00:01 Welcome back to the Ultimate Prescription.
00:02 And on today's program we're talking about food 00:04 as medicine and specifically, we're talking about greens. 00:08 And I'm Nick Evenson, your host here, 00:10 and we're talking with Dr. James Marcum. 00:11 And, Dr. Marcum, what are some of the really practical ways 00:14 we can apply this in our lives? 00:15 Well, you know, we want to eat 00:17 at least two servings of green a day. 00:20 Well, you can eat that raw or added to a salad 00:23 which is what most people do. 00:25 And remember, it doesn't have to be, 00:27 you know, this is arugula which is very good in nitrates 00:30 which is what I recommend to my heart patients. 00:33 But it can be anything that's green, you know, 00:35 anything that green, 00:37 some broccoli has some advantages, 00:38 cilantro, different green things 00:41 have some of the same benefits, 00:42 they all have some of the good stuff 00:44 that we talked about, the chlorophyll, 00:45 the fiber, the nitrates, the antioxidants in them, 00:48 it helps the bowels get going, 00:50 give us a lot of fiber with roughage, 00:53 it's all good for us. 00:54 But you know, practical ways are very important. 00:56 Lot of people don't know how to prepare greens. 00:58 That's right. 00:59 And because of this, 01:01 I'm not very good in the kitchen. 01:02 Are you, Dr. Marcum? Nope. 01:03 All right. That's why I eat raw. 01:05 We've asked for some help with this next part. 01:06 We wanted to show some simple preparations 01:09 for some of the different foods that we're talking about. 01:10 And so our friend Kristina McFeeters, 01:12 she runs Kristina's kitchen, 01:13 has done a cooking demo about greens. 01:15 And, Dr. Marcum, tell us just briefly who is Kristina? 01:17 How did you meet her? 01:18 Yeah, Kristina lives in one of the poorest counties 01:20 in rural Kentucky, McCreary County. 01:23 And she has a mission there 01:25 of helping people improve their health, 01:29 introduce them into biblical prescriptions, 01:31 and once they get interested in 01:33 how God wants our bodies to feel better, 01:35 their minds feel better, their worship feel better, 01:37 so she has a restaurant 01:39 that serves whole food plant-based food, 01:43 and she has agreed to help us to show our viewers 01:46 one way that they might want to 01:48 incorporate greens into their lives. 01:50 All right. 01:51 Well, we're very appreciative of Kristina sharing with us. 01:53 And let's take a look at that clip now. 01:56 Welcome to Kristina's Kitchen. 01:58 I'm Kristina McFeeters. 02:00 Today we're gonna explore one of my favorite ways 02:02 to incorporate kale into my diet. 02:04 Two of my favorite types of kale, you can see here. 02:09 We have the little baby kale 02:12 and then we also have the large kale. 02:15 Both of these you can find in most grocery stores 02:18 in your produce section. 02:20 The baby kale, if you want to eat kale raw, 02:23 this is your best to use. 02:25 Because it's tender, it's very mild in flavor, 02:28 it chops up really nicely in salads. 02:31 And that's one of my favorite ways 02:33 to use the baby kale. 02:35 I want to show you 02:36 one of my favorite ways to steam kale, 02:39 and so I'm gonna show you on the big kale. 02:41 The first thing that I'm gonna do is 02:44 I'm going to cut this spine off, 02:47 so I have just the kale itself. 02:53 You know, as I said, 02:54 my favorite thing to do is to steam it. 02:57 A lot of people like to boil it, 02:59 or sauté it, or roast it, 03:01 and all of those are okay, 03:03 but if you want the maximum amount of nutrition, 03:06 you want to steam your kale. 03:09 And the reason is 03:10 because steam never gets above 212 degrees. 03:13 And so you get the maximum nutritional benefit from it 03:17 because it's not killing all the vitamins 03:18 and minerals out of it. 03:20 We're just gonna chop this into some pieces here. 03:26 So we're gonna put this chopped kale 03:29 into our steam pot here. 03:33 And you can see it's nice and steamy, 03:36 and water is boiling underneath it. 03:38 And we're gonna put this kale in, 03:40 and this may look like a lot of kale, 03:42 but it's really not. 03:44 It's going to shrink a lot once it gets cooking. 03:50 So we're just gonna put that in. 03:53 And this type of kale because it's more tough, 03:58 takes longer to cook. 04:00 So if you were to steam something like this, 04:03 it would steam in a very short amount of time 04:05 anywhere from 5 to 12 minutes. 04:08 But if you're steaming something more tough 04:11 and mature leaves, 04:13 it can take anywhere from 10 to 20 minutes. 04:17 We're going to add a couple more things to this for flavor. 04:20 Well, those are steaming. 04:23 One of my favorite things to put in is some onions, 04:26 because if you're steaming the onion in with it 04:29 with those greens, 04:31 it's gonna cook that onion flavor into them, 04:34 just make them absolutely wonderful. 04:36 So we're gonna peel this onion, and then we're gonna chop it, 04:40 and then we will also 04:42 mince some garlic cloves with it as well. 04:47 So the onion doesn't have to be chopped in small pieces, 04:51 you can chop them fairly large if you like. 05:05 All right, so we have our onion now. 05:07 We're gonna put that in with the steaming kale. 05:11 And while you got it here, 05:13 we're gonna just mince some garlic directly into it. 05:16 I've got two cloves of garlic here. 05:19 So there's one and there's two, 05:24 and we're just gonna mince that right in. 05:27 Put that on top and cover the lid back on 05:31 and let that steam, until it's ready. 05:34 See how fun and simple this is. 05:37 It's full of nutrition, delicious, 05:40 great source of fiber, and it's so easy. 05:44 Be sure and try this at home. 05:47 Now, Dr. Marcum, I'm not very good in the kitchen 05:50 but that did look pretty simple. 05:51 I think I could do it. 05:52 Well, you know, Nick, she said the word fun. 05:56 I would have a hard time saying that that would be fun, 05:59 but I like things that are easy, 06:01 you know, if that's easy for people 06:03 to incorporate greens into their lives, 06:05 I think that's a great thing to do. 06:07 That's right. 06:08 And we'd really like to thank Kristina 06:10 for sharing her talents with us. 06:11 You know, not everybody can prepare food easily 06:13 and then of different kinds of greens, 06:25 there is bok choy, arugula, all different kinds. 06:29 And they're all delicious and have different flavors. 06:31 But is there any cautions, 06:33 is there any particular groups of people 06:36 that need to be concerned 06:37 about eating too much greens of certain kinds. 06:39 That's a good question because the people 06:41 that are on blood thinners, 06:42 specifically the blood thinner called coumadin, 06:45 warfarin, jantoven are other names of it. 06:48 This can interact with that medication. 06:50 Okay. 06:52 So greens actually, if they're on these medicines 06:54 makes the blood thicker, okay. 06:56 So for instance, if you're on blood thinners, 06:58 because of a heart valve and you're taking coumadin, 07:01 right, to make the blood thin 07:03 because you don't want to have a stroke from that valve. 07:05 If you take greens that might make the blood thicker, 07:08 increasing your risk of having a stroke. 07:11 Now there are some newer blood thinners 07:12 that we use for other things like atrial fibrillation 07:15 that doesn't have a green interaction. 07:17 So whenever you start eating greens 07:19 and you let your doctor know. 07:21 Now and my patients they say, "I want to eat greens, 07:23 I want to eat greens, Dr. Marcum." 07:25 I say, well, if you eat the same amount everyday 07:27 and we check your blood thinner, 07:29 then we can sort of monitor the dose of the blood thinner 07:32 based on the amount of greens. 07:34 So that's one group that has to be very careful 07:37 with how much greens they eat, and let your doctor know, 07:40 you know, what you're eating every day. 07:41 But greens is very beneficial and the studies have all shown, 07:46 how many great things it does for a body. 07:48 So I'm gonna make that commercial someday 07:50 about how greens they do our body good. 07:52 That's right. 07:54 And you know, greens are great, 07:55 you just give us a little bit of a disclaimer 07:56 that there may be some interactions. 07:58 But as all advice you may hear from Dr. Marcum 08:00 here on this program, always work with your physician 08:02 and ask them if this is something that will help you. 08:05 Right. That's a good point. Yeah. 08:07 You know, one interesting fact 08:08 that I looked up about greens is that, 08:11 you know, we talked about Hippocrates previously. 08:14 Back 400 years before Christ, 08:16 Hippocrates is rumored 08:17 to have started his first hospital next to a stream 08:20 so that he can grow watercress. 08:22 Yup.
