00:01 Welcome back. We want to thank you for staying with us here on
00:02 the Ultimate Prescription where we're
00:04 discussing food as medicine.
00:06 And someone just brought it to our attention during the break
00:08 that's it's actually pronounced Chia seeds, right?
00:11 I guess the fact checkers are right, so I would like to
00:15 apologize to the Chia seed family: their mothers, brothers,
00:19 uncles, and all the people in the Chia family,
00:22 and the manufacturers, for making... What did I say? Kia?
00:25 Kia, yeah, Kia's a car.
00:27 Uh, you know, you get a good few years.
00:28 I did say pumpkin and sesame seed right? Right?
00:30 That's right, that's right, yeah.
00:32 And we can eat those raw, we can put them in baking.
00:34 There are lots of ways to incorporate this to maybe
00:36 help our physiology.
00:38 That's right. And our friend, Kristina McFeeters,
00:39 has done a nice cooking demonstration on how
00:42 to use sesame seeds.
00:44 So let's take a look.
00:46 Welcome to Kristina's Kitchen.
00:48 I'm Kristina McFeeters.
00:50 Today we are going to make a Toasted Sesame Salt.
00:56 It's kind of similar to a Parmesan, but it doesn't
00:59 have the cheese flavor.
01:00 It has an amazing nutty flavor.
01:03 And you can use it to sprinkle on salads, spaghetti, pizza,
01:08 or any vegetable dish.
01:10 The nice thing is its mostly sesame seeds,
01:14 with just a little salt.
01:15 We're going to take a half a cup of sesame seeds
01:18 and put them in a dry skillet.
01:21 And we're going to lightly toast them to bring out the flavor.
01:28 They may pop and make a little bit of a mess, but it's okay.
01:36 So we've toasted these sesame seeds until they've turned
01:39 nicely golden brown.
01:40 Now they're really hot, so we're going to let them cool for about
01:44 10 to 15 minutes before we grind them and add
01:48 the other ingredients.
01:50 Now we have our sesame seeds nicely cooled.
01:54 We are going to put them in our coffee grinder.
02:03 And then we're going to add a half a teaspoon of salt.
02:11 If you want it saltier, you can put more salt in it.
02:14 You can also put other ingredients in with it like
02:18 garlic powder, or even nutritional yeast, if you want
02:22 more of a cheesy flavor.
02:32 You don't have to grind it completely;
02:33 just so its chopped up coarsely.
02:36 And we're just going to put it in our little shaker.
02:40 I'm going to make myself a funnel.
02:51 Alright, we have it in our shaker, and we're ready to eat.
02:56 And this stuff is amazing.
02:59 I wish you could smell it right now.
03:00 It smells so good!
03:02 But if you don't have the time to make your own,
03:05 there are companies that make something very similar.
03:09 This one is by Celtic Sea Salt.
03:11 It's a toasted sesame seed with garlic, and it comes with its
03:16 own built in grinder.
03:17 And you can grind it directly on your food.
03:19 But there's nothing that beats the smell of freshly
03:24 toasted sesame seeds.
03:25 This stuff smells so good, and tastes amazing.
03:29 It's my favorite on salads, on spaghetti,
03:33 on garlic toast, on vegetables.
03:37 There's so many things you can use with this, and it just adds
03:40 so much flavor with very little salt.
03:44 Thanks, Kristina. We really appreciate her doing these
03:46 cooking demos for us.
03:47 And we tasted that sesame salt that she'd made there.
03:49 It was delicious.
03:51 Yeah, and you can put it on different things like spaghetti,
03:55 and different things you can put it on the top of.
03:57 Some people put it on chili's, lots of things
03:59 you can put it on top of.
04:00 Very good substitute for Parmesan cheese,
04:02 if you want to avoid cheese and dairy.
04:04 Yep, it's a good substitute.
04:05 That's great. So, you know, people don't think about
04:08 the power house that seeds have.
04:10 But seeds not only do they have a lot of good things that keep
04:13 us going, but they can be used in some cases
04:17 as a substitute for medicine.
04:18 I would much rather try some pumpkin seeds than take an
04:22 Ambien, which is a pill that makes you not
04:25 think better at night.
04:26 I'd much rather try that to increase my melatonin levels,
04:29 via this tryptophan serotonin pathway than that.
04:32 Yeah. So there's lots of ways that God has given us to change
04:35 our body's chemistry.
04:36 You know, we've had a question come into the website
04:40 You can send me your questions there if you have some.
04:42 But someone writes, What can I do to combat depression?
04:46 Yeah, Nick, lots of people, unfortunately,
04:50 suffer from depression nowadays.
04:52 And we could go a long time about this.
04:55 But there's some things that I have done that
04:56 help with depression. Okay.
04:58 For instance, I had a person come with just
05:01 postpartum depression, okay?
05:03 And we put her on an exercise program,
05:06 and getting outside with Vitamin D.
05:09 And that helped change her chemistry, and she didn't need
05:12 to take a medicine.
05:14 Now, so nutrition can also help in depression.
05:17 There's different foods, and we've talked about them in other
05:20 programs that some chemicals decrease the monoamine oxidase.
05:25 We talked about different foods that would do that.
05:28 For instance, greens increase a chemical that can help
05:31 butyrate, that can help our good bowel flora.
05:34 We've talked about flax and nuts via the Omega 3 might
05:37 help with depression.
05:39 Here today we've talked about tryptophan, which might increase
05:42 serotonin, which is the chemical that they try to increase
05:46 in people that are depressed are serotonin.
05:49 A lot of these medicines, their whole purpose is to boost
05:51 serotonin levels. Okay.
05:53 Well, if you can boost that by adding tryptophan, Omega 3's
05:56 in your diet, increasing your butyrate, doing some of these
05:59 other things; remember we talked about some of the teas.
06:03 Those are the ones that help.
06:04 These are natural things that we can do.
06:07 But I think one of the big ones that I want to encourage people;
06:09 is make sure you don't have low vitamin D levels.
06:12 The people that have some of the highest depressions are the
06:15 ones that don't get outside.
06:17 They make vitamin D.
06:18 Vitamin D is important.
06:20 It's an important pro hormone that makes serotonin levels.
06:23 And in fact, for years people in the higher latitudes,
06:27 as it got dark, you'd get cabin fever; you don't feel well.
06:30 So those are some little things that people can do.

06:38 fight off depression.
06:39 That's right. You know, God's given us a lot of great advice.
06:42 He's given us a lot of great things we can eat,
06:44 but let's take a look at one of our Biblical Prescriptions

08:55 seeds and sesame seeds.
