00:02 This is the Ultimate Prescription. 00:04 And I'm your host, Nick Evenson. 00:05 And with Dr. Marcum here today, we're discussing 00:07 food as medicine, and specifically we've been 00:09 talking about flax seed. 00:10 Dr. Marcum you mentioned lignins being in the flax here. 00:14 And here I've got an interesting fact here for us. 00:16 Flax seed are ranked as the number one source of lignins. 00:19 And the second, they contain seven times as many lignins 00:23 as the second runner up, which is sesame seeds. Yeah. 00:26 So remind us, what are lignins good for? 00:28 Lignins, in the body they're converted to lots of good things 00:31 that help our body. 00:33 One of those is the phytoestrogens, 00:34 the plant estrogens, which helps blunt the effect of 00:37 our regular estrogens. 00:39 As you can see, I'm very excited about flax. 00:43 I could talk about flax for long periods of time. 00:46 You know, I put it in my oatmeal every morning. 00:48 Its helped me personally with inflammation. 00:51 I think, you know, it's a really good thing that I've... 00:53 It helps the bowel function to do better, so, you know... 00:57 And people can be creative with this. 00:59 Yeah, and our friend Kristina McFeeters took the time to show 01:02 us how she uses flax in baking. 01:04 And let's show that to you right now. 01:10 Welcome to Kristina's Kitchen. 01:12 I'm Kristina McFeeters. 01:14 Today we're going to explore one my favorite ways to incorporate 01:17 flax seed into my diet. 01:19 In order to gain the nutritional benefit from flax seed, 01:24 it must be ground. 01:26 You cannot eat it whole and get everything that's inside, 01:31 so I like to use a coffee grinder. 01:35 There you can put the flax seed in and grind it up. 01:52 And once its ground you can sprinkle it on salads 01:57 or on your hot cereal. 01:59 Today I want to tell you about how I like to use flax seed 02:03 in baking as an egg replacer. 02:05 You can see here we have some of my favorite 02:09 muffins and cookies. 02:11 And both of these are made with flax seed as egg replacer. 02:15 In order to replace one egg in baking you want 1 tablespoon 02:22 of ground flax seed, and 21/2 tablespoons of water. 02:40 Mix that up and let it sit for just a couple of minutes, 02:45 and it will jell up and look just like egg. 02:48 It's amazing, and it's the soluble fiber in the flax seed 02:52 that makes that jell. 02:54 Sometimes, however, in some of my recipes I'm a little bit 02:58 more lazy and I like to not take that extra step of jelling the 03:03 egg, and then trying to beat it into my recipe. 03:06 So I'm going to tell you one of my baking secrets. 03:09 I like to take the ground flax seed and mix it with 03:13 my dry ingredients, then add a couple tablespoons extra liquid 03:18 to your wet ingredients to equal your egg. 03:22 And then when you mix your ingredients together, 03:25 like you would normally mix them, just set the whole batter 03:29 aside for 5 to 10 minutes, so that your egg jells inside your 03:36 entire batter rather than separately, 03:39 and trying to mix it in. 03:40 See how fun and simple that is? 03:43 And it tastes amazing! 03:45 You're adding amazing fiber and so much nutrition to your diet 03:49 in those little flax seeds. 03:51 Be sure and try this at home. 03:53 Thanks Kristina. That was a great way to incorporate 03:56 more flax into your diet, if you enjoy baking. 03:59 And, Dr. Marcum, you said you use it on cereal sometimes? 04:03 Yeah. Hot cereal or on salads? 04:04 I eat oatmeal almost every day. Yeah. 04:06 And it's part of... You know, I use oatmeal as a base, 04:09 and I dress it up with things that help my nutrition, 04:13 whether it be... I put some berries in it. 04:16 I put flax in it every day. 04:17 I put some seeds in it sometimes. 04:20 I try to juice it up, make it really taste good. Uh huh. 04:24 And then sometimes I put it on salad as well. 04:26 Now I haven't... I'm not a big baker. 04:29 But I think that's a great idea to substitute that for eggs, 04:33 because eggs have their own issues, you know. 04:36 We talk about eggs are packed with cholesterol, 04:39 and they do have fat, and they have a substance called choline, 04:42 which isn't so good for us. 04:43 So I think this is good to substitute that out if you can. 04:46 And if you're a baker, I would give that a try. Yeah. 04:49 Well, let's take a question. 04:50 If you have a question, you can go to our website at 04:54 And there's an Ask the Doctor section there, and you can 04:57 put in your question, and Dr. Marcum, or someone else from 04:59 our Advisory Board will get you a response. 05:01 But somebody wrote in and asks, I want to lose weight. 05:04 I know I need to. What are some specific foods that 05:07 will help with weight loss? 05:08 Well, before I get to the specific foods, I want to talk 05:12 about some of the ways people are trying to 05:14 lose weight these days. 05:15 Yeah, there's a lot of programs out there for that. 05:17 Years ago they came up with this magical 05:20 medicine called ThinThin, okay? 05:22 And I remember the patients used to come to me because 05:24 after a few years they found that ThinThin actually had 05:27 substances that damaged the heart valve. Really? 05:29 So ThinThin, pew! Off the market. 05:32 All of the pills for weight loss tend to speed up metabolism. 05:36 They also seem to have things like thyroid, and amphetamines 05:40 like it that makes you wired, and it creates 05:43 other side effects. 05:44 So those aren't good long term ways to lose weight. 05:47 We look at all the fad diets. 05:49 There's lots out there. 05:50 You know, you get this diet, that diet, but some people are 05:53 yo yoing up and down. 05:55 You know, you see these television shows, 05:57 The Biggest Losers. 05:58 Well, we don't see anything that's helped people for 06:00 long periods of time. Right. 06:03 So, you know, when people are having side effects from these 06:06 medications and dying, you know, people will still do that. 06:09 And yet these are drastic problems, you know? 06:12 When they want to lose weight they don't think it's drastic 06:15 to take a pill, or to have gastric bypass, 06:18 where they make your stomach... 06:19 But those things carry risks. Yeah. 06:21 But when you talk to them about, Oh maybe eating less, 06:25 maybe exercising, Oh, Oh, Oh, Oh! 06:27 Now that's the end of the world, you know? 06:29 But those types of mentality... 06:32 So how do you reach that person? 06:33 Well, you reach them by giving them data, and love, 06:37 and just starting one step at a time. 06:38 Don't overwhelm them! 06:40 And there's some great foods that help us lose weight 06:42 that we've already talked about that actually speed 06:45 up your metabolism. 06:46 Nuts speed up metabolism. 06:48 So adding nuts to your diet is something very good. 06:51 Fiber, anything that likes fiber helps speed up the metabolism. 06:55 It moves things through faster. 06:56 Beans are another thing that speeds up... 06:59 So just by eating more fiber, eating more beans, 07:03 eating more nuts; those are things that we can do to 07:05 speed up our metabolism. 07:07 Little things like walking more, trying not to eat big at night, 07:11 eating smaller portions, eating lots of vegetables, 07:15 eating things like celery. 07:17 You can actually lose weight by eating celery, because it takes 07:20 more energy to eat a stalk of celery than's in it. 07:24 Yeah, you'll burn it. 07:25 Yes, yeah, so celery, but most vegetables you can eat as many 07:28 vegetables as you want. 07:29 You just want to stay away from the processed foods, 07:32 the meats, eggs, the cheese, the candies. 07:35 Make that as little as you can. 07:37 Get on an exercise program. 07:39 Have God help you. 07:40 Eat more nuts, and beans, and that, and that is going to be 07:43 something that works very, very well to help people lose weight. 07:47 That's not drastic scary. 07:49 But this is a big problem, to excuse the pun. 07:51 You know, we're gaining weight like never before because we're 07:55 not moving, we're eating lots of processed foods. 07:58 And remember, processed foods tend to be choloric dense. 08:01 They pack a lot in it, and we start, our brains get used to, 08:04 then it takes more, and more, and more as we get, literally, 08:07 addicted to some of the foods we eat, 08:09 especially the processed foods. 08:11 We don't see that in real food. That's right. 08:14 So that's just a long answer. 08:16 So how would you lose weight this year? 08:17 That's sort of some general thoughts. 08:19 And don't be discouraged. 08:20 You just start slow; little steps, one at a time. 08:23 Pray about it and let God help you. 08:25 That's right.
