "Diabetes Belt" number one... 24:17 we're in the "Stroke Belt" number two... 24:21 the top 3 Obese States in this Nation... 24:24 Mississippi is number one... eight years running... 24:28 Alabama and Tennessee are tied for second place... 24:30 Wow! I didn't know that... So the obesity rate... 24:33 is top in South Central area as well... 24:35 so we're a "Stoke Belt," "Diabetes Belt," 24:38 and "Obesity Belt" with that... you also have 24:42 of course, hypertension as well... 24:44 so with that in mind... you have a lot of cultural taste 24:47 that people are used to eating, in those States... 24:51 mainly... fried foods... 24:54 Hmmm... hmmm... Particularly in the South... 24:56 in the deep South... Hmmm... hmmm... 24:58 so, therefore, we have to educate people 24:59 and we go through God's Word... 25:00 the Word of God... because... we're also in the 25:03 "Bible Belt... " we have to have more freedom 25:06 in that area... spend more in educating people 25:09 in our PowerPoint presentations 25:10 there are Bible texts in there too... 25:13 we don't turn into a Sunday-School Class but... 25:15 let people know that the Word of God 25:16 has something to say about healthful living... 25:19 help them have more freedom than let's say in the West 25:21 or Midwest... all right... so look at it 25:23 from that standpoint... from the Spiritual standpoint, 25:25 from a Biblical standpoint, people are more accepting 25:28 and realize that... the Word of God has something 25:30 to say about healthful living as well... 25:31 and they seem to be a little bit more accepting 25:34 and make that transition as well... 25:35 Along with that too... is that... 25:37 when we're doing our classes in the Community... 25:39 the people are sick... when they come to our classes 25:42 their cholesterol's sky-high their blood pressure is high, 25:44 and they've got Diabetes... so they come to the Class 25:47 because they want to learn more... 25:48 although they might not be ready to make these changes, 25:50 but they want to learn more about what's going on 25:52 with their body... the high cost that they're 25:54 paying for the drugs they are taking, 25:55 or someone's just died of a Heart Attack or a Stroke... 25:58 and so they're more open when they come in... 26:00 Yes... although that tradition 26:02 is still back there... Right... 26:04 and so that's why we make foods... 26:06 that match their tradition... 26:08 Once they taste the food... yeah... Master of Tradition... 26:11 That is critical... because if you're... 26:14 they're going to want... many times... 26:17 some Greens... Mac and Cheese, Fried Something... 26:21 Corn Bread... Fried Chicken... so if you can find a substitute 26:27 for each thing... that's palatable... 26:29 it still tastes good... so, they don't go... 26:32 "eeewwww... " 26:33 Because they're not missing anything... 26:35 That's right... that's right that is critical... 26:37 You know what... oh go ahead... 26:38 I'm just saying... we just praise God... 26:40 because when we go and do these Programs... 26:42 is that... we find out what's actually going on 26:44 in that Community... and so we prepare the foods 26:46 that match that... so they're excited... 26:48 because they know... okay... I don't believe this... 26:50 so they'll say something like, "No she didn't do that... " 26:52 "No she didn't make a cheesecake with tofu... 26:54 with strawberries on the side, no, no, no... " 26:56 but when they go to eat it they are shocked 26:58 and they are ready to get the recipes and start... 27:00 Oh... you know what? our time is up... 27:03 I can't believe it... our time is up... 27:05 Hey, let's go for another 30 minutes... 27:07 We can't have the Director go...
